Minted Tortellini Salad image

A beautiful salad with the contrast of deep green and the white pasta with a nice hint of mint. Great for a summer get-together. Cooking time includes time to chill.

Number Of Ingredients 9

1 (9 ounce) package cheese tortellini
3 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon honey
1/2 teaspoon dried oregano leaves
1 1/2 teaspoons fresh mint leaves, sliced in slivers (or 1/2 teaspoon dried mint leaves)
1/4 teaspoon salt
4 cups spinach leaves, washed, dried and torn
1/4 cup feta cheese, crumbled

Steps:

  • Cook the tortellini to desired doneness as directed on package. Drain and rinse with cold water.
  • In large bowl, combine oil, lemon juice, honey, oregano, mint and salt; mix well.
  • Add tortellini; stir to coat. Cover and refrigerate 1 to 2 hours or until chilled.
  • Just before serving, add spinach, walnuts and cheese; toss gently. Serve immediately.
  • Makes 6 (1 cup) servings.

16 to 18 ounces refrigerated or frozen cheese tortellini
1 medium sweet red pepper, julienned
1 medium green pepper, julienned
3/4 cup sliced red onion
1/4 cup sliced ripe olives
1/2 cup olive oil
1/2 cup white wine vinegar
3 tablespoons minced fresh mint or 1 tablespoon dried mint flakes
3 tablespoons lemon juice
1-1/2 teaspoons seasoned salt
1 teaspoon garlic powder
1/2 teaspoon pepper
1/8 to 1/4 teaspoon crushed red pepper flakes
1/2 cup crumbled feta cheese

Steps:

  • Cook tortellini according to package directions; drain and rinse in cold water. In a large bowl, combine the tortellini, peppers, onion and olives. , In a jar with a tight-fitting lid, combine the oil, vinegar, mint, lemon juice, seasoned salt, garlic powder, pepper and pepper flakes; shake well. Pour over salad and toss to coat. Cover and refrigerate for at least 4 hours. Just before serving, sprinkle with feta cheese.

Easy Tortellini Salad image

1 (8 ounce) package dried spinach tortellini
1 (8 ounce) package dried three-cheese tortellini
1 cup grape tomatoes, halved
1 (6 ounce) jar marinated artichoke hearts, drained and chopped
1 (6 ounce) can sliced black olives, drained
½ red onion, thinly sliced
¼ cup grated carrots
1 ½ cups oil and vinegar dressing

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in spinach and three-cheese tortellini and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still slightly firm, 10 to 11 minutes.
  • Drain well, and allow tortellini to cool.
  • Toss together the tortellini, grape tomatoes, artichoke hearts, olives, red onion, carrots, and dressing in a large bowl.
  • Cover and refrigerate until chilled, at least 3 hours or overnight.
