MINT HABANERO SAUCE
I had this as a side "jelly" at a restaurant, went home and played with the flavors until I arrived at this recipe. It is a real favorite with my friends and family! You can make it as hot as you like. Super with lamb and goat meat! Works well with a meat injector, too!

Steps:
- In a nonreactive saucepan cook vinegars and sugar over medium-high heat until sugar is completely melted and mixture is reduced by at least half and is thick. Finely chop peppers, removing seeds and membranes for a milder sauce, or chop them in to make a hotter sauce. Carefully transfer mixture to a blender and add the habaneros and mint. Blend until smooth. Let cool to room temp or serve warm with chicken, goat, lamb, or mutton.
- Note: This mixture works well in a meat injector while still warm and has not set up, or leave less thick if using in this manner.

HABANERO SAUCE
Steps:
- In a food processor, finely chop the carrots and habanero peppers. In a small saucepan heat the butter and add the chopped garlic. Then add the carrot and habanero mixture and saute until carrots are soft. While stirring add the apple cider vinegar and salt and pepper, to taste. Then add the water and simmer until mixture is thick enough for spreading.
HABANERO SAUCE
A milder sweet-spicy habanero sauce, but can be made hotter by adding more habaneros. I chop the peppers and garlic in a mini food processor to ensure there are no large chunks in the sauce. It goes great on anything, but mostly we eat it as a dip/salsa with tortilla chips.

HABANERO HOT SAUCE
This sauce is very hot, but not too insane. For maximum heat increase habaneros as desired.

Add the whole habanero peppers, water, lime juice, white vinegar, and tomato to blender; blend until smooth. Season with salt and pepper to taste.
- Transfer mixture to a saucepan, and simmer for 3 to 5 minutes. This gives the sauce a more liquid consistency.

HABANERO BBQ SAUCE
I found this recipe on PepperFool.com and tried it when I had some extra habanero peppers and a craving for something spicy. I use it to baste chicken, pork or beef on the barbecue, or on burgers, although it is a bit spicy. I'm going to try it next with dark rum instead of water for some extra flavour. Remember to wear gloves when handling the habanero peppers, the smell and burning stay on your fingers for a LONG time!!

- Boil the vinegar, sugar and salt
- Add mint to mixture as it comes to the boil, and remove from the heat immediately.
- Stir well and pour into pre-warmed jar. Leave for 2/3 weeks, then use. No need to refrigerate. If you have leftover mint once the vinegar has been used, you can add more sweet vinegar to the jar.

- Always choose ripe, healthy looking peppers when making hot sauce. Wash them thoroughly under cold water.
- Remove the stems and discard. Rough chop the peppers and the garlic, keeping them separate. For a milder sauce, you can remove the seeds with a spoon.Reminder: Always wear gloves when handling spicy peppers!
- In a medium sauce pan, heat the olive oil on low heat, until it shimmers. Add the chopped peppers and cover. Cook until the peppers are very soft, about 8 minutes.Note: We recommend wearing a respirator or mask and lab goggles while making super spicy hot sauce. Cooking habaneros releases capsaicin into the air. It doesn't feel good! At least open windows and get some ventilation.
