JAPANESE-STYLE STEAK ROLLS



Japanese-Style Steak Rolls image

2 large bunches scallions, trimmed and halved crosswise
1 head broccoli, trimmed and sliced lengthwise into spears
2 1/2 tablespoons vegetable oil, plus more for the grill
3 tablespoons salted peanuts, chopped
1 teaspoon grated peeled fresh ginger
2 cloves garlic, finely grated
1 1/2 pounds thinly sliced beef for braciole (8 pieces)
Kosher salt and freshly ground pepper
1 bunch asparagus, trimmed
1/4 cup hoisin sauce
1 tablespoon low-sodium soy sauce

Steps:

  • Preheat a grill to medium high. Bring a medium saucepan of water to a boil; add the scallions and cook until wilted, about 45 seconds. Remove with tongs to a colander to cool, then pat dry. Add the broccoli to the boiling water and cook until just beginning to soften, about 3 minutes. Drain and transfer to a large bowl.
  • Heat 1/2 tablespoon vegetable oil in a small nonstick skillet over medium heat. Add the peanuts and half each of the ginger and garlic; cook, stirring, until toasted, 2 to 3 minutes.
  • Pound the beef until 1/8 inch thick. Lay 2 pieces next to each other, overlapping slightly; season with salt and pepper. Top with a quarter of the scallions, laying them crosswise. Roll up the meat around the scallions; secure with toothpicks. Repeat to make 3 more rolls.
  • Add the asparagus, any remaining scallions and the remaining 2 tablespoons vegetable oil to the broccoli; season with salt and pepper and toss. Mix the hoisin sauce, soy sauce and remaining ginger and garlic in a bowl.
  • Oil the grill grates. Brush the steak rolls with half the sauce. Cover and grill, turning and brushing with the remaining sauce halfway through, until charred, 7 to 8 minutes. Grill the vegetables until tender, 3 to 5 minutes. Halve the steak rolls, remove the toothpicks and serve with the vegetables. Top with the peanut mixture.

3 pounds beef top round steak (1/2 inch thick)
1/2 teaspoon salt
1/4 teaspoon pepper
6 bacon strips
3 whole dill pickles, halved lengthwise
2 tablespoons canola oil
2 cups water
1 medium onion, chopped
2 tablespoons minced fresh parsley
2 teaspoons beef bouillon granules, optional
1/4 cup all-purpose flour
1/2 cup cold water
1/2 teaspoon browning sauce, optional

Steps:

  • Cut steak into six serving-size pieces; pound to 1/4-in. thickness. Sprinkle with salt and pepper. Place a bacon strip down the center of each piece; arrange a pickle half on one edge. Roll up and secure with a toothpick. , In a large skillet, heat oil over medium-high heat. Brown beef on all sides. Add the water, onion, parsley and bouillon if desired. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until meat is tender. Remove to a serving platter and keep warm. , For gravy, skim fat from drippings. Combine the flour, water and browning sauce if desired; stir into drippings. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with beef.

¼ cup Dijon mustard
8 (4 ounce) pieces round steak, pounded 1/4 inch thick
½ cup minced onion
2 teaspoons paprika
2 teaspoons salt
2 teaspoons freshly ground black pepper
8 slices bacon
3 tablespoons canola oil
1 (12 ounce) can beef broth
1 ¼ cups water
2 tablespoons cornstarch
1 cup warm water
¼ cup sour cream

Steps:

  • Spread 1/2 tablespoon mustard over one side of each piece of meat. Sprinkle the onion, paprika, salt, and pepper evenly over the steaks. Lay one slice of bacon on each piece. Roll the steaks jelly-roll style and secure with toothpicks.
  • Heat the canola oil in a skillet over medium heat. Cook meat on all sides until browned. Add the beef broth and water; bring to a boil. Reduce heat to medium low; cover and simmer until tender, about 30 minutes.
  • Remove the meat rolls. Strain the broth mixture and return liquid to the skillet. Whisk together the cornstarch and 1 cup of water. Slowly pour the cornstarch slurry into the skillet, stirring continually until the sauce has thickened, 2 to 3 minutes. Stir in the sour cream. Return rolls to the sauce; serve immediately.

2 tablespoons canola oil, divided
3 tablespoons garlic, chopped
2 sweet onions, like Vidalia, chopped
2 cups mushrooms, thinly sliced
½ tablespoon kosher salt
½ tablespoon freshly ground black pepper
2 lb flank steak
4 oz fresh baby spinach, 1 package
9 slices provolone cheese

Steps:

  • Preheat oven to 350°F (175°C).
  • Heat one tablespoon of the oil in a pan over medium-high heat. Combine the garlic, onions, mushrooms, salt, and pepper in the pan and cook until almost all of the moisture has evaporated and the onions are caramelizing, 15-20 minutes. Remove from heat and set aside.
  • Lay the flank steak on a cutting board. Add salt and pepper on both sides, to taste.
  • Spoon the mushroom and onion mixture on top, spreading it evenly across the steak. Sprinkle the spinach on top, followed by the slices of provolone. Press down lightly to compress the spinach.
  • Starting at the bottom of the flank steak, roll it up tightly, making sure the grain of the meat is running horizontally. Use six toothpicks to secure the steak roll. Slice the steak roll into six equal rolls.
  • Heat the remaining oil in a pan over high heat. Sear the steak rolls on one side for one to two minutes, then flip. Sear the second side for about one minute, then bake for 10-15 minutes, until medium rare.
  • Remove the toothpicks, then serve!
  • Enjoy!

1/4 cup brown mustard, dijon ok too
3 onions, finely chopped
8 slices turkey bacon, chopped
1 large dill pickle, sliced (optional)
1 teaspoon tomato paste
1 1/2 cups beef stock
1 tablespoon flour
dry red wine

Steps:

  • Season beef slices with salt and pepper.
  • Thinly spread mustard on one side of the steaks.
  • Sprinkle 2/3 of the onions on the beef steaks. Sprinkle on bacon and pickles.
  • Roll the beef up and secure with toothpicks.
  • Add beef rolls to a coated medium skillet.
  • Saute until well browned, turning as needed .
  • Add the remaining onion and saute until light golden brown.
  • Add the tomato paste and beef stock.
  • Season to taste with salt and pepper.
  • Cover and simmer for about 1 hour.
  • If the sauce needs thickened, combine flour and a small amount of wine. Stir into meat broth. Cook and stir until thickened.
  • Plate and remove toothpicks and enjoy.

3 slices bacon
2 lbs round steaks (tenderized)
2 tablespoons mustard
1 cup dill pickle slices, drained
3 tablespoons instant minced onion
1 (1 ounce) package brown gravy mix

Steps:

  • Bacon goes under steak, one slice under each end and one under center, straight up and down.
  • Lay steak lengthwise on top of bacon.
  • Salt and pepper lightly.
  • Spread mustard over entire surface of steak.
  • Sprinkle chopped pickles and onion over entire steak.
  • Fold bacon in at edges and then roll tightly jelly roll fashion, seam side down. Place in ungreased baking dish (if too long, cut in half).
  • Bake at 400° until bacon and meat start to brown.
  • Mix gravy in warm tap water and mix with meat juices that have formed.
  • Bake at 325° to 350° until tender, 1 1/2 to 2 hours. Can be covered with foil and basted with the gravy every now and then for more tenderness.
  • Slice and serve with rice or potatoes.

1 ½ pounds flank steak
German stone ground mustard, to taste
½ pound thick sliced bacon
2 large onions, sliced
1 (16 ounce) jar dill pickle slices
2 tablespoons butter
2 ½ cups water
1 cube beef bouillon

Steps:

  • Cut the flank steak into thin filets; about 1/4 inch thick and 3 inches wide.
  • Generously spread one side of each filet with mustard to taste. Place bacon, onions and pickle slices on each filet and form into a roll. Use string or toothpicks to hold the roll together.
  • Heat a skillet over medium heat and melt butter. Place the rolls in the butter and saute until browned.
  • Pour in 2 1/2 cups of water and add the bouillon cube; stirring to dissolve the bouillon cube. Simmer the rolls for about an hour.

1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
5 cups spinach
2 lb beef sirloin flap
salt, to taste
pepper, to taste
1 tablespoon garlic powder
1 tablespoon paprika
4 slices monterey jack cheese
2 cups flour
5 eggs, beaten
3 cups panko bread crumbs
oil, to fry
¼ cup butter
2 tablespoons garlic, minced
¼ cup all-purpose flour
2 cups milk
salt, to taste
½ teaspoon nutmeg
freshly ground black pepper, to taste

Steps:

  • In a large pan, heat the olive oil over medium-high heat. Add the onion, garlic, salt, and pepper. Stir until softened, 3-4 minutes.
  • Add the spinach and stir until wilted down. Remove the pan from the heat.
  • Season the steak on all sides with salt, pepper, garlic powder, and paprika. Lay a piece of parchment paper over the cubed steak. Using a meat mallet or rolling pin, pound the steak until ¼-inch (6-mm) in thickness.
  • Remove the parchment paper. Lay the slices on Monterey Jack evenly over the cube steak. Add the sauteed spinach mixture over the cheese.
  • Gently roll up the steak, making sure to keep it as tightly wrapped as possible. Place the steak log on a sheet of plastic wrap. Wrap the steak up, tightly securing each side.
  • Refrigerate the steak for 1 hour.
  • Place the flour, eggs, and panko in three separate shallow dishes.
  • Gently unwrap the steak roll from the plastic wrap. Dip it into the flour, dusting off any excess. Dip the steak roll into the eggs, into the panko, and then back into the eggs, and back into the panko.
  • Preheat oven to 325˚F (160˚C).
  • Fill a pot with tall sides with one inch (2 cm) of oil and heat to 350˚F (180˚C).
  • Gently place the steak roll into the oil, and fry until golden brown, about 2-3 minutes.
  • Gently turn the steak over with tongs, and fry until the other side is golden brown, about 2 minutes.
  • Transfer the steak roll to a baking sheet.
  • Bake for 25-30 minutes.
  • To a small pot on medium heat melt the butter, add garlic and the flour, mix the ingredients together until a loose paste forms and cook this mixture on low until it starts to darken just a bit, about 5 minutes.
  • Add in the milk, salt, nutmeg, pepper, and whisk until smooth. Let the gravy come to a simmer, then take off the heat.
  • Once the steak Rolls are finished. rest at room temperature for at least 10 minutes. Slice into four to six slices.
  • Serve with mashed potatoes, green beans, carrots, corn and peppercorn gravy.
  • Enjoy!
