2 tablespoons miso
2 tablespoons warm water
1/2 cup chicken broth or 1/2 cup vegetable broth
2 tablespoons rice vinegar
2 teaspoons soy sauce
1 minced scallion (White and light green portions only)
1 tablespoon butter (optional)
1 (14 ounce) container firm tofu, drained

Steps:

  • Preheat over to 400*.
  • Combine vinegar, soy sauce, water & scallions.
  • Cut tofu crosswise into 12 slices and arrange in a single layer in a baking dish.
  • Pour Soy sauce mixture over tofu; tilt dish so that all of the tofu is coated.
  • Dot with 1 TBSP butter that is cut into small pieces (optional step).
  • Bake until liquid evaporated completely and tofu is brown for about 50 to 55 minutes (note, the pan will look bruned around the enges).
  • Let tofu cool before serving.

2 tablespoons unsalted butter, at room temperature
2 teaspoons white miso
3 to 5 large garlic cloves, smashed
2 1/2 pounds butternut squash, peeled and cut into 1/2-inch cubes (see Tip)
1 tablespoon olive oil, plus more as needed
Kosher salt and black pepper
1 pound mezze rigatoni or other short pasta
1/2 cup grated Parmesan, plus more for serving
1 lime, zested and juiced (2 teaspoons zest, 2 tablespoons juice)
1/4 teaspoon red-pepper flakes (optional)

Steps:

  • Heat the oven to 450 degrees. On a sheet pan, mash together the butter and miso. Add the garlic and squash, drizzle with 1 tablespoon olive oil, and toss to coat with the miso-butter mixture. Sprinkle 1 teaspoon salt and season with pepper. Cook until easily pierced with a fork and the raw taste is gone, 25 to 30 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta, adjusting the heat to maintain a gentle boil, and cook until just shy of al dente. Reserve 1 cup pasta water, then drain the noodles. If done before the squash, drizzle with olive oil to prevent the noodles from sticking together. Leave in the sink to drain.
  • When the squash is done, return the pasta to the pot over low heat. Scrape in squash, garlic and any liquid that accumulated, then add the Parmesan and 1/2 cup pasta water, stirring well until the noodles have a light sheen to them. If it appears dry, add more pasta water a tablespoon at a time until you reach your desired consistency. Stir in the lime zest and juice, season to taste with salt, and top with pepper and red-pepper flakes, if using. Serve with extra cheese.

It's high in B vitamins, protein and manganese, as well as many phytonutrients that are believed to have antioxidant properties. Pomegranate molasses, though a Middle Eastern food, is a nice complement in this recipe. You can find miso at Whole Foods and at markets that sell Japanese foods, as well as at some Asian markets. You can find pomegranate molasses at Middle Eastern markets. This makes enough sauce for a pound of tofu.

1 cup white sugar
¼ cup sake (Japanese rice wine)
¼ cup mirin (Japanese sweet rice wine)
6 (6 ounce) fillets butterfish (black cod)

Steps:

  • Combine miso, sugar, sake, and mirin in a large glass or ceramic bowl; stir until sugar is dissolved. Add fish fillets and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 24 hours minimum.
  • Remove fillets from the marinade and shake off excess. Discard the remaining marinade.
  • Heat a large nonstick skillet over medium heat. Add fillets to the hot skillet in batches; cook until flesh flakes easily with a fork, about 5 minutes per side.
