CHOCOLATE CURLS

3 ounces semisweet chocolate (usually 3 squares)
1 tablespoon all-vegetable shortening, such as Crisco

Steps:

  • Place the chocolate into a microwave-safe bowl with the vegetable shortening. Throw it in the microwave until the shortening is melted and hot, 30 to 45 seconds. Stir with a fork to combine thoroughly.
  • Next, pour the melted chocolate over the underside of a clean cookie sheet. Then, with an offset spatula or a knife, spread the chocolate in a thin layer. Keep going until it's very, very thin. Then...and this is the key...stick it in the freezer for a few minutes.
  • After a few minutes, check that the chocolate is ready by pressing it with your finger tip; it should leave the slightest mark, but not an actual depression.
  • Next, get a somewhat sharp-edged spatula and begin to scrape the chocolate from the bottom of the pan. When the chocolate is just the right temperature, it'll curl instead of break. If it gets too soft, stick it back in the freezer for a minute.
  • Pretty soon you'll have a bunch of fun little chocolate curls.
  • Important: As soon as possible, transfer the curls to a cold pan or plate, and then stick them in the freezer to harden. Store in the freezer in a zip-top bag until you need them. Use them to adorn pies, cakes or platters of fruit. You'll feel instantly fancy!

1 (1 1/4 lb) challah
3 large eggs
1 1/2 cups milk
3/4 cup half-and-half
3/4 cup banana, mashed
1 cup chocolate chips
1 1/2 cups maple syrup
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 teaspoon fresh nutmeg
2 cups caramel sauce (or see my other recipes for this)

Steps:

  • Cut the loaf onto 3/4" slices,trim off crust.
  • Cut bread to 3/4" cubes, making 8 cups (save additional for another use).
  • Place the brad cubed into large bowl.
  • In a medium bowl, whisk eggs well.
  • Whisk in milk, half-and-half, maple syrup, banana, cinnamon, nutmeg and vanilla extract. Pour mix over bread.
  • Add chocolate chips.
  • With rubber spatula, mix until bread in moistened well.
  • Let set for half hour.
  • Set rack in center of the oven, heating it to 350°F.
  • Lightly coat 8-inch round, nonstick cake pan (deep dish glass pie is ok) with Pam.
  • Scoop the soaked bread mixture into the pan, filling to the top.
  • Let bake until top has browned and puffed and knife in center comes out clean (around 50 minutes).
  • Let cool on rack.
  • When cooled, run knife around edge between pudding and pan.
  • Gently unmold pudding onto plate and then invert it back so brown side faces up.
  • When serving, cut lukewarm or room temperature pudding into 8 wedges.
  • Pour caramel sauce over.

2 cups cold milk
3/4 cup thawed COOL WHIP Whipped Topping
1 banana, cut into 20 slices

Steps:

  • Crush 20 wafers to form coarse crumbs. Beat pudding mix and milk in medium bowl with whisk 2 min. Stir in COOL WHIP.
  • Reserve 4 banana slices for garnish. Layer half each of the wafer crumbs and remaining bananas evenly in 4 dessert dishes; repeat layers.
  • Refrigerate 15 min. Top with remaining wafers and reserved banana slices just before serving.

2/3 cup fat-free sour cream

1 carton (8 ounces) frozen fat-free whipped topping, thawed, divided
32 reduced-fat vanilla wafers
3 medium ripe bananas, cut into 1/4-inch slices

Steps:

2/3 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 1/2 cups milk
4 large egg yolks
2 tablespoons unsalted butter, cut into pieces
1 teaspoon pure vanilla extract
2 bananas, plus more for garnish
12 shortbread or other vanilla-flavored cookies (4 to 5 ounces total), crumbled, plus more for garnish
Sweetened whipped cream, for garnish

Steps:

  • Have ready a fine-mesh sieve over a medium bowl. In a medium saucepan, off heat, whisk together sugar, cornstarch, and salt. Very gradually (a few tablespoons at a time), whisk in milk, taking care to dissolve cornstarch; whisk in egg yolks.
  • Whisking constantly, cook mixture over medium heat until the first large bubble forms and sputters. Reduce heat to low; whisking constantly, cook 1 minute. Remove from heat, and immediately pour through sieve into bowl. Stir butter and vanilla into hot pudding. Let pudding cool slightly; meanwhile, slice bananas.
  • In six 8-ounce glasses, alternately layer warm pudding with cookies and bananas, ending with pudding and covering bananas as completely as you can to prevent discoloration. Refrigerate until set, at least 1 hour, and covered with plastic wrap, up to 2 days.
  • To serve, top with whipped cream and more crumbled cookies and sliced bananas.

16 graham cracker squares
1/3 cup pecans, rough chopped
2 cups cold milk
1 (25 g) package banana cream instant pudding
2 -2 1/2 medium bananas, sliced 1/4 inch thick (36 slices)
whipped topping or whipped cream

Steps:

  • Crush the graham crackers into coarse crumbs, mix in the chopped pecans.
  • Place the cold milk in a medium size bowl and sprinkle with pudding; beat with a wire whisk for 2 minutes.
  • In 4 wine glasses or parfait glasses, spoon in a couple of tablespoons crumb mixture, top with 4 slices of banana and pudding; repeat layers once.
  • Cover each glass with plastic wrap and refrigerate until ready to use.
  • To serve, top each with a dallop of whipped topping and 1 additional slice of banana.
  • Please note: To keep the banana slices fresh, place them into 2 cups of water that has been mixed with 1 1/2 tablelspoons of lemon juice. Place on paper towels and pat dry.
