MIXED BEAN PASTA SALAD



Mixed Bean Pasta Salad image

Great for a pot luck or picnic. If you don''t have the dressing ingredients to hand use a shop-bought fat-free French-style dressing instead.

12 ounces fusilli
1 red pepper, deseeded and chopped
1 yellow pepper, deseeded and chopped
2 (15 ounce) cans mixed beans, drained and rinsed
1 tablespoon white wine vinegar
1 tablespoon soy sauce
1 dash Tabasco sauce
salt & freshly ground black pepper
1 teaspoon dried herbs

Steps:

  • Cook the pasta according to the packet instructions, drain, place in a bowl and leave to cool.
  • Add the peppers and beans to the pasta and stir to combine.
  • Mix together all the remaining ingredients and pour over the pasta salad. Toss well, divide between four serving bowls and serve.

Number Of Ingredients 11

1 (12-ounce) package tri-color mixed pasta shapes, uncooked
1 (14 1/2-ounce) can green beans, drained
1 (14 1/2-ounce) can wax beans, drained
1 (14 1/2-ounce) can kidney beans, drained and rinsed
1 cup sweet onion, chopped
1/2 cup olive oil
3/4 cup cider vinegar
2/3 cup sugar
Optional:
1/2 cup cherry tomatoes, halved
salt and pepper to taste

Steps:

  • Cook pasta according to package directions; drain and rinse with cold water. Meanwhile, combine beans and onion in a large bowl; set aside. In a separate bowl, combine oil and vinegar; slowly add sugar and stir until dissolved. Add pasta, tomatoes and oil mixture to bean mixture. Sprinkle with salt and pepper. Toss gently; serve immediately or refrigerate until serving time.
