These addictive seasoned "fries" from Mark Bittman are actually baked, but we promise you won't miss the grease. The spice mix - garlic powder, paprika, salt and black pepper - can be used on regular potatoes as well (you'll just need to increase the baking time a bit).

Provided by Mark Bittman

Categories     easy, side dish

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 6

2 pounds sweet potatoes, peeled
2 tablespoons olive oil
1 teaspoon garlic powder

Categories     main-dish

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 18

2 teaspoons kosher salt
1 teaspoon coarsely ground black pepper
1 teaspoon ground cumin
1/2 teaspoon dried coriander
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
Pinch sugar
One 20-ounce bag frozen sweet potato fries
1 1/2 pounds skirt steak
1 tablespoon olive oil
1/3 cup chopped fresh cilantro
1/3 cup chopped fresh parsley

3 tablespoons red wine vinegar
1/2 teaspoon crushed red pepper flakes

Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F. Preheat a grill pan over medium-high heat.

  • Meanwhile, make the tangy herb drizzle. Combine the herbs, vinegar, red pepper flakes and garlic in a small bowl. While mixing with a fork, drizzle in the olive oil. Season with a pinch of salt and pepper.
  • Remove the fries from the oven. Slice the steaks against the grain, and shingle around the fries on the sheet pan. Drizzle the steak with some of the herb drizzle, serving the remainder on the side.

SWEET POTATO FRIES WITH AUNT TC'S SECRET SAUCES

Sweet Potato Fries with Aunt TC's Secret Sauces image

What's my secret for super-crispy sweet potato fries? I actually have two. First, I soak the potatoes in cold water to remove the excess starch. Then, I give them a toss in a cornstarch and seltzer water mixture. The cherry on top? I dust these with a spicy-sweet spice blend and serve them with two different awesome sauces. Bet you can't eat just one!

Provided by Kardea Brown

Categories     side-dish

Time 1h15m

Yield 4 to 6 servings

Number Of Ingredients 21

2 pounds sweet potatoes, peeled and cut into 1/4-inch-thick sticks
2 tablespoons firmly packed brown sugar
1 tablespoon granulated garlic
1 teaspoon smoked paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
Peanut or vegetable oil, for frying
3/4 cup cornstarch
3/4 cup seltzer water
1/2 cup Carolina mustard barbecue sauce
3 tablespoons mayonnaise
1 teaspoon Miss Brown's House Seasoning, recipe follows
1/3 cup ketchup
1/3 cup mayonnaise
2 tablespoons Miss Brown's House seasoning, recipe follows
2 teaspoons hot sauce
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons sweet paprika
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper

Steps:

  • For the sweet potato fries: Soak the potatoes in cold water 30 minutes. Dry on paper towels.
  • Stir together the brown sugar, garlic, paprika, salt and pepper in a small bowl.
  • For the creamy barbecue sauce: Stir together the barbecue sauce, mayonnaise and House Seasoning in a bowl.
  • For the spicy sauce: Stir together the ketchup, mayonnaise, House Seasoning and hot sauce in a separate bowl.

Stir the cornstarch mixture after each batch.) Fry the sweet potatoes, in batches, until they float to the top, 1 to 2 minutes. (The sweet potatoes won't brown yet.) Remove to lined wire racks to drain.

KICKIN' SWEET POTATO KOFTAS WITH MANGO RAITA

Kickin' Sweet Potato Koftas with Mango Raita image

A vegetarian delight that happened one night when I was craving sweet potato and something kind of curried! Other vegetarian koftas use green peas, but the red lentils deliver a nutty flavor and creamier texture that is out of this world. The sweet and sticky dates, coupled with the toasted coconut just push these little treats right over the top! Serve with basmati rice and extra mango chutney for a sensory feast!

Provided by rsarahl

Categories     < 60 Mins

Time 45m

Yield 4 serving(s)

Number Of Ingredients 20

2 medium sweet potatoes (about 1 lb)
1/2 cup red lentil, dry (about 1 1/4 cup prepared)
1/4 cup minced dates
1/4 cup toasted coconut, finely chopped (you want the coconut to match the size of the other minced ingredients, so chop very finely)
2 tablespoons minced garlic
2 tablespoons fresh ginger, grated
2 tablespoons minced jalapeno peppers
1 teaspoon ground cumin
1/2 teaspoon toasted sesame seeds
2 tablespoons chopped cilantro
1 dash salt and pepper
2 tablespoons cornstarch
1/4 teaspoon baking powder
1/2 cup light coconut milk (optional)
3/4 cup mango chutney
1 tablespoon lime juice
1 cup plain yogurt
1/2 teaspoon salt
1 tablespoon canola oil
1 tablespoon black mustard seeds

Steps:

  • ***For the Koftas***.
  • Preheat oven to 400 degrees.
  • In a small pot, bring 1 1/2 cups of water to a boil; add the red lentils, cover and simmer for about 30 minutes or until the lentils are soft.
  • Remove lentils from heat and cool.
  • Peel sweet potatoes and dice them into 1/2 inch cubes.
  • In a medium pot, bring about 3 cups of water to a boil; add sweet potato (water should cover potato) and simmer until tender.
  • Drain and mash.
  • Allow mashed potatoes to cool.
  • Combine cooled lentils and mashed sweet potato with the rest of the ingredients and mix thoroughly.
  • Note: depending on the potatoes, it may be necessary to add a little water or coconut milk (1 tablespoon at a time) to the mixture if it is too dry to form into balls.
  • Using a small scoop or a tablespoon, form 1 inch balls and bake 1 inch apart non-stick baking sheet for about 30 minutes.
  • The koftas will be golden and wonderfully fragrant.
  • ***Forthe Raita***.
  • Heat oil in a small skillet over medium heat.
  • When oil is good and hot, add mustard seeds; stir and continue to cook them until they pop.
  • In a medium size bowl, combine all ingredients.
  • It's best to let this mixture rest for about 30 minutes in the refridgerator so the flavors can develop.
