CHEESY HAM AND HASH BROWN CASSEROLE
I mostly use this as a breakfast casserole, but it's great anytime. May be served with or without diced ham. Quick and easy to make, not to mention delicious!

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
- In a large bowl, mix hash browns, ham, cream of potato soup, sour cream, and Cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese.
- Bake 1 hour in the preheated oven, or until bubbly and lightly brown. Serve immediately.

One of my kid's favorite casseroles. Best recipe the day after a big ham supper!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 5 minutes. Drain.
- Mix egg noodles, ham, evaporated milk, cream of chicken soup, onion, and processed cheese food in a 9x13-inch baking dish until evenly distributed.
- Bake in preheated oven until bubbly and cheese food is melted, about 1 hour. About 5 minutes before end of baking, sprinkle chips atop casserole and return to oven; bake for 5 minutes more.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place the ham in a roasting pan and dot with cloves. In a saucepan combine the pineapple juice, brown sugar, honey and orange juice. Stir and simmer over medium-low heat until thickened, about 10 minutes. Pour the glaze over the ham.
- Bake the ham uncovered for 1 hour in the preheated oven.

I have made this easy recipe for Easter,Christmas or just when I feel the need to have ham. It is easy and just darn good.

- Place ham in baking pan. Bake at 325 for 45 minutes.
- Mix the jelly, dijon mustard, ginger and brown sugar in a saucepan. Cover over low heat until jelly melts, stirring occasionally.

Mmm...a great fall or early spring day dish. Oh the smell as it cooks. What a great way to use leftover ham.

Steps:
- Put peas in a deep pan cover with 8 cups of water.
- Bring to a boil on high heat.
- Lower heat to simmer, cover pot, cook for 45 minutes.
- (until peas are tender but not mushy) Place ham and bacon in frying pan over medium heat and fry for 5- 7 minutes, drain on paper towel and set aside.
- Keep 1 tsp bacon fat, add the onions to pan and sauté, stirring often until soft, (4 min) set aside.
- When beans are ready, drain and save 2 1/2 cups of cooking liquid.
- Add rice, ham, bacon, onions, roasted garlic, thyme, red pepper flakes, salt and pepper to beans and reserved cooking liquid.
- Stir well.
- Return to high heat and bring to a boil.
- Lower heat and cover.
- Cook 25 minutes (until rice is done and all liquid has evaporated).
- Turn off stove and let sit covered for about 15 minutes.
- Enjoy--.

- Preheat charcoal or gas grill.
- In a small saucepan, heat jelly and garlic over medium heat until jelly is melted, or in a microwave safe bowl, heat in microwave oven at high power until melted, about 1 minute.
- Stir in cilantro.
- Set aside 1/4 cup of glaze mixture for serving.
- Place ham steaks on grill over medium heat.
- Grill 3 minutes.
- Turn steaks over, brush with half of remaining glaze mixture and continue to grill another 3 minutes.
- Turn again, brush with remaining half of glaze mixture and continue to grill 1 to 2 minutes or until ham is glazed and heated through.
- Serve with reserved glaze mixture.

HAM ROLLS
I LOVE these. I make them and can't stop eating them. Even like to eat them cold out of the fridge. I don't like making them much , they are a tad time consuming! But Mmm!! Prep time includes the dough rising and rolling out and filling to the best of my ability. And the amount you get ... who knows!!! It depends on if you make them small or larger.

- Mix margarine, sugar and salt in large bowl.
- Add egg and mix.
- Dissolve yeast in warm water.
- Add milk.
- Mix well.
- Add flour and yeast mixture to bowl, and mix well.
- Knead until smooth.
- Place in greased bowl, cover and let rise until double.
- After dough has risen, punch down.
- Roll out small amounts of dough, creating little circles.
- Fill with ham mixture.
- Pinch edges.
- Brush tops with egg wash.
- Bake at 375* 10-15 minutes.
- To Freeze: Flash freeze cooked rolls on a cookie sheet, wrap and label.
- To Reheat: Microwave until heated through.
