VEGAN PINTO BEAN BREAKFAST SAUSAGE



Vegan Pinto Bean Breakfast Sausage image

These meatless bean-packed sausages taste just like the real thing-and they're full of fiber (5 grams per link).

Number Of Ingredients 15

3 tablespoons olive oil, plus more for cooking
1/2 small onion, finely chopped
8 ounces mushrooms, finely chopped
Kosher salt
1 tablespoon low-sodium soy sauce
Two 15-ounce cans pinto beans, drained and rinsed
1/3 cup chickpea flour
2 tablespoons finely chopped fresh sage
2 teaspoons finely chopped fresh thyme
1 1/2 teaspoons pure maple syrup
1 teaspoon finely chopped fresh rosemary
1/2 teaspoon freshly ground nutmeg
Pinch red pepper flakes
Freshly ground black pepper
Serving suggestions: whole-grain avocado toast, sliced tomato and fried polenta rounds with maple syrup

Steps:

  • Heat 2 tablespoons of oil in a large skillet over medium-high heat, then add the onions, mushrooms and 1/4 teaspoon salt and cook, stirring, until the onions and mushrooms are soft and thick almost like a paste, about 6 minutes. Stir in the soy sauce and remove from the heat. Let cool.
  • Put the drained beans, chickpea flour, onion-mushroom mixture and 1 tablespoon oil in a food processor and pulse until the beans are finely chopped and hold together when squeezed, but not a smooth paste. Add the sage, thyme, maple syrup, rosemary, nutmeg, red pepper flakes, 1 teaspoon salt and 1/4 teaspoon pepper and pulse until combined.
  • Divide the bean mixture into 12 even portions. Roll each out into a cylinder about 4 inches long, then roll up tightly in plastic wrap and twist the ends to secure.
  • Set up a steamer and arrange the rolled up sausages in it (you may have to do this in batches). Heat the steamer over medium heat and once steaming, cover and steam until the sausages have plumped up, about 20 minutes. Remove from heat, uncover and refrigerate the steamed sausages until firm, about 2 hours or up to overnight.
  • Preheat the oven to 350 degrees F. Unwrap the sausages and heat the remaining 2 tablespoons oil in a large ovenproof nonstick skillet over medium-high heat. Add the sausages and cook, turning them as needed, until browned and crisp all over, about 5 minutes. Transfer the skillet to the oven and bake until heated all the way through, about 5 minutes.

½ pound bacon strips
½ cup bacon drippings
1 large onion, finely chopped
½ pound cooked ham, diced
¼ pound chorizo sausage, crumbled
5 (16 ounce) cans pinto beans, rinsed and drained
1 whole chipotle pepper
2 cloves garlic, pricked with a fork

Steps:

  • Fry bacon strips in a large skillet over medium heat until crisp. With a slotted spoon, remove bacon to paper towels. Reserve 1/2 cup bacon drippings.
  • Place drippings in a large pot, and warm over medium heat. Fry onions until light brown. Stir in ham and chorizo. Reserve 1 cup of beans, and add the rest to the pot, along with the chipotle and garlic.
  • Mash the reserved beans, then add to the pot. Simmer beans until thick and soupy, about 30 minutes. (If the beans become too dry, stir in water). Remove chipotle and garlic, and serve.

This is a tasty, zesty side dish that can easily become a main meal. Serve soupy with warm flour tortillas or crusty bread, crumble corn bread on top, or scoop up with tortilla chips. Like mac and cheese, it's a great comfort food. It is easy to make because it doesn't require constant attention and is good for everything from a family meal to a football party. It can easily be doubled. Check flavor before serving and alter seasonings to taste if necessary. Top with more onion and cilantro as desired. If there are any leftovers, they hold up well and taste great the next day.

15 ounces canned pinto beans, undrained
8 ounces tomato sauce

Steps:

  • In a large skillet, fry up sausage breaking it up in small chunks as it cooks.
  • If needed, drain off excess oil off sausage, leaving 2 tablespoons in the pan with sausage.
  • Add chopped onions and peppers, and sauté until soft and tender.
  • Pour in undrained pinto beans and tomato sauce; simmer for 10 minutes.
  • Serve with cornbread if desired.

This is an authentic recipe right out of Mexico "Frijoles Charros" Mexican Cowboy Beans, These beans are delicious you can eat them right out of the bowl with hot buttered tortillas, and some hot salsa. Yum Yum. They are a meal by themselves. They cook for about 5/6 hours but the time is well worth it. You can serve along side Mexican rice, and add some Pico De gallo or Salsa with the tortillas. You need not make any meat dish with the Charro beans as they are loaded with meat. Delicious Enjoy

1 1/2 pound(s) pinto beans sorted, cleaned, and rinsed
1 medium onion peeled and quarted
1/2 large green pepper, seeded and cut in half, do not dice
1 large jalapeno seeded, cored, and cut in strips
10 clove(s) fresh garlic peeled and smashed
3 medium fresh tomatoes chopped in small pieces
2 medium tomatillos shucked, rinsed and diced
1/2 cup(s) diced fresh cilantro
2 large smoked pork shanks cut into quarters, by the butcher
2 large ham hocks
1 1/2 pound(s) stew beef or beef soup meat cut into bite size pieces
4 medium slices of salt pork or fat back, gives beans great flavor
1/2 pound(s) diced ham, i use hormel diced ham to flavor beans.
1 large fresh poplano seeded and pepper diced
1 teaspoon(s) dried oregano
2 teaspoon(s) salt
1 tablespoon(s) apple cider vinegar
2 large dried bay leaves
1/4 teaspoon(s) cayanne pepper (optional)
2 tablespoon(s) chile powder
1 teaspoon(s) ground cumin powder
2 small envelopes sazon goya seasoning
1/4 teaspoon(s) dried red pepper flakes
1/4 cup(s) good olive oil
1/2 teaspoon(s) fresh ground black pepper
1 teaspoon(s) garlic powder

Steps:

  • Clean sort and rinse pinto beans in cold water. Put into a deep heavy pot add about 10/12 cups cold water. Put on stove over a high flame, add all of the meats and the salt pork. Do not add the stew meat yet.
  • In a separate pot add the oil, heat and brown the stew meat until seared on all sides then add to the pot of beans with the remaining oil in the pot.
  • Add all of the vegetables, onions, peppers, tomatoes, cilantro, bay leaves, spices, and seasonings. Add vinegar and stir well cover and lower the flame cook for about 5 to 6 hours.
  • While cooking check beans and stir about once every hour. Taste bean broth to make sure the beans are seasoned just right "Salt" Cook until beans are tender and meats are fork tender. Taste to see if they have enough salt and pepper.
  • Serve with hot buttered tortillas, and some Pico de Gallo or Salsa on the side. You can also serve along side Mexican rice (see my post for Mexican rice) with the salsa and tortillas. No need to make any other meat. Charro beans are loaded with Meat. Enjoy

1 (15 1/2 ounce) can pinto beans
1 onion (diced)
7 -8 ounces smoked sausage
1/2 cup water
1/4 cup cilantro (minced)
1/4 cup green onion (minced)
1 dash garlic salt
1 dash cumin
1 dash chili powder
salt
pepper

Steps:

  • In a medium sauce pan empty the can of pinto beans. Add 1/2 cup of water. Add cilantro and green onion. Set on low heat to warm.
  • In a skillet, cut sausage into bite sized chunks and sear/brown. Strain out leaving the fat in the skillet.
  • Add onion to the skillet. Dash of garlic salt, Dash of cumin, Dash of chili powder. Salt and pepper to taste. Lots of pepper seams to work well with this dish. Set to medium high and caramelize the onion. Add onion to the saucepan and bring to a boil. Let boil for about a minute stirring constantly.
  • Reduce heat to a gentle boil (simmer) for another 5-7 minutes. What you are doing is trying to 'reduce' the water a little.
  • Enjoy!
