MOCK OATMEAL
This is a warm and satisfying way to start the day - a nice change from bacon and eggs when you are on a low-carb diet. It may sound odd, but give it at try - it's actually yummy. This can also be made using maple extract.

- In a cereal bowl, stir together the ricotta cheese, sweetener and vanilla. Cover with plastic wrap, and poke a hole to vent steam. Heat in the microwave oven for 2 to 3 minutes, until hot. Remove plastic wrap, stir and enjoy.

MOCK OATMEAL COOKIES

Steps:
- Preheat oven to 350°F.Cream together shortening, sugars, and pudding mix. Add eggs and vanilla. Mix just until combined. In a large bowl, sift together the Featherlight mix, xanthan gum, salt, baking soda, and baking powder. Add dry ingredients to creamed mixture and beat slowly until combined. Stir in quinoa flakes, chocolate chips, and butterscotch chips. Drop 2 inches apart on ungreased cookie sheets. Bake for 11 minutes. (Be careful not to over bake them. They should be golden brown.)*Jell-O brand is currently gluten free.**Always read the labels. Hershey's butterscotch chips don't contain barley, but Nestlé's do. Be careful!

GLUTEN FREE MOCK OATMEAL COOKIES
For years one of my husband's favorites! I worked at making a gluten free recipe that is very very close to the original.

Steps:
- Cream together the butter, white and brown sugar and eggs.
- Sift the dry ingredeints and mix into the creamed mixture.
- Stir in the slivered almonds.
- Drop by rounded tablespoon onto greased or lined cookie sheets.
- Bake at 375 for 7-10 minutes, until light brown. If you find that your cookie is too thin, add up to 1/4 cup more rice flour to the remaining dough and proceed with step #4.
- Cool slightly, remove to cooling racks.
- This makes a crisp cookie.
- Store in freezer to keep fresh.
- Note: I have a convection oven and am able to do 3 cookies sheets with approximately 45 cookies at a time.
- If you have a regular oven and can only do one cookie sheet it will take you about 80- 90 minutes to bake them all.
- If this is the case you may want to half the recipe.
- I store 1 tin of cookies in the pantry and freeze the rest to keep them fresh.
