CARAMEL BANANA LOAF CAKE



Caramel Banana Loaf Cake image

Technically speaking, this is a sandwich loaf pan. One where you'll pair the fluffy texture of the actual loaf cake with a filling of softly whipped cream and creamy caramel banana slices. One that you'll have to share with your friends over a coffee, or what have you.

4 eggs
½ cup sugar
salt
¾ cup flour
1 teaspoon butter
2 medium bananas, sliced
½ tablespoon brown sugar
1 cup whipped cream
1 tablespoon cocoa powder
1 tablespoon powdered sugar

Steps:

  • Fill a pot halfway with water, heat it over low heat and add a wok on top. Add the eggs and sugar to the wok. Stir until melted and even using a whisker.
  • Keep whisking while gradually adding the flour.
  • Line a loaf pan with parchment paper and transfer the mixture to it. Bake for 45 minutes at 360⁰F/180⁰C.
  • Coat an oven-proof skillet with butter, add the banana slices and sprinkle them with brown sugar. Bake for 20 minutes at 380⁰F/190⁰C.
  • Horizontally cut the loaf cake in two. Spread the lower half with 1/2 cup of whipped cream and place the baked banana slices on it. Spread the upper half with the remaining whipped cream and place it on top.
  • Add the cocoa powder and powdered sugar in a strainer. Strain over the loaf cake.

Steps:

  • Preheat oven to 180C/fan
  • Mash the bananas in a bowl
  • In a separate bowl, put in the eggs, caster sugar and margarine
  • whisk or mix for about a min
  • add flour and bicarbonate of soda and mix
  • and vanilla and bananas and mix
  • divide into 2, 15cm round cake tins lined with grease proof paper
  • Place in oven for 25 mins on middle shelf
  • When cooked leave for 5 mins to cool before transfering to wire rack to cool completly
  • Once cooled, mix butter, milk and icing together, once mixed add a nice thick layer to one half and a nice layer of jam to the other half and place together.

125 g butter
3/4 cup brown sugar, firmly packed
2 eggs
1 cup mashed banana (3 bananas)
1 1/2 cups self raising flour, sifted
1 teaspoon bicarbonate of soda
3/4 cup sour cream
1 tablespoon milk
60 g butter
1/2 cup brown sugar
2 tablespoons sour cream
1 1/2 cups icing sugar

Steps:

  • Grease a 14cm x 21cm loaf tin.
  • Cream butter and sugar in a small bowl until light and fluffy, preferably with an electric mixer.
  • Beat in the eggs one at a time and transfer the mixture into a large bowl. Stir in mashed banana (it's easiest to mash it with a fork).
  • Stir in half sifted dry ingredients and half sour cream and milk; stir well.
  • Stir in remaining dry ingredients and sour cream; stir until smooth.
  • Pour mixture into pan.
  • Bake in a moderate over for about 1 hour. Stand for five minutes before turning onto a wire rack to cool.
  • Icing:.
  • Melt butter and sugar, stir constantly without boiling for two minutes.
  • Add sour cream, bring to boil. Remove from heat, stir in sifted icing sugar. Ice immediately as it sets very quickly.

1 teaspoon bicarbonate of soda
2 tablespoons milk
120 g margarine or 120 g butter
1 1/2 cups self raising flour

  • Preheat oven to 180 degrees.
  • Place in a saucepan the sugar, mashed banana, bi-carb soda, milk and margarine/butter. Stir until it is a caramel colour. Cool mixture.

½ cup vegetable shortening
2 cups brown sugar

4 ripe bananas, mashed
5 eggs

½ cup milk
1 cup chopped pecans
½ cup butter
¼ cup brown sugar

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Combine flour, baking powder, baking soda, and salt in a bowl. Set aside. Grease and flour a fluted tube pan.
  • Beat 1 cup of butter, shortening, 2 cups of brown sugar, and 1 cup of white sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the bananas, followed by the eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat in 2 teaspoons of vanilla extract with the last egg. Pour in the flour mixture alternately with the milk, mixing until just incorporated. Fold in the pecans; mixing just enough to evenly combine. Pour the batter into prepared pan.
