SOUR CREAM COFFEE CAKE

Steps:
- Preheat oven to 350 degrees F. and grease a bundt pan, set aside.
- With a mixer, cream together butter, sugar and sour cream until fluffy.
- Mix in beaten eggs and vanilla until combined.
- Sift together flour, baking soda, baking powder and salt, and add to wet mixture, beating well.
- Toss the ingredients for the Cinnamon Nut Streusel together and add 1/3 of the mixture to the prepared bundt pan. Top with 1/3 of the cake batter, and continue to alternate batter and streusel mixture, ending with batter.
- Bake for 45 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Cool in cake pan for a few minutes before inverting onto a plate to cool the rest of the way.
- Enjoy as is, or glaze with sour cream glaze, by mixing the glaze ingredients together until they are the desired thickness, and spooning over the cooled cake.

- Preheat the oven to 350 degrees F. Grease and flour a 10-inch tube pan.
- Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for 4 to 5 minutes, until light. Add the eggs 1 at a time, then add the vanilla and sour cream. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low, add the flour mixture to the batter until just combined. Finish stirring with a spatula to be sure the batter is completely mixed.
- For the streusel, place the brown sugar, flour, cinnamon, salt, and butter in a bowl and pinch together with your fingers until it forms a crumble. Mix in the walnuts, if desired.
- Spoon half the batter into the pan and spread it out with a knife. Sprinkle with 3/4 cup streusel. Spoon the rest of the batter in the pan, spread it out, and scatter the remaining streusel on top. Bake for 50 to 60 minutes, until a cake tester comes out clean.
- Let cool on a wire rack for at least 30 minutes. Carefully transfer the cake, streusel side up, onto a serving plate. Whisk the confectioners' sugar and maple syrup together, adding a few drops of water if necessary, to make the glaze runny. Drizzle as much as you like over the cake with a fork or spoon.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, cream together 1 cup butter and white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the sour cream and vanilla. Mix in 2 cups flour, baking powder, and salt. Spread 1/2 of batter in the prepared pan.

- Combine the flour, brown sugar, cinnamon, and salt in a small bowl and mix to combine. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
- Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
- Whisk together the flour, baking powder, baking soda and salt in a small bowl.
- Beat the butter and granulated sugar together in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs, 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.

- Preheat the oven to 350 degrees. Make the topping: In a small bowl combine 1/2 cup sugar, cinnamon, vanilla, and walnuts; set aside.
- Make the cake: Butter and flour a 9-inch springform pan; set aside. In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat together butter, sugar, and eggs until smooth. Add the flour mixture alternating with the sour cream, beginning and ending with the flour mixture.

My Mom made one of the best Sour Cream Coffee cakes that I have ever tasted. I've tried other recipes and none of them were as moist as my Mom's. If you are looking for a moist and delicious Sour Cream Coffee cake, well look no further and make this one. I've added a couple of variations at the bottom. My neighbors son always asks me when I am going to make him this cake with the chocolate chips.

- Combine 1/2 cup sugar and cinnamon and set aside.
- Combine flour, baking powder, baking soda and salt.
- Cream the butter, add sugar, eggs, vanilla and sour cream.
- Add the flour mixture to the creamed mixture and mix until combined, do not overmix. This batter will be thick.
- Spoon half the batter into a greased and floured 10" bundt pan. Sprinkle the sugar and cinnamon mixture on top and spoon the remaining batter on top.
- Bake at 375 for 35-45 minutes or until toothpick inserted comes out clean.
- Cool 10 minutes and invert onto a plate. Cool for another 20 minutes and place the cake into a large plastic bag which really makes the cake moist.
- For variations:.
- - add walnuts or pecans with the sugar/cinnamon mixture.
- - spread chocolate chips in place of the sugar/cinnamon mixture as this tastes excellent.
