AUTHENTIC MOLE SAUCE

Steps:
- Toast guajillo chiles, ancho chiles, and chipotle chiles in a dry pan over medium heat, stirring constantly, until warm and aromatic, about 3 minutes. Transfer to the blender with chicken broth.
- Heat 2 cups chicken broth in a saucepan until it begins to simmer, about 5 minutes. Pour broth into a blender.
- Toast dinner roll pieces and tortilla strips in a dry pan over medium heat, stirring constantly, until lightly browned, about 3 minutes. Transfer to the blender with chicken broth and chiles
- Allow the chiles and toasted bread and tortillas to soak, fully submerged, in the chicken broth until softened, about 10 minutes. Blend the mixture until smooth.
- Cook tomatoes and tomatillos in a dry skillet on medium-high heat until soft and blackened, 3 to 4 minutes per side. Place tomatoes in the blender with the chile puree.
- Melt lard in a large skillet over medium heat. Stir in onion, garlic, peanuts, raisins, cumin seeds, thyme, cinnamon sticks, cloves, and allspice berries; cook and stir until onions are soft and golden, 5 to 8 minutes. Remove the cinnamon sticks and other whole spices; add onion mixture to the blender with the chile-tomato mixture and blend until smooth.
- Pour chile puree into a large saucepan over medium heat. Stir in chocolate chicken broth, sugar, and salt. Bring mixture to a simmer; stir until chocolate is melted and sauce is thickened and slightly reduced, 10 to 15 minutes.

Steps:
- Fry first eleven ingredients together until golden.
- Remove from pan, place in container of blender or food processor with a little chicken stock; whirl until smooth and return to the pan.
- Add the remaining chicken broth and the white chocolate and set to simmer for half an hour.
- Season to taste with salt and pepper.
- Once it has reached the desired thickness, it is ready for dressing any meat you would like, preferably chicken.

- To a large pot, add the pork chunks, garlic, onion, bay leaves, peppercorns, and salt. Top the meat with plenty of water. Bring to a boil over high heat, skim off the foam that forms on top. Then cover the pot and the heat to low. Simmer on low for an hour.
- Strain and reserve all the pork stock as it will be used for reconstituting the mole verde powder. Throw out the garlic, onion, bay leaves, and peppercorns. Set the meat aside.
- Heat the oil in a pan on medium heat and stir in the mole powder. Cook for a little bit until the mole powder becomes a bit fragrant. Slowly pour in and mix 2 cups the pork stock. It will clumps up a bit but keep stirring until the mole melts and incorporates.
- Bring to a quick boil and add the reserved pork chunks and beans. If the sauce thickens too much at any time, add 1 cup of the pork stock at a time (I used 4 cups total). Reduce heat to a low simmer and continue cooking for 25 minutes.

- 1. Preheat the oven to 350°F. On a baking sheet place the onion and jalapeno. Wrap the garlic in tin foil place on the sheet. Bake for 20 minutes to roast. 2. Add the onion, jalapeno, garlic, cumin, cinnamon, pepper and lime juice to a blender. Cover with enough water to allow the ingredients to blend smooth. 3. Heat the 2 tablespoons of oil in a medium saucepan. Add the pureed mixture and stir constantly for 5 minutes, until the mixture has thickened. 4. Add the pine nuts to the blender. Cover with enough water to blend smooth. Add the pine nut puree to the mixture on the stove. Add salt to taste. Mix together and cook until the sauce reduces and thickens.
- 1.In a medium pan, brown the chicken with a bit of oil. While the chicken is cooking place the 2 poblano peppers on the grate of a gas grill. Rotate the peppers until completely charred. Place the peppers in a bowl and immediately cover with plastic wrap for 5 minutes. Add browned chicken to a medium bowl. Using the back of a knife, scrape off the charred skins of the poblano. Chop into small pieces and add to the bowl with the chicken. Next add the queso fresco, onion, cumin, garlic powder and lime juice. Mix well.
- 1. Place about 1/2 cup of the mole on the bottom of the baking dish. Lay the tortilla flat and add the filling down the middle. Roll up the enchilada and repeat until you have filled your dish and used all the filling. Mine made 6 enchiladas. 2. Cover the enchiladas with the remaining mole sauce. 3. Place in the oven and bake for 15 minutes at 350°F. 4. Remove from the oven and garnish with cilantro, avocado and limes.
