MOM'S BROCCOLI CASSEROLE

Steps:
- Melt butter in a small pan. Add onions and cook until translucent
- Combine evaporated milk and soup in a medium pot and heat over medium high heat. Add in Velveeta cheese and stir until the mixture is smooth and combined well.
- In a 2 quart baking dish, stir together rice, onions and butter, cheese sauce and broccoli. Stir to combine. Top with cracker crumbs.
- Bake at 375 degrees for 45 minutes.

- Prepare broccoli according to package directions; drain. In a bowl, combine the soup, mayonnaise, cheese, eggs and onion. Stir in broccoli. Pour into a greased 1-1/2-qt. baking dish. Combine the cracker crumbs and butter; sprinkle over the top., Bake, uncovered, at 350° for 45-55 minutes or until a knife inserted in the center comes out clean.

- Preheat broiler. Prepare broccoli in microwave according to package directions. Heat a large ovenproof skillet over medium-high heat. Add oil to pan; swirl to coat. Add onion and mushrooms; cook 12 minutes or until mushrooms brown and liquid evaporates, stirring occasionally. Sprinkle mushroom mixture with flour; cook 1 minute, stirring constantly. Stir in milk. Bring to a boil; cook 3 minutes or until thick and bubbly. Stir in broccoli and chicken; cook 1 minute. Remove pan from heat. Stir in yogurt, mayonnaise, pepper, and salt. Top evenly with cheddar and Parmesan cheeses; broil 2 minutes.
MY MOM'S CHICKEN BROCCOLI RICE CASSEROLE
I could eat a whole pan of this. ..I've found that the texture of the sauce comes out grainy when I use pre-shredded bags of cheese - for best results, use a good quality block of cheese and grate it yourself. ..I hope you enjoy this! It's pure comfort food to me.

Steps:
- Preheat oven to 350.
- Start the broccoli and rice:.
- Cook broccoli and rice as per the package instructions.
- When broccoli is done, drain, let cool and dice.
- Mix chicken, broccoli, and rice in a greased 9 x 13 pan.
- For the sauce:.
- Heat half and half in microwave til bubbles appear around sides of bowl, but it does not boil. Set aside.
- Melt butter in small saucepan.
- Add flour and stir crazily til incorporated but not browned.
- Add half and half.
- Bring mixture to a boil, whisking continuously.
- Reduce heat, and gradually add cheese, whisking to incorporate, til melted.
- Add cream of mushroom soup gradually, whisking til incorporated.
- Pour sauce over the dry ingredients and combine well.
- Season to taste with salt.
- Cover casserole with foil and bake for 45 minutes.
- Uncover and let bake 15 minutes.
- Garnish with paprika.

AWESOME BROCCOLI-CHEESE CASSEROLE
My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
- In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
- Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
- Bake for 45 minutes to 1 hour.
