BLUE-CHEESE STEAK AND ENDIVE SALAD FOR TWO

Blue-Cheese Steak and Endive Salad for Two image

Why fuss with reservations when you can have your own bistro night at home? Hanger steaks are readily available, quick cooking and full of flavor. In this recipe, the steaks are seared, then slathered in blue cheese butter and served alongside an endive and radish salad dressed in a citrus vinaigrette, a perfect complement to the rich steak. This very special dinner comes together in about 30 minutes. If you'd like, toss baby potatoes with a little olive oil, salt and pepper and pop them into the oven to roast while you prepare the steak and salad.

Categories     dinner, steaks and chops, vegetables, main course

Time 30m

Yield 2 servings

Number Of Ingredients 16

4 tablespoons unsalted butter, slightly softened
2 tablespoons good-quality blue cheese, such as Roquefort, Stilton or Gorgonzola
1 tablespoon finely chopped shallot
3/4 to 1 pound hanger or skirt steak, at room temperature
Kosher salt and black pepper
1 tablespoon canola or grapeseed oil
Flaky salt (optional)
2 Belgian endives, leaves separated
4 to 5 thinly sliced radishes, a variety of colors if you can find them
1/2 small fennel bulb, cored and thinly sliced (about 1/3 cup)
2 tablespoons good quality white-wine vinegar
1/4 teaspoon orange zest
1 tablespoon plus 1 teaspoon olive oil
1/4 cup Italian parsley leaves, torn
1 tablespoon chives, cut on an angle into 1/2-inch pieces
1 tablespoon roughly chopped tarragon

Steps:

  • In a small bowl, stir together butter, blue cheese and shallot, and set aside.
  • Season steaks well with salt and pepper on both sides and set aside.
  • Meanwhile, assemble your salad: In a large bowl, gently toss together the endive leaves, radishes and fennel. In a small bowl, whisk together the white-wine vinegar, orange zest, olive oil, parsley leaves, chives and tarragon, season to taste with salt and pepper and set aside.
  • Heat a large cast-iron pan over medium-high heat until very hot, 2 to 3 minutes. Add the canola oil. When it shimmers, add the hanger steak and let it cook, undisturbed, until it begins to crisp and brown on one side, 3 to 4 minutes. Flip and finish cooking about 3 minutes more or until a meat thermometer inserted in the thickest part reads 130 degrees for medium-rare.
  • Move the steak to a cutting board, and spread with 2 tablespoons or so of the blue cheese butter and let rest 5 to 7 minutes. Slice steaks against the grain and finish with flaky salt, if desired. Plate the steak and serve with the salad alongside, spooning the dressing on top of the salad.

STRIP STEAKS WITH BLUE CHEESE GLAZE

Strip Steaks with Blue Cheese Glaze image

A cheesy herb glaze tops tender grilled steaks in this "Bam!"-tastic recipe from chef Emeril Lagasse.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes

Yield Serves 4

Number Of Ingredients 9

4 ounces blue cheese, crumbled
1/4 cup buttermilk
1/4 cup panko breadcrumbs
2 tablespoons chopped pecans
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh flat-leaf parsley
Coarse salt and freshly ground black pepper
4 (12-ounce) strip steaks
Olive oil, for drizzling

Steps:

  • In a medium bowl, mix together blue cheese, buttermilk, breadcrumbs, pecans, thyme, and parsley. Stir until well combined. Season with salt and pepper and set glaze aside.
  • Preheat a grill: If using a charcoal grill, make a fire in your grill. When the charcoals are completely covered in gray ash, hold your hand about 5 inches above the grill grid; count how many seconds you can comfortably leave it there. When you can hold it there for 2 to 3 seconds, you have medium-high heat and are ready to grill. If you are using a gas grill, heat the grill for 15 minutes with the lid closed. Before beginning to cook, reduce the temperature by turning the knobs to medium-high.
  • Season steaks on both sides with salt and pepper and drizzle with olive oil. Place on grill and cook for 4 to 6 minutes. Turn steaks and cook 4 to 6 minutes more for medium-rare. Remove steaks from grill and top each with several tablespoons glaze. Let stand a couple minutes before serving.

PEPPERCORN STEAK WITH HERBED BLUE CHEESE FROM SPARKPEOPLE RECIPE

Peppercorn Steak With Herbed Blue Cheese from Sparkpeople Recipe image

This steak was so wonderful good - cooking time will depend on how thick your serving of Steak is. The pepper was a bit overwhelming for me, but for hubby it was just right !

Provided by lesliecoy

Categories     Steak

Time 20m

Yield 4 serving(s)

Number Of Ingredients 4

3 tablespoons blue cheese, crumbled
1/4 cup parsley, chopped (1/3 of a bunch)
2 teaspoons peppercorns, black, red, and pink, cracked
12 ounces filet of beef (cut into 3-ounce steaks )

Steps:

  • Preheat oven to 375 degrees.
  • In a small bowl combine the blue cheese and parsley and use a wooden spoon to combine, cover and refrigerate.
  • Spread the cracked peppercorns onto a plate. Put the meat dry and roll in the peppercorns to coat on all sides.
  • Place a cast-iron skillet or heavy-bottomed ovenproof saute pan over moderately high heat. ( do not use nonstick cooking spray or any type of oil to prepare the pan).
  • Once hot, place steaks into the dry pan and sear the top and bottom of each steak. 1 to 2 minutes per side, to sear the steak. Do not attempt to pull meat from pan - it will release easily once completely seared. If there is any resistance it is not done yet.
  • Place 1 Tablespoon of blue cheese mixture on top of each steak and transfer the pan to the oven. Roast 6 to 7 minutes for rare, 7 to 8 minutes for medium.
  • NOTE: To crack peppercorns pour desired amount into a sturdy plastic bag and then spread them flat on a towel to protect counter top and pound with flat side of mallet, rolling pen, or bottom of heavy pan into a coarse "grind".

These small and easy additions will add so much flavor to your dish. You'll score extra points with that special someone with the pretty presentation, too.

Provided by Betsy Carter

Categories     Dinner

Yield 2 servings

Number Of Ingredients 18

1 cup unsalted butter, room temperature
1 cup crumbled blue cheese
2 tablespoons chives, finely chopped
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ medium yellow onion, thinly sliced
2 cups buttermilk
2 cups all-purpose flour
1 teaspoon paprika
1 teaspoon kosher salt, plus more to taste
½ teaspoon freshly ground black pepper
4 cups canola oil, for frying
2 rib eye steaks, 1 1/2 in (3 cm)
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
2 teaspoons olive oil
2 tablespoons unsalted butter
5 sprigs fresh thyme

Steps:

  • Make the compound butter: In a medium bowl, mix together the butter, blue cheese, chives, salt, and pepper until well combined.
  • Transfer the butter to a piece of plastic wrap and roll into a log. Refrigerate for at least 1 hour, or until ready to use.
  • Make the fried onions: In a shallow bowl, combine the onions and buttermilk and let sit at room temperature for 1 hour.
  • In a medium bowl, whisk together the flour, paprika, salt, and pepper. Dip the buttermilk-coated onions into the flour mixture, shaking off any excess.
  • Fill a large skillet with high sides with the canola oil. Heat the oil over medium-high heat until it reaches 375˚F (190˚C). Once the oil is hot, add the onions in batches and fry for 3 minutes, until golden brown. Transfer the onions to a wire rack to drain and season with salt.
  • Generously season the steaks all over with salt and pepper.
  • Add the olive oil to a large cast-iron or stainless-steel pan over high heat. Once the oil begins to shimmer, add the steaks and cook, without disturbing, until a brown crust forms, about 7 minutes. Flip the steaks and continue to cook for 7 minutes more, until the steak is browned on both sides. Sear the sides of the steak to render any fat. Add the butter and thyme to the pan. Tilt the pan toward you and baste the steaks with the melted butter for 2 minutes, until the internal temperature reaches 135°F (60°C) for medium rare.
  • Serve the steak with the crispy onions and blue cheese compound butter.
  • Enjoy!
