MOM'S EASY PAN FRIED PORK CHOPS AND TOMATO GRAVY
Mom's Pork Chops and Tomato Gravy was called tomato soup pork chops. This recipe has evolved and is much more flavorful and no condensed soup! Tender pork chops in a rich, tomato sauce is a taste sensation!

- In a small bowl combine 1 teaspoon salt, 1 teaspoon pepper, paprika and sugar.
- Dry pork chops with paper towels and rub spice mixture all over them. Set aside.
- In a large skillet, over medium heat, cook bacon pieces until crisp. Remove bacon to drain on paper towel, without removing the fat from your skillet.
- Depending on the amount of fat in your pan, remove some until you have enough fat to cook the pork chops in, 2-4 tablespoons approximately. We usually use some paper towel to soak some up, if necessary.
- Increase your heat a little and cook each pork chop until brown on one side only, 5 minutes.
- Remove pork chops from skillet and place on plate, browned side up. Wipe out your skillet if desired or necessary. We usually do.
- Reduce heat back down to medium and add oil. Heat until oil is shimmering or a drop of water flicked in it dances.
- Add mushrooms, onion, celery, and garlic and cook until tender, about 7 minutes.
- Add flour and stir constantly for 2 minutes.
- Add tomato paste and cook, continuing to stir for another 2 minutes.
- Stir in chicken broth, tomato sauce, thyme, bay leaves, and cooked bacon and bring to boil.
- Place pork chops, browned side up, in your skillet.
- Reduce heat to low, cover, and simmer for 20 minutes.
- The timing will change depending on the size of your pork chops. Check to make sure your pork chops are cooked with a meat thermometer, about 150 degrees.
- Remove chops from skillet and add salt and pepper to the gravy to taste.
- Add more thyme, garlic, paprika if you desire.
- Remove your bay leaves.
- Serve gravy on top of your pork chops and some rice or mashed potatoes if you desire! Enjoy!

- Instructions for Pork Chops:.
- In a large skillet add the oil, start to preheat oil on medium heat.
- Line a plate with paper towels to drain the pork chops once they come out of the pan.
- Combine flour, garlic powder, salt, pepper, and MSG in a large bowl with lid. Stir to mix well.
- Crack eggs in a rectangle bowl and beat eggs well.
- Add the pork chops to flour mixture bowl and place lid on bowl. Shake the bowl vigorously to coat the pork chops.
- Shake off excess flour from each pork chop and set aside on plate.
- Dip each side of pork chop in egg and place in flour mixture bowl. Do this with the rest of the pork chops. Place lid on bowl and shake vigorously to evenly coat the pork chops.
- Raise heat for oil to medium high.
- Carefully place pork chops in the oil. Fry for 2-3 minutes. Using a fork, carefully flip pork chops over and fry for another 2-3 minutes. The coating should be a nice golden brown color.
- Placed cooked pork chops on plate with paper towels to absorb the oil. Fry the rest of the pork chops the same way. Turn off heat when done.
- Milk Gravy Instructions:.
- Carefully pour out all the oil into an oil jar or into a heat safe bowl to throw away the oil after it has cooled.
- Wipe the sides of the skillet to remove any oil that has dripped down the sides.
- Add 3-4 tablespoons of the oil used to cook the pork chops into the same skillet.
- Turn heat on medium high heat.
- Add the 1/4 cup of flour and mix with the oil. Mix constantly until the flour turns a golden brown.
- Add the 2 cups of milk and stir constantly. The gravy will start to thicken.
- Add the 1 tsp salt and 1/2 tsp of pepper. Remove from heat and place gravy in a bowl. Serve with mashed potatoes.
- Gravy for Rice Instructions:.
- Empty 2 packages of pork gravy mix into a medium saucepan.
- Add 1 3/4 cups of water and whisk well until all the lumps are gone.
- Turn heat on high and whisk constantly until the gravy begins to boil.
- After it starts to boil, whisk for another 1-2 minutes. The gravy should now be thick. Remove from heat and turn off stove.
- Place gravy into a bowl and serve over pork chops and cooked rice.

- If you have time, allow the pork chops to rest at room temperature for 30 minutes. The pork chops should be 3/4 to 1 inch thick. They can have a large rim of fat. If it is thick, trim it down to 1/4 inch. Also, slicing through the fat every inch or so helps prevent cupping of the chop.
- Season the both sides of the chops with seasoning salt and pepper to taste. If you are using bouillon or soup base for your pork broth then mix two cups now. You may also use vegetable broth.
- Add 1-2 tablespoon oil to a large frying pan over medium-high heat. When the oil is shimmering hot, add the pork. Cook for about 4 minutes until the bottom is nicely brown. Flip and cook for another 4-5 minutes. Continue to flip occasionally to an internal temperature of about 145°. If you have a hard time getting a final internal temperature, a lid on the pan helps.
