MOM'S SWEET POTATO BAKE

- Preheat oven to 325°. In a large bowl, beat the sweet potatoes, sugar, eggs, milk, butter, salt and vanilla until smooth. Transfer to a greased 2-qt. baking dish. , In a small bowl, combine the brown sugar, pecans and flour; cut in butter until crumbly. Sprinkle over sweet potato mixture. Bake, uncovered, until a thermometer reads 160°, 45-50 minutes.

I had this dish years ago at an ex-boyfriend's house while I was there for Thanksgiving dinner and his mom shared her recipe. I am usually pretty traditional and old-fashioned with my Thanksgiving menu, but always make these because they are so good! My relationship didn't last, but this recipe continues to be a favorite, years later!

- Preheat oven to 400 degrees F (200 degrees C).
- Mix crushed cookies with 1/2 cup butter in a bowl. Mash sweet potatoes with 1/4 cup butter in separate bowl; add brown sugar, marmalade, amaretto liqueur, and ginger to sweet potatoes. Mix well. Pour sweet potato mixture into a 9x9-inch baking dish; top with cookie mixture.
- Bake in the preheated oven until cooked through and bubbling, about 30 minutes.

- In a large saucepan, cover sweet potatoes with water. Boil until tender; drain.
- Remove the skins from the sweet potatoes and arrange them in a greased 2 quart baking dish.
- Process the sugar, buttermilk, butter, eggs, amaretto, vanilla, cinnamon, and baking soda in a blender until smooth. Stir in pecans.
- Spoon pecan mixture over sweet potatoes. Bake at 350 degrees for 30 minutes.

- Mash the sweet potatoes in a mixing bowl until they are smooth with a mix er or potato masher.
- Add the brown sugar, orange juice, Amaretto, sugar, butter, orange rind and salt.
- Stir until well combined.
- Spray a 3 quart casserole dish with nonstick cooking spray.
- Spoon the sweet potatoes into the casserole dish.
- Bake for 20 minutes.
- Sprinkle the marshmallows over the top of the sweet potatoes.

MOM'S SWEET POTATOES
I'm not sure where my mom got this recipe but I also can't remember a Christmas without it. This can also be made in a crock pot on high for 3 to 4 hours or until set all the way through. The original recipe says to bake for 30 minutes, but depending on the dish and oven, you may need to bake for much longer, so be sure to allow enough time to cook for a hour if needed.

Steps:
- Begin 2 hours before serving time.
- In a large dutch oven place sweet potatoes ,add enough cold water to cover potatoes.
- Over medium heat bring to a gentle boil. Boil for 25 minutes until skin is softened.
- Drain and cool to room temperature.
- Cut off ends and peel past yellow color and eyes.
- Slice into 3/4 inch slices.
- In a large non stick skillet low/medium flame,melt 4 tablespoons butter. Sprinkle 1/2 cup brown sugar over butter. Cook until just bubbling.
- Add sweet potato slices in one layer. Cook until deep orange color with lightly browned edges. 15 minutes first side,10 minutes second side.
- If more brown sugar/butter is needed add 2 tablespooons to 1/4 cup of brown sugar in between batches.

MOM'S SWEET POTATOES RECIPE
Our family favorite sweet potatoes that make the perfect side dish for your holiday meal.

Steps:
- Heat oven to 350 degrees.
- Boil sweet potatoes for about 20-30 minutes until fork tender. Let cool.
- Spray a 9 x 13 inch pan with non stick cooking spray.
- After the sweet potatoes are cool, slice into 1 inch spears. Lay half of them in the pan.
- Cut up 1 1/2 tablespoons of butter into small pieces and spread all over the sliced sweet potatoes.
- Then drizzle 1/8 cup of karo syrup over all of the sweet potatoes. Then sprinkle 1/4 cup of brown sugar over the top.
- Repeat layers - add more sweet potatoes, then top with the rest of the butter, karo syrup, and brown sugar.
- Cook in oven until heated through and butter is melted. About 30 minutes.
- Remove from oven and cover the top with marshmallows. Return to oven cook until marshmallows are golden brown.
- (This can also be made ahead of time and stored in the fridge. Cook until heated through and then add marshmallows.)
