HEALTHIER FANTASY FUDGE



Healthier Fantasy Fudge image

This Healthier Fantasy Fudge is a modern-day "health-conscious" version of the traditional "Fantasy Fudge" or "Marshmallow Cream Fudge," done sugar free and low carb!

2 1/4 cups low carb sweetener
3/4 cup butter ((see Recipe Notes for alternative))
2/3 cup vegan evaporated milk
12 ounces sugar-free chocolate chips ((see Recipe Notes for alternative))
7 ounces marshmallows
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt

Steps:

  • Prepare a 9x13-inch baking pan greasing or lining with parchment paper or wax paper.
  • Add the sweetener, butter, and evaporated milk to a large saucepan. Heat over medium heat to a boil.
  • Reduce heat to maintain the boil without overheating, and stir constantly for 4-5 minutes. Alternatively, you can heat the mixture to 234 degrees Fahrenheit, but 4-5 minutes should be sufficient if you don't have a candy thermometer.
  • Remove from heat.
  • Quickly add the chocolate chips, marshmallows, and vanilla extract to the saucepan and stir until smooth.
  • Pour the mixture into the prepared pan.
  • Let the fudge set for at least 3-4 hours at room temperature, or place in fridge for faster cooling and a firmer result.
  • If you chose not to use paper or foil, when firm, simply cut the fudge into small pieces in the pan.
  • If you did choose to use a baking pan liner, when firm, lift the entire block of fudge using the edges of the paper or foil, placing the block on a cutting board. Cut into serving-size pieces.
  • Store the fudge in the refrigerator for longer shelf life.

1 cup walnuts
Nonstick cooking spray, for the foil
1 pound bittersweet chocolate, chopped
One 14-ounce can sweetened condensed milk
One 7.5-ounce jar marshmallow creme
2 tablespoons unsalted butter, at room temperature

Steps:

  • Toast the walnuts in a medium saute pan over medium heat, tossing frequently, until darkened and fragrant, about 5 minutes. Transfer to a cutting board to cool, then roughly chop.
  • Line an 8-inch square cake pan with foil, leaving a 2-inch overhang on 2 sides. Coat lightly with cooking spray.
  • Combine the chocolate and condensed milk in a large saucepan over medium-low heat. Cook, stirring frequently, until the chocolate is melted and the mixture is thick and smooth, 2 to 3 minutes. Remove from the heat. Add the marshmallow creme and butter and stir until completely combined and no streaks remain. Stir in the walnuts until evenly dispersed.
  • Transfer the mixture to the prepared cake pan. Smooth with a rubber spatula into an even layer. Refrigerate until firm, 2 to 3 hours.
  • Use the foil overhang to remove the fudge from the pan. Cut into small squares. The fudge can be refrigerated in an airtight container up to 5 days.

This recipe used to be found on the back of a well known brand of marshmallow cream. Many were surprised when it was changed. This is the original! You may find that most packages of chocolate chips are 10 ounces now; 12 ounces of chocolate chips is roughly 2 cups.

3 cups sugar
1/2 cup butter
1 cup whole milk
Dash of salt
4 ounces unsweetened chocolate
1 teaspoon vanilla extract
1 cup chopped pecans or walnuts

Steps:

  • Butter an 8 x 8-inch pan. Combine sugar, butter, milk, salt, and chocolate in medium saucepan. Stirring constantly, cook over medium heat until all ingredients melt and come to a boil. Do not scrape down the sides of the pan. Lower heat, insert candy thermometer, and let boil slowly without stirring for about 10 minutes or until soft ball forms when dropped in a cup of cold water (238 degrees F on a candy thermometer). Remove pan from heat and cool. Add vanilla. Beat steadily until fudge loses its gloss. Add nuts. Pour into pan. Cool for 20 minutes and cut into squares. Store in airtight container or wrap in tinfoil.

This has been a Christmas staple in our house since the early 1980s. It's ridiculously easy and pretty yummy. (I use the plastic bag over my hand trick to smooth out the fudge.)

1 (14 ounce) can sweetened condensed milk
½ cup peanut butter

Steps:

  • Line a 9x13-inch pan with parchment paper.
  • Melt chocolate chips in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, 1 to 3 minutes. Stir in peanut butter until smooth. Pour in sweetened condensed milk and stir until well combined. Pour into the prepared pan.
  • Using the back of a spoon or with a plastic bag over your hand, press the fudge into the pan. Refrigerate until firm, 2 to 4 hours.
  • Remove fudge from pan and cut into squares. Store in an airtight container.

This is a fudge recipe my mom made every Christmas. The fudge always disappeared long before Christmas came. She gave it to all of our neighbors. A close friend of the family told us that it wouldn't be Christmas without my mom's fudge. Little do they know how easy it is! My DH always looks forward to Christmas, because now I make this fudge!

1/2 cup margarine
3 cups sugar
1 cup evaporated milk
12 ounces semi-sweet chocolate chips
7 ounces marshmallow cream
1 cup chopped walnuts (optional)
1 teaspoon vanilla

Steps:

  • Melt margarine, add sugar and evaporated milk and stir in a heavy sauce pan.
  • Bring to a boil on medium heat. Stir constantly and boil for 5 minutes on medium heat. Be careful not to burn the bottom of the pan, so keep stirring the whole time.
  • Remove from heat.
  • Gradually stir in chocolate chips until melted, add remaining ingredients and mix well.
  • Pour into sprayed 13 X 9 dish or pan.
  • Cool to room temperature before cutting.
  • Store in airtight container in the refrigerator.
