MUM'S TRADITIONAL IRISH SODA BREAD RECIPE (BROWN BREAD)



Mum's Traditional Irish Soda Bread Recipe (Brown Bread) image

Learn how to make my mum's Traditional Irish Soda Bread recipe which is such a simple quick bread you can make for St. Patrick's Day or any time of the year!

Number Of Ingredients 8

1 3/4 cups (265g/ 9oz) whole wheat flour ((fine or coarsely ground))
1 3/4 cups (265g/9oz) all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 tablespoons (30g/1oz) butter ((cold))
1 egg
1 ⅔ cups (13floz/370ml) buttermilk*
1 tablespoons oats

Steps:

  • Preheat the oven to 425°F (215°C).
  • Mix together the flours, salt, and baking soda in a large bowl. Add the butter and rub it into the flour mixture with your fingertips until it resembles bread crumbs.
  • In a separate jug, whisk the egg and buttermilk together (see note on how to make Buttermilk below)
  • Make a well in the center of the dry ingredients and pour the liquid, 3/4 at once, into the flour mixture.
  • Using an open hand bring the flour and liquid together to a loose dough. The dough should be quite soft, but not too sticky. You will know then if it needs more of the liquids. (Flour in different places reacts differently to added liquid).
  • Turn onto a floured work surface and gently bring the dough together into a round, about 1 1/2 inches (4cm) thick (8 inches by 8 inches).
  • Place on a baking sheet dusted well with flour.
  • Score the bread by blessing it with a deep cross on top. Poke a hole in the 4 corners of the bread to release the fairies and stop them from cursing your beautiful bread.
  • Glaze the bread with the leftover bit of buttermilk in your jug and dust the top with rolled oats.
  • Bake for 15 minutes, then turn down the oven to 400°F (200°C) and bake for 30 minutes more. When done, the loaf will sound slightly hollow when tapped on the bottom. Remove from the baking sheet and place on a wire rack to cool.

4 cups all-purpose flour
1 tablespoon sugar
1-1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup cold butter
1 cup golden raisins
1-3/4 cups buttermilk

Steps:

  • In a large bowl, combine the flour, sugar, baking soda, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Add raisins. Stir in buttermilk just until moistened. Turn onto a lightly floured surface; gently knead 6-8 times., Place on an ungreased baking sheet; pat into a 7-in. round loaf. Using a sharp knife, cut a 1-in. cross about 1/4 in. deep on top of the loaf. Bake at 375° for 40-45 minutes or until golden brown. Cool on a wire rack.

Number Of Ingredients 11

2 1/2 cups all-purpose flour, plus more for dusting
3/4 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon freshly ground black pepper
1 cup freshly grated sharp Cheddar
3 tablespoons chopped fresh chives
1 cup buttermilk
1 large egg

Steps:

  • Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
  • Add the flour, baking powder, baking soda, salt, garlic powder, onion powder and pepper to a large bowl. Whisk to break up any lumps of flour. Add the Cheddar and chives. Stir to evenly combine the ingredients. Set aside.
  • Add the buttermilk and egg to a 2-cup measuring cup. Use a fork to scramble the egg into the buttermilk.
  • Add the buttermilk mixture to the bowl with the flour mixture and use a rubber spatula to mix the ingredients until a shaggy dough forms. Turn the dough out onto a lightly floured work surface. Lightly flour your hands and knead the dough until it comes together, about 1 minute. Flip the dough so that it is seam-side down and transfer it to the prepared baking sheet. Use a serrated knife to cut a 1/2-inch-thick X on the top of the dough.
  • Bake until the bread is golden brown, 25 to 30 minutes.
  • Let cool slightly on a wire rack before slicing.

This recipe was passed down to me by my wonderful mother who got it from her mother. When she did ask my grandmother to write down the recipe for her she couldn't because she didn't measure the ingredients. My mother had to watch her and measure the ingredients after my grandmother had everything ready.

4 c flour
4 Tbsp baking powder
1 Tbsp baking soda
1 tsp salt
3 Tbsp butter or margaring
1 1/2 c buttermilk
2 eggs
1 c sugar

Steps:

  • 1. Preheat oven to 400 degree for 10 minutes then turn down to 350 and bake 45 minutes till golden brown and sounds hollow when tapped on bottem.
  • 2. DO NOT USE ANY METAL. Sift dry ingredients in a large bowl, not metal. Cut in butter and rub into flour untl mixture resembles bread crumbs. Make a well in center and pour eggs and buttermilk. Using clean hand mix thorougly to make a soft dough. Turn onto flour board and knead 1-2 mins. Shape into round load and place onto a greased floured bakng sheet. Mark an X on top of the loaf to allow even cooking. Bake 45 mins or until golden brown. Tap on bottem of bread if sounds hallow it is done.
  • 3. Remove and place on wire cooling rack. Taste wonderful with butter and jelly.

1 tsp caraway seeds
1/4 tsp salt
1/4 tsp baking soda
1/4 tsp baking powder
1 c raisins
1 c buttermilk

Steps:

  • Blend all dry ingredients - add raisins and mix well. Add buttermilk. Mix well. Knead slightly in the bowl until stickiness begins to disappear. Form into a round loaf and place in a greased pie tin/cake pan. With a serated knife, cut an X (cross). Place in 375 degree oven for 10 minutes. Reduce heat to 350 degrees and bake another 30 minutes or so. Should be light brown-ish when done. Knock on it for hollow sound.

2/3 C butter
1 egg, beaten slightly
1 - 1/2 C buttermilk
1 C raisins

Steps:

  • Preheat oven 400 Stir together: flour, sugar, salt, baking powder, baking soda and caraway seeds. Cut in butter with pastry blender. Add egg and buttermilk stirring quickly. Add raisins and kneed into a ball. Spread in a greases baking pan. i.e. glass pie plate. Cut a deep cross with a knife on top. Bake in a 400 degree oven for 35-40 minutes, until golden brown. Take bread from oven and butter using a pastry brush very lightly. Not sure if you place it back in oven until it browns.

  • Preheat oven to 350 degrees F. Spray a 8.5 x 4.5-inch loaf pan with cooking spray and set aside.
  • In the bowl of a stand mixer, combine flour, sugar, baking powder, baking soda and salt. Add the cold butter and mix on low until the butter is incorporated into the flour.
  • In a separate bowl, whisk together egg, buttermilk, sour cream and orange zest. Gradually add the egg mixture to the dry ingredients. Stir in the raisins and caraway seeds (if using).
  • Transfer to the prepared loaf pan. The dough will be very sticky, so it helps to dampen your fingers or spatula with a little bit of water so that you can spread the dough in the pan without too much sticking. Bake for 35-45 minutes, or until a toothpick inserted in the center comes out clean.
