EASY ONE POT GROUND BEEF STROGANOFF
Quick, easy and delicious Ground Beef Stroganoff!! Perfect for a weeknight meal and will have your family asking for seconds!

- Using a large pot or large sauté pan, heat the olive oil over medium high heat. Add the mushrooms and season with salt and pepper. Add in the onions and garlic. Cook until the onions are translucent.
- Add the ground beef and cook until all browned. Stir in the smoked paprika. Add in the beef stock and uncooked egg noodles. Stir together and cover with lid.
- Let simmer for about 15 to 20 minutes. Mix together once halfway through, mixing and incorporating all of the egg noodles. Lower the heat, mix in the cornstarch slurry if needed and stir until thickened. Add in the sour cream and mix together until incorporated. Taste and season generously with more salt and pepper. Garnish with parsley, serve and enjoy!
MOM'S LIGHTENED BEEF STROGANOFF
Steps:
- In a heavy saucepan, heat pan over high heat.
- When pan is hot, spray with oil and add steak.
- Brown meat until cooked.
- Remove meat from pan.
- Lower heat, melt butter, then add onions.
- Cook about 2-3 minutes until translucent, add garlic and mushrooms and sauté about 2-3 more minutes until cooked.
- Add a can of tomato soup, steak, water, bay leaf, and worcestershire sauce.
- Cover and cook on low about 40 minutes.
- Remove bay leaf and mix in sour cream.
- Serve over noodles or rice.

MOM'S GROUND BEEF STROGANOFF

Steps:
- In a large nonstick skillet over medium high heat, add in the meat, onions, salt, pepper and Worcestershire sauce. Stir occasionally to break up the meat into small nickel-sized pieces. Cook until the meat is almost cooked through but still slightly pink, ~5 minutes. Drain excess grease.
- With the meat mixture still in the pan, add in the garlic and sliced mushrooms and cook until the mushrooms and meat are cooked through, ~5-6 minutes. Reduce the heat to medium and add in the cream cheese. Do not stir. Let it melt first. ~3-5 minutes.
- Gently mix until the cream cheese is incorporated throughout the meat mixture.
- In a large mixing bowl, add in the milk and beef stock. Add the cornstarch into the broth milk mixture and whisk until the mixture is smooth and there are no lumps. Slowly pour in the beef milk mixture into the pan and cook over medium-high heat. Stir to combine and let the mixture start to bubble then reduce the heat to a simmer to allow it to thicken slightly. ~2-4 minutes. Add in the peas and gently stir in. Add in the yogurt or sour cream and gently combine. Taste for seasoning and add salt and pepper if necessary.
- Serve with cooked egg noodles and mashed potatoes.

BEEF STROGANOFF | SLIMMING & WEIGHT WATCHERS FRIENDLY
Steps:
- Season the beef with a little sea salt and freshly ground black pepper, then set aside
- Spray a large frying pan with low calorie cooking spray and place on a medium heat
- Add the beef to the pan and quickly seal on all sides
- Remove the meat from the pan, add the white wine vinegar and Worcestershire sauce to deglaze
- Scrape and stir the browned bits from the pan over a medium heat. When most of the liquid has evaporated spray the pan with some low calorie cooking spray
- Sauté the onions and mushrooms until they start to brown
- Add the Dijon mustard and the brandy and cook for a minute or two
- Add the stockcube and stockpot to the boiling water and pour into the pan and reduce the liquid by half
- Stir in the Philadelphia over a low heat, making sure there are no lumps of cheese remaining
- Add the beef back into the pan, stir well and simmer for 5 - 10 minutes depending on how you prefer your beef. We like ours pink so it takes about 5 minutes
- If the sauce looks a little thick you can add some more water until it reaches the consistency you prefer
- Sprinkle with some chopped parsley and serve

This is a favorite with all of my family. Not sure where my mother got the recipe so many years ago, but it is different than the creamy white stroganoff so many people make. It really is very good. Serve this with egg noodles or rice.

- Coat meat with flour and brown in hot oil.
- Add the onions and garlic and saute until golden.
- In a bowl, mix the sour cream,salt, tomato soup, Tabasco and Worcestershire sauce.
- Add to the meat.
- Add the mushrooms.
- Cook over very low heat for 1 hour or until meat is tender.
- Serve over egg noodles or rice and top with Parmesan cheese.
