Mom's Pesto image

This is my mother's recipe for pesto. In order to make my mother's recipe, the first step is VERY important! :)

2 cups fresh basil leaves, fresh picked, packed
1/2 cup walnuts
1/2 cup shredded parmesan cheese (not the stuff in a green can)
2 -6 garlic cloves
1/4-1/2 cup virgin olive oil

Steps:

  • Grow 4-5 large basil plants so you can make this all summer long. Purple basil makes the spiciest pesto (my Dad's favorite).
  • Put basil, nuts, cheese and garlic in a food processor.
  • Turn it on and drizzle in enough olive oil to reach the desired consistency - thick for spreading on bread or thin for tossing with cooked vegetables or pasta.
  • NOTE: Do not use dried basil. This recipe can be frozen (in ice cube trays or 1/2 - 1 cup portions) for up to 6 months, but do not add the cheese until you are ready to eat or the sauce will fall apart.

3 cups packed fresh basil leaves, washed and thoroughly dried
2 large cloves garlic
¼ cup pine nuts, lightly toasted
½ teaspoon kosher salt
½ cup extra-virgin olive oil
½ cup freshly grated Parmesan cheese
2 teaspoons freshly squeezed lemon juice

Steps:

  • Pulse basil and garlic in a food processor about 8 times until finely chopped. Add toasted pine nuts and salt; turn processor on low and drizzle olive oil through the chute until everything is incorporated. Add Parmesan cheese and lemon juice; pulse 2 times.

My mom's famous cream cheese pesto sauce. She always serves this with fresh homemade pasta. It's always a hit and there's never any sauce left over.

2 garlic cloves
3/4 cup fresh basil or 3/4 cup parsley
1/2 cup grated parmesan cheese
2 tablespoons olive oil
1/2 cup cooked broccoli
250 ml light cream cheese
hot pasta water

Steps:

  • 1. Place olive oil in a sauce pan and saute garlic, basil, and add in broccoli.
  • 2. Poor the mixture into a cuisine art or blender and add the cream cheese and enough hot pasta water to get a sauce consistency and finish blending.
  • 3. Pour over (fresh) pasta.
