THIS CAKE is so moist it doesn't need frosting. I simply sprinkle powdered sugar over the top. It's my favorite dessert to bring for potlucks, and there's never a piece left to take home! -Beulah Sak, Fairport, New York

1-1/2 cups all-purpose flour
1 cup sugar
3 tablespoons baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup canola oil
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup cold water
Confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, whisk flour, sugar, cocoa, baking soda and salt. Using a spoon, make 3 wells in the dry ingredients. Pour oil into the first, vinegar into another and vanilla into the third. Slowly pour water over all. Beat on low speed until thoroughly combined (batter will be thin). , Pour into a greased 8-in. square baking dish. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool in pan on a wire rack. Dust with confectioners' sugar.

2 cup(s) flour
2 - eggs
1 1/2 cup(s) white sugar
1 teaspoon(s) baking soda
3/4 cup(s) oil
1 cup(s) milk

Steps:

  • Mix sugar, eggs, oil, soda. Then add cocoa, flour and milk.
  • Bake at 350 about 30 minutes, or until a toothpick comes out clean from the center of the cake.
  • Makes 1 9x13 pan or 2 round pans, or 24 cupcakes.

1 cup (2 sticks) unsalted butter, plus more for greasing the pan
2 cups all-purpose flour
2 cups sugar
11/2 teaspoons baking soda
4 tablespoons unsweetened cocoa powder
1/2 cup buttermilk
2 eggs
1 teaspoons vanilla extract
1/2 cup (1 stick) unsalted butter
3/4 cup buttermilk
4 tablespoons unsweetened cocoa powder
1 pound confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • For the cake: Lightly grease a 9-by-13-inch cake pan with butter. Combine the flour, sugar and baking soda in the bowl of a stand mixer or mixing bowl. Combine the butter, cocoa and 1 cup water in a medium saucepan and bring to a boil while mixing. Add the cocoa mixture to the flour mixture, along with the buttermilk eggs and vanilla, and beat for 3 minutes. Pour into the prepared cake pan and bake until firm to the touch and a toothpick inserted in the center comes out clean, 30 to 40 minutes. Let cool 10 minutes in the pan before turning out on a rack to cool completely.
  • For the frosting: Make the frosting as soon as the cake is out of the oven. Combine the butter, buttermilk and cocoa in a small saucepan and bring to a boil while mixing. Combine with the confectioners' sugar in the bowl of a stand mixer and beat until smooth. Spread the frosting evenly on the cake.

This was one of my favorite things to make when I learned to bake. My mom made this when we were little and it was a real treat to have this as a decadent coffee cake. This is good without any topping, but I have tried a variety of things on the top: melted chocolate frosting, powdered sugar or glaze made from powdered sugar and milk.

¼ cup unsweetened cocoa powder
½ teaspoon salt
½ teaspoon baking powder
1 ½ cups margarine, melted
3 cups white sugar
1 cup milk
5 eggs

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Thoroughly grease a 10-inch fluted tube pan. Whisk together the flour, cocoa powder, salt, and baking powder in a bowl until thoroughly combined.
  • In a large bowl, mix the melted margarine, sugar, milk, eggs, and vanilla extract; beat the flour mixture into the margarine mixture with an electric mixer set on Low until the batter is smooth. Pour the batter into the prepared cake pan.
  • Bake in the preheated oven until the top of the cake forms a crust and a toothpick inserted into the center of the cake comes out clean, about 1 hour and 20 minutes. Cool cake in pan on wire rack for 10 to 15 minutes before removing pan, then allow cake to cool completely.

2 ounces unsweetened chocolate, broken into pieces
1/2 cup boiling water
1/2 cup shortening
2 cups packed brown sugar
2 large eggs, separated
2 cups sifted cake flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1/2 cup water
1/2 cup chopped walnuts
1 teaspoon vanilla extract
COCOA FROSTING:
6 tablespoons butter, softened
3-1/2 cups confectioners' sugar
1/2 cup baking cocoa
1-1/2 teaspoons vanilla extract
Pinch salt
4 to 6 tablespoons whole milk

Steps:

  • In a small bowl, stir chocolate in boiling water until melted; cool for 10 minutes. , In a bowl, cream shortening and brown sugar. Beat in egg yolks and chocolate mixture. Combine flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk. Gradually beat in water, nuts and vanilla. , In a small bowl, beat egg whites until soft peaks form; fold into batter. Pour into a greased 13x9-in. baking pan. Bake at 350° for 35-40 minutes or until toothpick inserted in the center comes out clean. Cool on wire rack., In a bowl, cream butter. Combine sugar and cocoa; gradually add to butter with vanilla, salt and enough milk to achieve desired spreading consistency. Frost cake.

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.

Mom's Ultra Quick Yellow Cake and Chocolate

My pop, well, let's just say he's one of those kinda guys who after the first bite of the main dish says "What's for dessert?" or at 10 pm says, "Mom, how about something sweet?" And the funny thing is, he's not a bit heavy. This cake is really easy, fast, and the "dip" is more of a chocolate sauce, but not like the stuff in a squeeze bottle. This is RICH and DELICIOUS and yes, I can eat it with a spoon. It is meant to be served on a piece of cake, split in two, as soon as it is done. If it cools, it kinda gets crunchy, which as a kid, was alright with me. It does reheat, but looses it's smoothness. Still satisfies me and POP though!

1/2 cup butter or 1/2 cup margarine, softened
2 eggs
2 cups self-rising flour
2/3 cup milk
1 cup sugar
1 teaspoon vanilla

1/4 cup butter

Steps:

  • CAKE: Preheat a 9x13 pan. In a bowl, stir together all ingredients. (No need to do the wet ingredients first then dry.).
  • Pour into the pan and bake until a toothpick comes out clean, about 30 minutes.
  • DIP: In a med. saucepan, begin to melt the butter. As it melts, add the remaining ingredients, stirring well to combine. Bring to a boil and boil one minute, stirring while it boils. Remove from heat.
  • NOTE: It helps to wait until the cake is done to make the dip. The cake will still be warm. Cut that cake slice in half and smother it with the dip and enjoy!

1/2 cup sugar or 1/2 cup Splenda sugar substitute
2 cups shredded coconut
3 1/2 cups Cool Whip

Steps:

  • prepare cake according to package directions.
  • Combine milk, sugar or Splenda,and 1/2 cup coconut in saucepan . Bring to a boil, reduce heat and simmer for 1 minute.
  • Poke holes in cake with a fork.
  • Spoon mixture over warm cake and allow to cool completely.
  • Fold half of the remaining coconut into whipped topping and spread over cake. top with the remaining coconut and refrigerate.

  • "Duwanna's Cocoa Cake" This is a recipe of a cake and frosting that was my Fathers favorite. When we were living on the Farm...in the early 50's. I can remember my Mother baking this cake every night for supper. My Fathers favorites were ''Breakfast, and Dessert after Supper". When we moved to the Farm at Hickory Creek we moved into a house that was built to be a Church house. It had no running water inside, but had a well outside the back door. Therefore it had no indoor bathroom either, just a ''3-hole'' outhouse. It did have electricity though.
  • Our bedrooms were the 3-Sunday School rooms, the Sanctuary was our living and dining room, the only room with heat), the kitchen was put in the Choir room. I was about 9 by the time Daddy fixed a pump in the kitchen, hooked to the well out back, and put a bathroom in the room that used to be the Preachers office. The house was full of love...and people. There was Dad, Mom, my Brother, Dads Mother, Moms Father and Mother and me.
  • My Mother got up early and made us bacon, eggs, biscuits and gravy every morning. Saving the bacon drippings to bake her cake every evening. Every night when Mom put supper on the table she'd put her ''CoCoa'' cake in the oven, so it would be done when we finished eating. She'd frost it right out of the oven and we'd have that wonderful moist warm cake every night. My Dad loved all things chocolate...he'd say, "I want my chocolate cake with chocolate ice cream and I prefer it in a brown bowl". My Moms smile would go from ear to ear as she beamed.
