Grandma's Homemade Icing image

This is a recipe handed down through my Mom's family for our homemade icing. The taste of it brings back many memories to me! One important tip is to make sure you beat the icing enough. Enjoy! :)

3/4 cup shortening
2 tablespoons white syrup
1 dash salt
1 teaspoon vanilla
4 cups powdered sugar
1/2 cup milk

Steps:

  • Beat the shortening and white syrup together.
  • Add salt and vanilla.
  • Continue beating while adding the powdered sugar and milk alternatively.

When I was growing up..my Mom would make a yellow cake and then she would make this sauce like icing on the stove. She would pour this WARM Sauce over each individual piece of cake. We kids loved it...STILL DO! So ..I thought I would share it with you.....

2 cup(s) sugar
1 can(s) pet evaporated milk (12 oz size)
3 - egg yokes (beaten)
1/4 stick(s) butter or margarine

Steps:

  • Mix the milk and sugar until sugar in a Saucepan until it's dissolved
  • add the beaten eggs an butter ingredients and mix thoroughly
  • Cook on medium to medium high heat ... stirring continuously until slightly thick. Remember..this is a "sauce"..so it needs to be a consistency that will allow you to pour it over a piece of cake

MOM MOMS BUTTERSCOTCH ICING

My Grandmother(Mom Mom) made this icing and put it on everything from chocolate cake to cookies. I love it and can eat it just by the spoonful, be careful when making it as it can easliy become too stiff. I really don't mind if it does because then I would just put it in a pan and cut it like fudge.

1/2 cup butter (no substitutions)
1 cup firmly packed light brown sugar
1/4 cup milk
2 cups confectioners' sugar

Steps:

  • On stovetop melt the butter, add the brown sugar and boil over low heat for two minutes, stirring constantly. Add the milk, stir until the mixture comes to a boil again. Remove from heat and allow to cool to about room temperature.
  • Slowly beat in the confectioners sugar, using more or less sugar depending on the consistency desired. Beat until mixture is thick enough to spread.

3 ½ cups all-purpose flour
½ teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground cloves
3 teaspoons baking soda
½ cup butter
2 cups packed brown sugar
2 eggs, beaten
3 cups unsweetened applesauce
½ cup raisins
½ cup dates, pitted and chopped
1 cup chopped walnuts
½ cup butter
1 cup packed brown sugar
¼ cup milk
1 teaspoon vanilla extract
2 cups sifted confectioners' sugar

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease and flour a tube pan.
  • Whisk together flour, salt, cinnamon, cloves, and soda. Set aside.
  • Cream together 1/2 cup butter and 2 cups brown sugar, beating until light and fluffy. Mix in eggs. Add flour mixture into creamed mixture alternately with applesauce, beginning and ending with flour mixture. Stir in the raisins, dates, and walnuts. Pour batter into prepared pan.
  • Bake in preheated oven until a tester inserted in the center of the cake comes out clean, about 1 1/2 hours. Cool on wire rack.
  • To make icing, melt 1/2 cup butter or margarine in a small saucepan over low heat; stir in 1 cup brown sugar. Boil for 2 minutes. Stir in milk, and continue to stir until the mixture returns to a boil. Remove from heat, and cool for 5 minutes. Beat in vanilla and confectioners' sugar. Frost cooled cake.

TILLIE'S WHITE SAUCE FROSTING

I have used this frosting on my grandmother's carrot cake for 40 years. It is a not-too-sweet frosting that freezes well. So make a double batch. This is a MUST try frosting. You will NOT be disappointed, I promise!! Only ½ cup sugar in the entire batch, makes this a healthier alternative frosting.

2 Tbsp flour
½ c milk
¼ c shortening
¼ c oleo or margarine
½ c sugar
1 tsp vanilla

Steps:

  • 1. In sauce pan: stir flour and milk. Cook till thick. Cool completely.
  • 2. Combine shortening and oleo well. Add sugar and cream mixture with hand mixer for 4 minutes.
  • 3. Add sugar combo to cooled white sauce mixture and add vanilla.
  • 4. BEAT!!! till sugar is dissolved completely. This will take a while, perhaps 5 minutes. I have never timed this. Taste and you will not feel any sugar grandules.
  • 5. This will freeze well. I make a double batch for a layer cake and a single batch for a 9x13 cake. It is so light and smooth and so little sugar.

Looking for a way to use up an abundance of apples, I stumbled across this recipe on Pinterest and traced it to bunnysoven.com. She gives credit to Examiner.Com, from Anne Marie Hurley, Livonia, Michigan. I took the liberty of tweeking this just a little. What makes this cake killer is the caramel frosting you make and pour over the cake. Make the cake let it cool , make the caramel sauce and pour the hot caramel sauce over the cake. Uh huh, gooey delicious caramel over a moist apple filled cake. It's easy, fast to make and incredibly delicious. This is a keeper!

1 cup vegetable oil (I know of people who sub all or half applesauce)
2 cups sugar
3 eggs
1 1/2 teaspoons vanilla
2 cups flour (may use 1/2 cup whole wheat flour in place of 1/2 cup white flour)
1 teaspoon salt
1/2-1 teaspoon cinnamon (optional)
1/4 teaspoon ground nutmeg (optional)
1 teaspoon baking soda
3 cups apples, peeled and diced
1/2 cup butter
1 cup brown sugar
1/4 cup milk (may sub almond milk or other non dairy milk)

Steps:

  • Preheat oven to 350*F. Grease and flour a 9 x 13 baking dish.
  • Cake: In a large mixing bowl, beat together the oil, sugar, eggs, and vanilla. Add the flour, salt, cinnamon and nutmeg(if using), and baking soda. Beat together until well-incorporated. Stir in the apples.
  • Pour the cake batter into the prepared baking dish. Bake for 55 - 60 minutes. Cool completely before adding the topping.
  • Topping: In a saucepan, combine the butter, brown sugar, and milk. Cook over medium heat, stirring constantly, until the mixture boils. Boil without stirring for 3 minutes. Remove from heat and immediately spread over the top of the cooled cake. Let sit for an hour prior to serving.
