This is a wonderful, hearty split pea soup. Great for a fall or blustery winter day.

- In a large stock pot, cover peas with 2 quarts cold water and soak overnight. If you need a faster method, simmer the peas gently for 2 minutes, and then soak for l hour.
- Once peas are soaked, add ham bone, onion, salt, pepper and marjoram. Cover, bring to boil and then simmer for 1 1/2 hours, stirring occasionally.
- Remove bone; cut off meat, dice and return meat to soup. Add celery, carrots and potatoes. Cook slowly, uncovered for 30 to 40 minutes, or until vegetables are tender.

MOM'S SOUTHERN STYLE SPLIT PEA SOUP
This soup's flavor is very different from your traditional pea soup. It is not sweet but has a spicy flavor very different from the 'savory' flavor of most pea soups. I love any pea soup but this one is the one I yearn for. Sometimes I add even more carrot if I think we need more carrots in our diet.

Steps:
- You may substitute a meaty hambone, diced smoked ham, cut up smoked pork butt, or, if like my husband prefers and no pork is allowed, use smoked turkey.
- Put all ingredients except salt into large heavy-bottomed stock pot.
- Cook over low-med. heat. Stir occasionally.
- Simmer until meat falls off bone and split peas have become mush. Be careful not to burn. Stir more often as soup thickens.
- Remove bone, bay leaves and spices.
- Puree and test for salt. Add salt if needed and cook an additional 15 minutes. Adjust water if necessary.
- The soup should be very thick. It becomes almost paste when cold. You may need to add some water to reheat.
- This soup freezes very well.
- If you leave out the cloves you won't have this special recipe. They are the secret ingredient.
- I'm guessing on servings and amount. it depends on how much you cook it down.

- Heat the olive oil in a skillet over medium heat, and saute the onion and garlic until tender.
- In a large pot, mix the onion mixture, potatoes, carrots, and split peas. Pour in the vegetable broth. Bring to a boil, reduce heat to low, and simmer 1 hour.
- In a blender or food processor, blend the tofu and spinach until creamy, and mix into the pot. Season with basil, salt, and pepper. Continue cooking 1 hour. If the soup becomes too thick, add water. Serve hot and enjoy.

GREEK SPLIT PEA SOUP WITH LEMON

- Preheat the oven to 350 degrees F.
- For the soup: Heat the EVOO in a soup pot over medium heat. Add the onions and garlic. Season with salt and pepper and cook until tender, 8 to 10 minutes. Add the stock and peas, bring to a boil, then reduce heat to a simmer and cook until just tender, 20 minutes. Remove half the soup and puree with the mint and parsley until smooth in a food processor or high powered blender. Return the puree to the pot, and stir in the lemon juice. Taste and adjust the salt and pepper. Cool and store for a make-ahead meal.
- For the flatbread: Arrange the flatbread on a wire rack over a baking sheet, spray with the olive oil on both sides and season with salt and oregano. Roast in the oven to toasted and crisp. Store at room temperature in an airtight container.
- Reheat the soup over medium heat. Serve the soup garnished with feta crumbles and a light sprinkle of cumin and paprika, a drizzle of EVOO and flatbread chips.
MOM'S SPLIT PEA SOUP
This is my mothers recipe with a little variation, it is "stand-up spoon" thick, with vegetables and potatoes. She fed a family of 13 hungry kids with this recipe, and the only thing that went with it, was crackers. Enjoy !!!

- -Addboth ham,and chicken base to water and simmer.
- -Addsplit peas and simmer till cooked, Stirring constantly.

- -Peeland dice potatoes and keep covered with water until needed.

- Add 4 quarts of water to a large soup pot over med/high heat. Add 1 cup of dry yellow split peas in the pot along with the 1/2 lb riblets; cover (leaving it open a crack to prevent overflow) and boil for 1 hour and 40 minutes or until peas are almost dissolved. Use a large spoon to remove impurities that float to the top.
- While peas and riblets are boiling, peel and dice 5 potatoes into 1/2-inch cubes. Peel and cut the first carrot into small circles the thickness of a quarter. Once the peas dissolve, add potatoes and carrots to the pot. Cook an additional 15 min or until potatoes are cooked through and easily pierced with a fork.
- Finely grate the second carrot. Finely chop 1 onion. Saute both in a large non-stick pan over med/high heat with 3 tbsp oil until translucent then add 3 pressed cloves of garlic and 2 tbsp of fresh dill. Stir an additional 30 seconds or until garlic is fragrant. Add everything to the soup pot.
- Finally stir in 1 1/2 tsp of salt, 1/4 tsp ground black pepper and 1 tsp Mrs. Dash. Add more seasoning to taste.

- Once you have eaten all the ham that can be easily removed from the bone you are ready to make pea soup. Put the bone into a large heavy bottomed soup pot and cover with water, depending on the size and shape of the bone you will need more or less water. In my pot with this bone I use about 12-14 cups of water. Put the pot on the stove and turn the heat up high to bring to a boil.
- While the pot is heating give the veggies a rough chop, all but the carrot is going to cook away so just hack them up and toss them in the pot. I use all the celery stocks including the tender leaves, but do be sure to peal the carrots. The leftover crudité veggies from your holiday party are perfect for soup.
- Once the veggies are in the pot pour the dry peas into a container and pick them over looking for bad peas and stones. The yellow peas are not bad; they are just yellow so leave them in to cook. On the package of peas there will be directions to soak/soften the peas, don’t do it. The starch in the peas will be lost and your soup will never thicken, trust me I have tried it and my mother laughed at me when I couldn’t get my soup to thicken.
- Pour the dry peas into the boiling pot and turn down the heat so you get a slow/soft boil. Add the spices, except salt. Stir for a while to be sure the heat is right and the peas don't just sink to the bottom and burn. Do not cover the pot you need the steam to evaporate so the soup thickens.
