1 cup butter
1 large egg
2 1/4 cups all-purpose flour, sifted
1/2 cup sugar
1/2 teaspoon almond extract
red food coloring
green food coloring

Steps:

  • Cream butter; Add sugar and beat until fluffy.
  • Beat in egg and almond extract. Blend in flour.
  • Divide dough into thirds.
  • Add a few drops red food coloring to 1/3, green coloring to 1/3 and leave 1/3 plain.
  • Fill cookie press with each color or combine colors for a rainbow effect. Form into desired shapes and decorate. Bake at 350° for 8-10 minutes.
  • Makes about 4 dozen.

Steps:

  • Preheat oven to 400°F. Cream butter and sugar. Blend in remaining ingredients.
  • Fill cookie press with 1/4 of dough at a time; form desired shapes on ungreased baking sheet.
  • Bake 6-9 minutes or until set but not brown.

2 cups butter, softened
1 cup sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
4 cups all-purpose flour
1 teaspoon baking powder
1/2 cup confectioners' sugar
1 to 2 tablespoons water
Colored sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Beat in vanilla. Combine flour and baking powder; add to creamed mixture and mix well. , Using a cookie press fitted with the disk of your choice, press dough 2 in. apart onto ungreased baking sheets. Bake at 325° until set, 11-12 minutes (do not brown). Remove to wire racks to cool., Place confectioners' sugar in a small bowl; stir in enough water to reach desired consistency. Working with 1 cookie at a time, brush glaze on the surface and sprinkle with sugar. Let stand until set.

My mom got this recipe from an English cookbook that she brought with her when she moved to the USA. Please note the flour measurement has you measure out 2 3/4 cups and then take out 5 1/2 T. Not sure why they wrote it like this but I am putting it down as written. These cookies go really fast so we usually tripled the recipe. We usually make a green, a pink and a yellow batch and make each color a differnt shape for the holidays. Also the cookies flavor improve as they age, so making them a week in advance is no problem. Just store in an airtight container.

1 cup shortening
3/4 cup sugar
1 egg, beaten
1 teaspoon almond extract
2 3/4 cups flour, minus 5 1/2 Tablespoons
1/4 teaspoon salt
1/2 teaspoon baking powder
3 -4 drops food coloring, of your choice if desired
confectioners' sugar, to dust baked cookies

Steps:

  • Mix all ingredients except confectioners sugar and chill in refrigerator until firm.
  • Preheat oven to 375 degrees.
  • Using a cookie press make cookies the shape you desire.
  • Bake 12-15 minutes.
  • Dust warm cookies with confectioners sugar and let cool completely.

1 cup unsalted butter, softened
½ cup white sugar
2 egg yolks
½ teaspoon vanilla extract
2 ¼ cups all-purpose flour
½ teaspoon baking powder

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line 2 baking sheets with parchment paper.
  • Combine butter and sugar in a bowl. Beat with an electric mixer until creamy. Add egg yolks and vanilla extract. Mix until well combined. Beat in flour and baking powder. Use your hands to finish mixing if dough does not come together.
  • Add dough to a cookie press and press spritz-shaped cookies onto the prepared baking sheets.
  • Bake in the preheated oven until cookies are lightly browned, 9 to 11 minutes. Cool on the baking sheets for 2 minutes. Carefully transfer to a wire rack and cook completely.
