PUERTO RICAN MONDONGO



Puerto Rican Mondongo image

This simple, nourishing stew of tripe and vegetables is found in innumerable variations throughout Latin America and around the Caribbean. On the islands of Aruba and Curaçao, it is known as sopi mondongo. Cooking Puerto Rican food is a bit similar to Island and Spain cuisine; it has a distinctive flavor combined with foreign influences using native seasonings and ingredients. Serve in deep bowls with white rice and avocados.

3 pounds beef tripe, trimmed of fat and cut into cubes
4 lemons, juiced
water to cover
3 quarts beef stock, divided
8 ounces cassava, peeled and cubed
8 ounces potatoes, peeled and cubed
8 ounces yams, peeled and cubed
8 ounces pumpkin, peeled and cubed
8 ounces sweet potatoes, peeled and cubed
½ (16 ounce) can tomato sauce
⅔ cup sofrito
1 ear corn, cut into 1-inch pieces
salt and ground black pepper to taste

Steps:

  • Combine tripe and lemon juice in a large bowl. Let sit, about 10 minutes.
  • Transfer tripe and lemon juice to a large pot. Cover with 2 inches of water. Bring to a boil; reduce heat to low and cook, stirring occasionally, until slightly softened, about 10 minutes. Drain and rinse tripe.
  • Return tripe to the pot. Cover with 2 quarts beef broth, adding water as needed. Bring to a boil; reduce heat and cook until tender, about 2 hours.
  • Stir remaining beef stock, cassava, potatoes, yams, pumpkin, sweet potatoes, tomato sauce, sofrito, and corn into the pot. Cook until tender, about 20 minutes more. Season with salt and pepper.

Tasty and traditional. That is how I describe this delicious dish inherited from Spanish cuisine. Mondongo's main ingredient in Spain and Latin America is tripe (the stomach of the cow). The preparation is basically the same, although some people do not add chickpeas, Spanish chorizo or pigs' feet; that is up to the likes and dislikes of each family.

3 lbs of clean tripe
1/2 can of tomato sauce
1/2 cup of sofrito
2 tablespoons of oil
1/4 lb of ham
2 tablespoons of capers and olives, without seeds
1 package of seasoning with culantro and annatto
2 large carrots, sliced
2 bay leaves
2 large potatoes, diced
1 large can of chickpeas
1 cup of macaroni, optional
Salt and pepper to taste
Juice of 1 lemon to wash the tripe

Steps:

  • Thoroughly wash the tripe, soak it in water with lemon juice during an hour. Change the water.
  • Soften the tripe in plenty of water (2 liters) and salt to taste at medium heat. Cook until it is soft and tender, for about 2 hours. Then, drain it by removing the water (do not keep it) and cut it in thin strips.
  • Transfer the tripe to a large and clean pot, add oil and spices for the sofrito and add about 4-5 cups of water. Let it cook for about 40 more minutes.
  • Add chickpeas and macaroni, cook for about 25 more minutes, remove from the stove and serve hot.

  • Lavar bien la panza, ponerla a remojar en agua con el jugo de 1 limón durante una hora. Cambia el agua.
  • Ablanda el mondongoa a fuego moderado en abundante agua ( 2 litros) y sal al gusto. Cocina hasta que quede blando y tierno, aproximadamente de 2 horas. Luego escúrrelo vaciando el agua (no lo conserves) y córtalo en tiras finas.
  • Pasa el mondongo a una olla grande y limpia, agrega el aceite y los condimentos para el sofrito, y agrega aproximadamente 4 a 5 tazas de agua y déjalo cocinar unos 40 minutos más.
  • Agrega los garbanzos y macarrones, deja cocinar unos 25 minutos más, retíralo del fuego y sírvelo caliente.
