ROASTED COD WITH LIMA BEANS

Steps:
- Preheat the oven to 375 degrees F.
- Place 4 (15-inch) long sheets of aluminum foil on a work surface. Divide the frozen lima beans among the foil sheets (about 3/4 cup per sheet). Place 1 teaspoon of olive oil 1 tablespoon of chopped parsley, and a pinch of salt and freshly ground black pepper on each pile of beans and gently toss to combine. Place 1 piece of fish over each pile of beans. Pour 2 tablespoons of white wine over each of the fish and sprinkle a pinch of salt and freshly ground black pepper. Seal up the foil packets.
- Place the foil packets on a baking sheet. Bake for 20 minutes depending on the thickness of the fish. Gently transfer the beans and fish to a serving plate and serve immediately.
PARTON FAMILY BAKED LIMA BEANS & SAUSAGE
This came from a cookbook called "All Day Singing and Dinner on the Ground" by Willadeene Parton (Dolly's sister) that we recently got. The cookbook is full of really good, simple family recipes! I love lima beans, so here's one we've adapted and hope to make. Time does not include overnight bean soaking.

Steps:
- Soak the beans in lots of water overnight, then drain, rinse, and pick out any bad ones.
- In a large pot, cover with cold water and add salt. Simmer covered over medium heat for 35 to 45 min until tender (make sure they don't get mushy). The amount of time it takes will depend on how large the beans are.
- Preheat oven to 350 degrees F.
- Drain and pour the cooked beans into a well-oiled baking dish.
- In a bowl, combine the remaining ingredients and stir to combine well. Add to the beans and fold it all together.
- Bake in a 350 degree F oven for 1 hour.
- Note: onions would also go well in this recipe.

POT ROAST WITH SOY OR LIMA BEANS

- Preheat oven to 450 degrees. Heat a large ovenproof skillet that can later be covered over high heat for about a minute. Add oil and, after a moment, meat. Immediately transfer to oven. Let sit there for 10 minutes, then turn and brown other side for 10 minutes.
- Remove meat from oven, and sprinkle with pepper. Add beans to pot, along with soy sauce and 1 cup water. Cover, and return to burner, adjusting heat so mixture simmers. Cook slowly, turning about every half-hour, until meat is very tender, at least 2 hours (and not unlikely 4). If heat is low enough -- just a few bubbles should appear at a time -- you will not need to add more liquid, but do so if the mixture threatens to dry out.
- When meat is done, taste, and add salt if needed; serve with beans and sauce.

EASY LIMA BEANS
Baby lima beans are steamed in chicken broth. This is a very tasty lima bean recipe that is also low in fat.

- Heat a large saucepan over medium heat, and spray with cooking spray. Saute onions until soft and translucent. Pour in chicken broth, and bring to a boil. Add lima beans, and enough water just to cover. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, until beans are tender.

BAKED LIMA BEANS

- Soak beans in water overnight. Drain. Add fresh water, just enough to cover the beans, and salt. Cook until tender, about 30 minutes.
- Preheat oven to 300 degrees. If necessary, pour off some water from the beans so that they are very moist but not swimming in liquid. Add ketchup, brown sugar and mustard to the beans and water. Pour into a large (about 9 by 12 by 3) flat baking pan. Lay strips of bacon on top of the bean mixture.
- Bake for 2 1/2 hours. If the bacon starts browning too fast, reduce heat to 225 degrees and extend the baking time by 1 hour.

- In a medium casserole dish or glass baking dish (this beat-up stoneware dish is just perfect) dump the package of frozen limas (it's okay if a little bit of water or ice crystals stick to the beans). And yes, go ahead and use them straight out of the freezer.
- Toss in the garlic cloves and drizzle everything with the olive oil. Toss it up good so that everything feels like it has been coated with a bit of the oil then spread out in an even layer. Pop the whole thing in the hot oven and bake 30-45 minutes or until the limas are done to your liking. I like mine crispy so I leave them for a full 45 minutes.
- To serve, fish out the garlic and slice open the cloves to get at the sweet and creamy goodness inside. Squeeze the soft garlic over the lima beans, give the dish a generous pinch of salt and pepper and toss it up.
