Our Cookie Ice Cream Sandwiches are the perfect summer treat and can be made ahead of time, so you're ready to whip them out in a flash. To get started, grab your Betty Crocker™ cookie mix. You'll be legendary for our ice cream cookie sandwiches, and we think your kids will love them, too.

1 pouch (1 lb 1.5 oz) Betty Crocker™ chocolate chip cookie mix
Butter and egg called for on cookie mix pouch
4 cups ice cream, frozen yogurt, sherbet or sorbet
Betty Crocker™ candy sprinkles or miniature chocolate chips, if desired

Steps:

  • Heat oven to 375°F. Make cookies as directed on pouch, using butter and egg, except drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet.
  • Bake 11 to 13 minutes or until edges are light golden brown. Cool 1 minute before removing from cookie sheet. Cool completely, about 30 minutes.
  • For each ice cream sandwich, place 1 scoop of ice cream (about 1/3 cup) between 2 cookies. Gently press cookies together (ice cream should spread to edge of cookies). Roll ice cream edges in sprinkles. Eat immediately, OR to save for later, wrap sandwiches individually in plastic wrap. Place in resealable freezer bag, and freeze until needed.

1 pouch Betty Crocker™ oatmeal cookie mix
1/2 cup butter, softened
1 tablespoon water
1 egg
1/2 cup raisins
3 cups vanilla ice cream
1/4 cup M&M's® chocolate candies
1/4 cup semisweet chocolate chips
3 tablespoons creamy peanut butter

Steps:

  • In medium bowl, stir together ice cream, chocolate candies, chocolate chips and peanut butter. Freeze until firm, about 1 hour.
  • Meanwhile, heat oven to 375°F (350°F for dark or nonstick cookie sheets). In large bowl, combine cookie mix, butter, water and egg; stir just until combined. Stir in raisins.
  • Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
  • Bake 11 to 13 minutes or until light golden brown. Cool 1 minute on cookie sheets. Transfer cookies to cooling racks; cool completely, about 30 minutes.
  • Onto bottom side of half of the cooled cookies, place scant scoop of ice cream mixture. Top with another cookie, bottom side down. Place sandwich cookies on cookie sheet. Freeze until firm, about 1 hour, before serving.

1 ½ cups white sugar
1 ½ cups packed brown sugar
2 teaspoons vanilla extract
4 eggs
4 ½ cups all-purpose flour

2 cups butterscotch chips
½ gallon vanilla ice cream
1 (12 ounce) jar hot fudge topping
1 (12 ounce) jar butterscotch topping

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 2 14-inch pizza pans.
  • In large bowl, beat together the butter, white sugar, brown sugar, and vanilla until light and fluffy. Add eggs one at a time, mixing well with each addition. In a separate bowl, sift together the flour, salt, and baking soda. Add the dry ingredients slowly into the butter mixture, beating until well blended. Stir in chocolate chips and butterscotch chips.
  • Divide the dough in half and spread each into a prepared pizza pan. Bake in the preheated oven for 20 to 25 minutes. Cool cookies in the pizza pans on a cooling rack.
  • When the cookies are completely cooled, spread a layer of hot fudge on the top of one, and a layer of butterscotch topping on the other. Freeze the cookies for 4 hours or overnight to set.
  • Remove the cookies from the freezer, and place tightly spaced scoops of softened vanilla ice cream on the hot fudge topped cookie. Carefully place the other cookie on top of the ice cream, butterscotch side down. Gently press down on the top cookie to even out the ice cream and seal the sandwich. Drizzle the remaining hot fudge and butterscotch sauces decoratively on top of the cookie sandwich. Place in the freezer to set for one hour before serving.

1/2 cup all-purpose flour
1/2 cup creamy unsweetened peanut butter
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
2 tablespoons heavy cream
1 tablespoon vanilla extract
1/4 teaspoon kosher salt
1 cup quick-cooking oats
3/4 cup candy-coated chocolates, such as M&M's

Steps:

  • Put the flour in a microwave-safe bowl and microwave on high until the flour reaches a temperature of 180 degrees F, 1 to 1 1/2 minutes. Whisk to get rid of as many lumps as you can. Set it aside to cool.
  • In a stand mixer fitted with a paddle attachment, combine the peanut butter, brown sugar, sugar, butter, heavy cream, vanilla and salt and mix on medium-high, scraping down the sides of the bowl periodically with a rubber spatula to ensure that everything gets combined, until light and fluffy, 3 to 4 minutes. Add the flour and oats and mix to combine. Add the M&M's and mix to combine. Store by the scoop or in balls in the fridge in an airtight container for up to a week.

1/2 cup whole milk
2/3 cup unsweetened Dutch-process cocoa powder
6 large eggs, separated
3/4 cup sugar
1/4 cup vegetable oil
1 teaspoon pure vanilla extract
1/2 teaspoon instant espresso powder
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon cream of tartar
1 1/2 pints cookie dough ice cream (about 3 cups)
1 1/2 pints cookies-and-cream ice cream (about 3 cups)

Steps:

  • Preheat the oven to 375˚ F. Coat a 13-by-18-inch rimmed baking sheet with cooking spray and line with parchment paper. Spray the parchment paper with cooking spray. Heat the milk in the microwave until steaming, 30 to 45 seconds. Put the cocoa powder in a large bowl; pour the hot milk on top and whisk to combine. Let the cocoa steep, about 5 minutes.
  • Add the egg yolks, 1/2 cup sugar, the vegetable oil, vanilla and espresso powder to the cocoa mixture; whisk to combine. Sift in the flour, baking powder and salt; whisk to combine.
  • Combine the egg whites and cream of tartar in a separate large bowl. Beat with a mixer on medium speed until soft peaks form, 2 to 3 minutes. Increase the speed to medium high and beat in the remaining 1/4 cup sugar, 1 tablespoon at a time, until stiff peaks form, about 3 minutes. Whisk one-third of the egg white mixture into the batter to lighten. Gently fold in the remaining egg white mixture in 2 batches until fully combined and there are no white streaks remaining.
  • Scrape the batter onto the baking sheet; spread evenly to the edges. Bake until the cake just springs back to the touch and no longer looks wet in the center, 12 to 16 minutes. Transfer to a rack and let the cake cool 10 minutes in the pan, then invert onto the rack and carefully peel off the parchment. Let cool completely, about 30 minutes.
  • Transfer the cake to a cutting board, cut in half crosswise and lightly wrap each half in plastic wrap. Freeze the cake halves until almost frozen and firm, about 2 hours.
  • In the last 15 to 30 minutes of freezing the cakes, remove the ice cream from the freezer and let soften until spreadable but not melted. Line a 9-by-13-inch baking dish with plastic wrap, leaving a 6-inch overhang on the sides. Unwrap the cake halves; place 1 cake half in the bottom of the dish. Scoop the cookie dough ice cream all over the cake and spread into an even layer with an offset spatula, leaving a 1/8-inch border of cake. Top with the cookies-and-cream ice cream and spread into an even layer. Top with the remaining cake half and gently press down. Wrap tightly with the overhanging plastic wrap. Freeze the cake in the baking dish until the ice cream is firm (the cake will stay soft), at least 4 hours or overnight.
  • Lift the whole sandwich from the baking dish and remove the plastic wrap. Using a sharp knife, trim the edges, then cut into pieces.

Steps:

Steps:

  • Bring the milk, 1/2 cup brown sugar and salt to a boil in medium saucepan over medium heat. Lower the heat and add the oats and cinnamon. Simmer for a few minutes, while stirring, until the oatmeal has thickened slightly and has a creamy consistency but not completely soft. In large bowl, beat egg yolks and 1/4 cup brown sugar together. Add just a little bit of the milk mixture and whisk. Very slowly add the rest of the milk mixture a bit at a time, whisking constantly and quickly so that there no bits of cooked egg in your ice cream. Add heavy cream and vanilla and mix well. Cover with lid or plastic wrap and refrigerate for several hours, or overnight, to cool. When ready, make according to ice cream maker directions. In the last 5 minutes of mixing add remaining ingredients. Cover and freeze until desired consistency is reached.

mini chocolate chip

Steps:

  • Preheat oven to 375°F (190°C).
  • In a large bowl, whisk together the brown sugar, white sugar, and melted butter.
  • Add in the eggs and vanilla, and whisk until combined.
  • Add in the flour, baking powder, and salt, and mix together until just combined. Add in the chocolate chips and mix again.
  • Spay two round pans with nonstick cooking spray and separate the cookie dough into each pan. Pat down the dough with a spatula until the surface is even, and bake for 35 minutes or until golden brown.
  • While the cookies are baking, place plastic wrap in a springform pan. Pour softened vanilla ice cream into the springform pan and spread evenly. Freeze until solid, about 1 hour.
  • Once the cookies have baked and cooled, turn them over onto a tray.
  • Place the ice cream disk on top of one half and cover with the other half.
  • With your hand press the mini chocolate chips to the outside of the cookie. Freeze again until solid.
  • Enjoy!
