HONEY-GARLIC MOOSE MEATBALLS



Honey-Garlic Moose Meatballs image

Bull moose is the best meat to use with this recipe. Have a pro, or yourself grind it like hamburger.

¼ cup minced garlic
¼ cup soy sauce
½ cup honey
2 tablespoons garlic powder
3 tablespoons onion powder
1 ½ teaspoons chili powder
3 pounds ground moose
2 tablespoons canola oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir together the minced garlic, soy sauce, and honey together in a small saucepan. Stir in garlic powder, onion powder, and chili powder. Bring to a simmer over medium-high heat, then reduce heat to medium-low and gently simmer for 15 minutes, then set aside.
  • While the sauce is simmering, roll the ground moose into meatballs in 2 tablespoon portions. Heat the canola oil in a large skillet over medium-high heat. Cook the meatballs in batches until well browned, and cooked through, 10 to 15 minutes; drain well.
  • Place the drained meatballs into a baking dish. Pour on the sauce, and stir until well coated. Bake in preheated oven for about 20 minutes so the meatballs absorb some of the sauce.

4 cups instant plain oatmeal
3 cups powdered milk
1 cup sugar
3 ounces lemon gelatin or 3 ounces lime gelatin
2 tablespoons honey
1 ounce root beer extract
5 ounces water
1 pinch shortening

Steps:

  • Briefly grind the oatmeal in a blender until the volume is reduced to about 3 cups. This imparts the appropriate woody texture to the finished product.
  • Dry mix the oatmeal, powdered milk, sugar and gelatin in a large bowl. Remove any rings and continue mixing by hand, squeezing the mix through your fingers while adding the root beer extract, honey and water until the dough is just sticky enough to clump easily.
  • Be careful when adding the last ounce of water because it is very easy to add too much. Use a butter knife to scrape the goo from your hands.
  • Lubricate your palms with shortening before you roll liittle dollops of dough into the well-known nugget shape. You might want to get a real moose nugget as a model.
  • Place on cookie sheets or dinner plates to air-dry for at least 24 hours or until they harden to your liking. Keep in closed container until serving.

8 ounces puff corn (or Corn Puffs cereal)
1 cup butter
1 cup brown sugar
1/2 cup light corn syrup
1 teaspoon baking soda

Steps:

  • Place puff corn in a large roasting pan.
  • In a 2 quart sauce pan bring butter, sugar and syrup to a boil.
  • Boil for 2 minutes.
  • Remove from heat and add baking soda. Caramel will foam.
  • Stir well.
  • Pour over puff corn and bake at 250F for 45 minutes; stirring every 10-15 minutes.
  • Spread on waxed paper to cool.
