SPINACH LASAGNA

- Heat the EVOO in a saucepot and add the butter. Add the garlic and cook, stirring, for 2 minutes. Add the tomatoes and crush them up a bit. Add the passata, a fat handful of torn basil leaves, the onion and some salt and pepper. Bring to a simmer and simmer for 40 to 45 minutes. Remove the onion and set the sauce aside.
- Separate the spinach while adding it to a mixing bowl. Add half of the mozzarella, the ricotta, 1 1/2 cups of the Parmigiano-Reggiano and the eggs yolks and mix to combine. Season with grated nutmeg, salt and pepper.
- Layer a little sauce into a lasagna pan and top with three flat lasagna sheets or four curly. Top with a little more sauce, and then half of the spinach and cheese mixture. Repeat with another layer, and end on top with lasagna sheets. Top with some sauce and the remaining mozzarella and Parmigiano-Reggiano.
- The lasagna can be stored before or after baking for a make-ahead meal, or baked to serve immediately. When baking the first time, bake at 375 degrees F, uncovered, from room temperature until cooked through and brown and bubbling on top, 60 to 70 minutes. If reheating, bake at 375 degrees F, covered, for 40 to 45 minutes.
- Let the lasagna rest 20 minutes before cutting. Serve with extra sauce on the side.
SPINACH LASAGNA III
Fresh spinach and plenty of ricotta, Romano and mozzarella make this a cheesy and hearty dish. This lasagna can also be made without the spinach.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
- In a skillet over medium-high heat, cook mushrooms, onions, and garlic in olive oil until onions are tender. Drain excess liquid and cool. Boil spinach for 5 minutes. Drain, then squeeze out excess liquid. Chop spinach.
- Combine ricotta cheese, Romano cheese, spinach, salt, oregano, basil, pepper, and egg in a bowl. Add cooled mushroom mixture. Beat with an electric mixer on low speed for 1 minute. Lay 5 lasagna noodles in bottom of a 9x13 inch baking dish. Spread one third of the cheese/spinach mixture over noodles. Sprinkle 1 cup mozzarella cheese and 1/3 cup Parmesan cheese on top. Spread 1 cup pasta sauce over cheese. Repeat layering 2 times.
- Cover dish with aluminum foil and bake in a preheated oven for 1 hour. Cool 15 minutes before serving.

MATZO SPINACH LASAGNA
What to do with leftovers after your seder? This unleavened twist on lasagna is a great way to use leftover matzo. Substitute layers of matzo for the noodles, then spread with a mixture of spinach and ricotta cheese. Look for the kosher-for-Passover signifier on all the other ingredients.

- Preheat oven to 400 degrees. Brush bottom and sides of an 8-by-8-inch baking dish with oil.
- Whisk together ricotta, eggs, half-and-half, 3/4 cup Parmesan, zest, and nutmeg. Season generously with salt and pepper. In another bowl, toss spinach with lemon juice; season with salt and pepper.
- Place 1 matzo sheet in bottom of prepared baking dish. Pour 1 cup cheese mixture over matzo. Sprinkle evenly with one-third of spinach mixture. Repeat layers 2 more times. Top with remaining matzo and drizzle with remaining cheese mixture. Sprinkle with remaining 1/2 cup Parmesan. Bake, uncovered, until puffed and golden brown on top, 35 to 40 minutes (cover with foil if browning too quickly). Let cool 15 minutes, then serve.
MORI-NU FRESH SPINACH LASAGNA
This is from a package of Mori-Nu Silken Lite Tofu, posted as written. When I made this, I used regular parmesan and mozzarella cheeses, and lots more than called for. I used whole wheat lasagna noodles, and I also found that extra sauce was needed, in my opinion. Carnivore hubby liked it!

Steps:
- Boil 4 qts. of water in a large pot. Blanch spinach for 1 min.; drain spinach in colander, do not drain water.
- Saute mushrooms in 1 tablespoons olive oli until soft, and mix with marinara sauce. Set aside.
- Stir 1/2 teaspoons salt into water. Add pasta to water; boil for 10-12 minutes Drain and rinse pasta in cold water, lay pasta flat on cutting board.
- Saute onions in 1 tablespoons olive oil for 1 minute Chop spinach and add to onions.
- Combine with remaining ingredients (except cheese) and set aside.
- Preheat oven to 350 degrees. Lightly oil small rectangular baking dish and spread 1/3 of prepared marinara sauce over bottom. Lay strips of pasta so they cover the bottom and hang over sides of baking dish. (Later fold pasta over top to seal in fillings.)
- Spread 1/2 spinach filling; add another layer of pasta. Continue to add sauce, and filling, Parmesan, ending with pasta and covering with sauce. Sprinkle Monterey Jack and/or chopped fresh basil lightly on top if desired.
- Cover with foil and bake 20 minutes Remove foil and bake another 15 minutes Let the lasagna rest 15 mins.; cut and serve.
