Time 2h

Yield 12

Number Of Ingredients 14

1 cup milk
⅓ cup butter
1 (.25 ounce) package active dry yeast
½ cup white sugar
4 ½ cups all-purpose flour
1 teaspoon salt
3 eggs
¾ cup brown sugar
1 tablespoon ground cinnamon
½ cup raisins
1 teaspoon light corn syrup
½ teaspoon vanilla extract
1 ¼ cups sifted confectioners' sugar
2 tablespoons half-and-half cream

Steps:

  • Heat the milk in a small saucepan until it bubbles, then remove from heat. Add the butter and stir until melted; let cool until lukewarm.
  • In a large mixing bowl, dissolve the yeast in the milk mixture. Add the sugar, 3 cups of flour, salt and eggs; stir well to combine. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and supple, about 8 minutes.
  • Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface and roll into a 10x 14 inch rectangle. Lightly brush the far edge with water. In a small bowl combine the cinnamon and 3/4 cup brown sugar and sprinkle over the rectangles. Then sprinkle the raisins and chopped nuts over the dough. Roll up the dough into a log and seal the seam.
  • Cut the dough into 12 equal pieces; place the pieces in a greased 9x13 inch baking pan, or 12 inch deep dish pizza pan. Cover with plastic wrap and place in the refrigerator to rise overnight.
  • The next morning, preheat oven to 375 degrees F (190 degrees C). Take the rolls out of the refrigerator and let stand at room temperature for 30 minutes.
  • Bake the rolls for 25 to 30 minutes or until golden. Meanwhile, combine the corn syrup with the vanilla in a small bowl. Whisk in the powdered sugar and enough cream to make a thick glaze; set aside. Drizzle the glaze over the rolls and serve warm.

CHRISTMAS MORNING CINNAMON ROLLS

Christmas Morning Cinnamon Rolls image

Categories     dessert

Time 4h10m

Yield 12 servings

Number Of Ingredients 17

1 cup warm whole milk
1/3 cup granulated sugar
6 tablespoons unsalted butter, melted
1 teaspoon kosher salt
One .25-ounce package active dry yeast
2 large eggs
4 cups all-purpose flour, plus more for dusting
Vegetable oil, for the bowl
6 tablespoons unsalted butter, softened, plus more for the baking dish
3/4 cup light brown sugar
2 tablespoons ground cinnamon
1 cup chopped toasted pecans, optional
1/2 cup raisins, optional
2 cups confectioners' sugar
2 tablespoons unsalted butter, melted
1/2 teaspoon vanilla extract
4 tablespoons milk, plus more as needed

Steps:

  • For the dough: Combine the milk, granulated sugar, butter, salt and yeast in the bowl of a stand mixer fitted with the hook attachment and stir to combine well. Add the eggs and stir until well mixed. Add the flour and mix on medium-high speed until the dough is smooth and elastic, about 4 minutes.
  • Transfer the dough to a large, lightly oiled bowl and cover with plastic wrap or a clean kitchen towel. Let stand in a warm, draft-free place until doubled in size, 1 1/2 to 2 hours.
  • Punch the dough down and lightly flour a work surface. Lay the dough out and pat or roll the dough out into an 18-by-12-inch rectangle.
  • For the filling: Butter a 13-by-9-inch glass baking dish. Spread the softened butter evenly all over the dough, leaving a 1/2-inch border, then sprinkle evenly with the brown sugar and cinnamon. Sprinkle with the pecans and raisins if using. Starting with a short end, roll up the dough and press and crimp the edges to seal. Cut the dough into 12 slices and arrange them in the buttered baking dish. If you want to bake them the same day, cover with plastic wrap and let stand until doubled in size, about 1 hour. Otherwise, refrigerate overnight; take out of the refrigerator and let sit at room temperature for 1 hour before baking.
  • Preheat the oven to 375 degrees F. Bake the cinnamon rolls until puffed and golden brown all over, about 25 minutes.
  • For the icing: Put the confectioners' sugar in a medium bowl. Whisk in the melted butter, vanilla and 4 tablespoons of milk; whisk until smooth. Add additional milk, about 1 teaspoon at a time, if needed to achieve a thick but spreadable consistency.
  • Spread the icing over the warm cinnamon rolls. Serve warm.

HOMEMADE CINNAMON ROLLS RECIPE BY TASTY

Homemade Cinnamon Rolls Recipe by Tasty image

Nothing says Sunday morning like a warm, gooey batch of homemade cinnamon rolls. Finish them with a generous topping of frosting, and be prepared to lick brown sugar off your fingers for the rest of the afternoon.

Provided by Scott Loitsch

Categories     Breakfast

Time 2h31m

Yield 14 servings

Number Of Ingredients 15

½ cup unsalted butter, melted
2 cups whole milk, warm to the touch
½ cup granulated sugar
2 ¼ teaspoons active dry yeast
5 cups flour, divided
1 teaspoon baking powder
2 teaspoons salt
¾ cup butter, softened
¾ cup light brown sugar
2 tablespoons ground cinnamon
4 oz cream cheese, softened
2 tablespoons butter, melted
2 tablespoons whole milk
1 teaspoon vanilla extract
1 cup powdered sugar

Steps:

  • Generously butter two disposable foil pie/cake pans.
  • In a large bowl, whisk together warm milk, melted butter, and granulated sugar. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If it is hotter, allow to cool slightly.
  • Sprinkle the yeast evenly over the warm mixture and let set for 1 minute.
  • Add 4 cups (500g) of all-purpose flour to the milk mixture and mix with a wooden spoon until just combined.
  • Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.
  • After 1 hour, the dough should have nearly doubled in size.
  • Remove the towel and add an additional ¾ cup (95g) of flour, the baking powder, and salt. Stir well, then turn out onto a well-floured surface.
  • Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface.
  • Roll the dough out into a large rectangle, about ½-inch (1 cm) thick. Fix corners to make sure they are sharp and even.
  • Spread the softened butter evenly over the dough.
  • Sprinkle evenly with brown sugar and a generous sprinkling of cinnamon.
  • Press the mixture into the butter.
  • Roll up the dough, forming a log, and pinch the seam closed. Place seam-side down. Trim off any unevenness on either end.
  • Cut the log in half, then divide each half into 7 evenly sized pieces. About 1½ inches (8cm) thick each.
  • Place 7 cinnamon rolls in each cake pan, one in the center, six around the sides. Cover with plastic wrap and place in a warm place to rise for 30 minutes.
  • Preheat oven to 350˚F (180˚C).
  • To prepare the frosting. In a medium-size mixing bowl, whisk together cream cheese, butter, whole milk, vanilla, and powdered sugar, until smooth.
  • Remove plastic wrap. Bake the cinnamon rolls in a preheated oven for 25-30 minutes, until golden brown.
  • While still warm, drizzle evenly with frosting.
  • Enjoy!

NO-ROLL CINNAMON ROLLS

No-Roll Cinnamon Rolls image

Nothing beats homemade cinnamon rolls--the store-bought canisters simply don't compare. When you find yourself short on time but still in the market for something homemade, try this clever recipe. Fresh pizza dough makes an excellent dupe for the rich dough traditionally used for cinnamon rolls, and this time-saving preparation means you'll be able to whip up a homemade glaze too.

Provided by Food Network Kitchen

Time 1h15m

Yield 8 servings

Number Of Ingredients 9

1 pound fresh pizza dough
All-purpose flour, for rolling
Nonstick cooking spray, for the pan
1/2 cup packed light brown sugar
2 teaspoons ground cinnamon
6 tablespoons unsalted butter, at room temperature
1/2 cup confectioners' sugar
1 to 2 tablespoons whole milk
1/4 teaspoon pure vanilla extract

Steps:

  • Allow the dough to rest at room temperature for 30 minutes on a floured surface.
  • Preheat the oven to 350 degrees F. Spray an 8 1/2-by-4 1/2-inch loaf pan with nonstick cooking spray.
  • Combine the brown sugar and cinnamon in a small bowl. Set aside.
  • Roll out the dough to an 8-by-14-inch rectangle. Spread the butter over the dough. Sprinkle the brown sugar mixture over the butter and pat down lightly. With a long side facing you, make 3 vertical cuts in the dough, creating 4 equal strips, each 8 inches long and 3 1/2 inches wide. Place one strip of dough into the prepared loaf pan, sugar-side up. Repeat with the remaining strips of dough, stacking them.
  • Bake until golden brown and puffed, 28 to 30 minutes. Allow to cool for 5 minutes. Invert the pan onto a serving platter and set aside until just cool enough to slice.
  • To make the glaze, sift the confectioners' sugar into a medium bowl. Whisk in the milk and vanilla to make a smooth glaze.
  • Slice the cinnamon roll loaf into pieces and drizzle with the glaze.

OVERNIGHT CINNAMON ROLLS

Overnight Cinnamon Rolls image

Delicious cinnamon roll recipe that rises in the fridge overnight.

Provided by Jeniflower

Categories     Cinnamon Rolls

Time 10h5m

Yield 12

Number Of Ingredients 13

2 cups lukewarm water
1 (.25 ounce) package active dry yeast
½ cup white sugar
¼ cup shortening
1 ½ teaspoons salt
1 large egg
6 cups all-purpose flour, sifted
½ cup unsalted butter, softened
½ cup firmly packed brown sugar
½ cup white sugar
4 tablespoons ground cinnamon
1 pinch ground cloves
½ cup cream cheese frosting, or to taste

Steps:

  • Prepare dough: Combine water and yeast; let sit for 5 minutes until yeast has dissolved.
  • Mix sugar, shortening, salt, and yeast mixture together in a large bowl. Stir in egg. Mix in 1/2 of the flour, then remaining flour until a dough forms. Transfer dough to a well-greased bowl and cover. Place in the refrigerator to rise, 8 hours to overnight.
  • Remove dough from the refrigerator. Roll out on a lightly floured board. Spread softened butter over the surface of the dough, leaving a 1-inch strip along the long edge of the rectangle furthest away from you completely dry.
  • Mix brown sugar, white sugar, cinnamon, and cloves together in a bowl. Sprinkle all over the dough except the 1-inch border. Roll dough up toward the border, then cut into 1-inch thick rolls. Place in a greased pan and let rise in a warm place until doubled in size, about 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bake rolls in the preheated oven until golden brown, about 20 minutes. Spread cream cheese frosting on top of hot rolls.

  • Heat the 1 cup of almond milk and 2 Tbsp of the butter in a sauce pan over medium heat, or until the butter is just melted. Set it aside and allow it to cool slightly for about 3-5 minutes.
  • Pour the almond milk/butter mixture into a large mixing bowl and sprinkle the yeast over it. Allow it to sit and activate for about 10-15 minutes, then sprinkle the white sugar and the salt over top. Stir.
  • Add the flour into the mixing bowl with the liquid ingredients, a 1/2 cup at a time, stirring constantly. Keep adding flour until the mixture can no longer be easily stirred. There will definitely be some flour leftover.
  • Sprinkle about 1/2 cup of the remaining flour onto a clean work surface and turn the dough out on the floured surface. Knead the dough for about a minute until it comes together into a nice ball.
