MORNING GLORY BREAKFAST BARS



Morning Glory Breakfast Bars image

What a delight to have first thing in the morning, very quick and very healthy for those on the go!!

Number Of Ingredients 12

2 cups all-bran cereal (All-Bran or 100% Bran Cereal)
1 1/2 cups shredded carrots (about 3)
1 cup milk
3/4 cup crushed pineapple, drained
1/2 cup plain yogurt (not fat-free)
1 1/2 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup liquid honey

Steps:

  • Preheat oven to 375°F Line a 13x9-inch metal baking pan with foil, leaving a 2-inch overhang at each end. Lightly butter foil.
  • In a bowl, combine bran cereal, carrots, milk, pineapple and yogurt; let stand for 5 minutes. In a large bowl, combine flour, baking powder, cinnamon, baking soda and salt. Whisk egg and honey into milk mixture. Pour over dry ingredients and stir just until mostened.
  • Spread into prepared pan, smoothing top. Bake for about 30 minutes or until a tester inserted in center comes out clean. Let cool completely in pan on rack. Using foil overhang as handles, remove from pan and cut into bars.

I like to make a batch of these and then cut them and wrap single servings in foil to have handy in the freezer for the week. Much cheaper than the freezer breakfasts from the store and you can basically add/substitute whatever ingredients you want or have handy.

3 cups frozen Southern-style hash browns
4 eggs, lightly beaten
1 cup cubed fully cooked ham
1 cup shredded Cheddar-Monterey Jack cheese blend
½ teaspoon onion powder
¼ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x11-inch casserole dish with cooking spray.
  • Mix hash browns, eggs, ham, Cheddar-Jack cheese, onion powder, salt, and pepper together. Pour mixture into the prepared dish. Shake dish gently from side to side to level out ingredients.
  • Bake, uncovered, in the preheated oven until top starts to brown, about 40 minutes. Cool before cutting into bars.

This is a big hit on those mornings when you're running out the door and need a quick grab-and-go bite. Yummy and filling!

1 cup(s) peanut butter
1/2 cup(s) packed brown sugar (can reduce amount or replace with stevia or truvia)
1/2 cup(s) honey or pure maple syrup (can reduce amount or replace with stevia or truvia)
1/2 cup(s) cup butter, melted (can sub 1/4 cup of mashed bananas or applesauce for replacing the butter)
3 teaspoon(s) vanilla extract
1 teaspoon(s) almond extract
3 1/2 cup(s) old fashioned rolled oats
1/2 cup(s) flaked coconut, sweetened or unsweetened
1/2 cup(s) chopped roasted and salted pecans (can sub sesame or sunflower seeds, or any other kinds of nuts)
1/2 cup(s) dried cherries (can sub raisins, craisins, chopped dates, currants, dried cranberries or any other dried fruits)
1/2 cup(s) mini semi-sweet chocolate chips (can sub carob, bittersweet, or milk chocolate chips)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl stir together the peanut butter, the melted butter, the brown sugar, the honey or syrup and the vanilla and almond extracts until smooth.
  • Add all the other ingredients. Stir well.
  • Press the mixture into 13 x 9 inch greased pan and bake for approximately 20-25 minutes, or just until they lightly browned around the edges.
  • While still warm score bars, but let cool completely on wire rack before removing bars to a serving platter or storage container.
  • Store any leftover bar in the refrigerator as they keep best that way.
  • Recipe Note: You can individually wrap each bar for a quick on-the-go healthy breakfast bar. You can freeze them for long-term storage that way too.

1 cup desiccated coconut
1 cup rolled oats
1 cup unsalted cashews or 1 cup peanuts
1 cup sunflower seeds
1/2 cup sesame seeds
1/2 cup pumpkin seeds
3/4 cup milo drinking chocolate or 3/4 cup chocolate chips
1/2 cup honey
1/4 cup raw sugar
125 g unsalted butter

Steps:

  • Pre heat oven 180'C. line a 27cm X 18cm baking tin with greaseproof baking paper.
  • Combine the first 7 ingredients into a large bowl.
  • Place honey, raw sugar and butter into a small saucepan. Bring to the boil, stirring, Simmer for 5 minutes. Then add to dry ingredients, mix well.
  • Press the mixture evenly into baking tin.
  • Bake in preheated oven for 18-20 minutes until the top is golden brown.
  • Cool and cut into bars. store in an airtight.
