MORNING MAPLE MUFFINS
We've got a breakfast muffin recipe that's perfect for National Maple Syrup Day--or anytime you just want that sweet taste of mapley-goodness! Our streusel-topped muffins are fluffy, yummy, and perfect to serve any day, or for your favorite special occasion--like Christmas! When the family is visiting, and the fire is going, these syrupy muffins will bring a bit of warm and cozy to the breakfast table.

Steps:
- Preheat oven to 350 degrees F. Line 16 muffin cups with paper liners.
- In a large bowl, combine the 2 cups flour, 1/2 cup brown sugar, baking powder, and salt; mix well. In a medium bowl, whisk the melted butter, milk, syrup, egg, and vanilla. Add milk mixture to dry ingredients and mix just until combined. Do not over mix. Spoon batter evenly into muffin cup liners.
- In a small bowl, combine Streusel Topping ingredients; mix until crumbly. Sprinkle evenly over batter.
- Bake 18 to 22 minutes or until toothpick comes out clean. Let cool slightly, remove from pan, and let cool completely on a wire rack.

Maple combines with a subtle touch of cinnamon and nuts to give these muffins the flavor of a hearty pancake breakfast. But you don't have to sit down to enjoy them. - Preheat oven to 400°. In a large bowl, combine flour, brown sugar, baking powder and salt. In another bowl, combine milk, butter, syrup, sour cream, egg and vanilla. Stir into dry ingredients just until moistened., Fill greased or paper-lined muffin cups two-thirds full. For topping, combine flour, sugar, nuts and cinnamon; cut in butter until crumbly. Sprinkle over batter. , Bake 16-20 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pans to wire racks. Serve warm. Freeze option: Freeze cooled muffins in freezer containers. To use, thaw at room temperature or, if desired, microwave each muffin on high for 20-30 seconds or until heated through.

- Preheat the oven to 350 degrees F and arrange two racks evenly spaced in the oven. Line two muffin pans with paper muffin cups.
- In a large bowl, whisk together the eggs, oil, and vanilla. Add the carrots, apple, pineapple, pecans, coconut, and raisins and stir together. In a medium bowl, sift together the flour, sugar, cinnamon, baking soda, and salt. Add the dry ingredients to the wet ingredients and stir just until combined. Scoop the batter with a standard (2 1/4-inch) ice cream scoop (I use rounded scoops of batter) into the prepared muffin cups. Bake for 30 to 35 minutes, until a toothpick comes out clean. Place the pans on a baking rack to cool and serve the muffins warm or at room temperature.
MONKEY BREAD MUFFINS
Easy refrigerated biscuit dough monkey bread cooked in muffin pans. My son who calls these 'monkey sins' loves to be in charge of shaking the biscuit pieces with the spiced sugar. I love that I can make a few of these at a time and eat them warm without waiting for a large enough crowd to justify a tube pan full.

- Preheat an oven to 375 degrees F (190 degrees C). Butter 6 muffin cups or line with paper muffin liners.
- Combine the apple pie spice and white sugar in a small bowl; roll the biscuit pieces in the mixture to coat. Divide the coated pieces between the prepared muffin cups.
- Combine the brown sugar, butter, and water in a small saucepan over medium heat; bring to a boil, stirring continuously. Allow the mixture to boil until the sugar is completely dissolved, 2 to 3 minutes. Spoon the mixture over the biscuit pieces.

- Preheat oven to 375 degrees F (190 degrees C). Line muffin pan with paper baking cups.
- Sift the flour, baking powder, and salt together and set aside.
- Cream the butter and sugar together until light and fluffy. Stir in the maple syrup and the eggs and beat until well blended. Add the flour mixture alternately with the milk and beat until well blended. Stir in the walnuts. Spoon the batter into the muffin tins filling each about 3/4 full.

- For maple butter:
- Using electric mixer, beat butter in medium bowl until creamy. Gradually beat in maple syrup until well blended and smooth. DO AHEAD Can be made 1 week ahead. Cover and refrigerate.
- For muffins:
- Preheat oven to 375°F. Butter 12 regular (1/3-cup) muffin cups. Sift cornmeal, flour, sugar, baking powder, and salt into medium bowl. Whisk buttermilk and egg in another medium bowl; whisk in melted butter. Add buttermilk mixture to dry ingredients; stir just until incorporated (do not overmix). Divide batter equally among prepared muffin cups. Bake muffins until tester inserted into center comes out clean, about 15 minutes (muffins will be pale). Cool on rack 10 minutes. Serve with maple butter.
