MORNING SLIDERS MAKE-AHEAD BREAKFAST SANDWICHES



Morning Sliders Make-Ahead Breakfast Sandwiches image

Filling bite-size breakfast sandwiches made with patty sausage, sweet potato, mini omelettes, and goat cheese

non-stick cooking spray
6 eggs
sea salt (to taste)
black pepper (to taste)
garlic powder (to taste)
crushed red pepper (to taste)
1 1/2 cup baby spinach
3 baby bella mushrooms (sliced)
1 medium-sized sweet potato ((about 6 inches long))
olive oil
cinnamon (to taste)
1 package Sister Schubert's® Dinner Yeast Rolls 10 Count
10 fully cooked sausage patties
4 ounces goat cheese

Steps:

  • Preheat oven to 350 degrees. Spray a baking sheet and a 12-count muffin tin with non-stick spray then set aside.
  • In a bowl, whisk eggs together until mixture is uniform and fluffy (about 2 minutes). Season with sea salt, black pepper, crushed red pepper, and garlic powder to taste then stir in baby spinach and sliced mushrooms.
  • Divide egg mixture evenly between 10 cavities of the prepared muffin tin.
  • Slice sweet potato into 10 rounds, each about 1/3-inch thick. Place on prepared baking sheet, drizzle with olive oil, and season with sea salt, black pepper, and cinnamon to taste. Flip and rub sweet potato to coat all sides with oil and seasoning.
  • Place both pans into oven and bake for 20 minutes or until sweet potato rounds are fork tender and slightly golden on top. Tops of eggs should be firm with a slight spring when pressed.
  • Meanwhile, place Sister Schubert's® Dinner Yeast Rolls and sausage patties on another baking sheet. Bake for 10 minutes.
  • To assemble breakfast sliders, cut each Sister Schubert's® Dinner Yeast Roll in half horizontally and spread a bit of goat cheese (about one tablespoon) on each bottom half. Then add sausage patties, eggs, and sweet potato rounds. Finish with top halves of Sister Schubert's® Dinner Yeast Rolls.

1/4 cup 2% milk
2 green onions, thinly sliced
1/4 teaspoon pepper
8 tablespoons spreadable chive and onion cream cheese
8 miniature bagels, split
8 slices cheddar cheese, halved
8 slices Canadian bacon
8 cooked bacon strips, halved
GLAZE:
2 tablespoons butter, melted
1-1/2 teaspoons maple syrup
1/8 teaspoon garlic powder
2 tablespoons everything seasoning blend

Steps:

  • Preheat oven to 375°. Heat a large nonstick skillet over medium heat. In a large bowl, whisk eggs, milk, green onions and pepper until blended; pour into skillet. Cook and stir until eggs are thickened and no liquid egg remains; remove from heat., Spread cream cheese over bagel bottoms; place in a greased 13x9-in. baking dish. Layer each with a half-slice of cheese and Canadian bacon. Spoon scrambled eggs over top. Layer with remaining halved cheese slices, cooked bacon and bagel tops. Stir together butter, maple syrup and garlic powder; brush over bagel tops. Sprinkle with everything seasoning blend., Bake until tops are golden brown and cheese is melted, 12-15 minutes.

12 eggs
salt and ground black pepper to taste
2 tablespoons butter
1 (12 count) package Hawaiian bread rolls (such as King's®)
18 slices provolone cheese, or as needed
12 slices deli ham, or as needed
¼ cup butter
1 ½ tablespoons brown sugar
1 tablespoon prepared yellow mustard

Steps:

  • Whisk eggs, salt, and pepper together in a bowl until frothy. Melt 2 tablespoons butter in a large skillet over medium-low heat. Pour eggs into skillet; cook and stir with spatula until set, 3 to 6 minutes. Remove from heat.
  • Cut rolls in half horizontally; lay bottoms in a single layer in a 9x13-inch baking dish. Add a layer of provolone cheese, then scrambled eggs, then a layer of ham, then provolone cheese, then ham, then provolone cheese again. Cover with roll tops. Cut through ham and provolone cheese layers to make individual sandwiches.
  • Melt 1/4 cup butter, brown sugar, and mustard together in a small saucepan over medium heat; cook and stir until sugar is dissolved. Spread mixture over roll tops. Cover baking dish with aluminum foil and let stand, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Remove aluminum foil from baking dish.
  • Bake in preheated oven until tops are golden brown and cheese has melted, 15 to 20 minutes.
