CZECH ROAST PORK



Czech Roast Pork image

Roast pork (veprova pecene) is a traditional Czech meal usually served on Sundays. Be sure to serve it with Knedliky - Czech Dumpling with Sauerkraut (Zeli) from this site, and a nice Czech pilsner. Don't skip the caraway or the beer. They make this dish what it is!

2 tablespoons vegetable oil
1 tablespoon prepared mustard
2 tablespoons caraway seeds
1 tablespoon garlic powder
1 tablespoon salt
2 teaspoons ground black pepper
5 pounds pork shoulder blade roast
3 medium onions, chopped
½ cup beer
1 tablespoon cornstarch
2 tablespoons butter

Steps:

  • In a bowl, form a paste using the vegetable oil, mustard, caraway seeds, garlic powder, salt, and pepper. Rub over the pork roast, and let sit about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange the onions in the bottom of a large roasting pan. Pour in the beer. Place the roast, fat side down, on top of the onions. Cover the pan with foil.
  • Roast 1 hour in the preheated oven. Remove foil, turn roast, and score the fat. Continue roasting 2 1/2 hours, or to a minimum internal temperature of 145 degrees F (63 degrees C). Remove from heat, reserving pan juices, and let sit about 20 minutes before slicing thinly.
  • In a saucepan, bring the reserved pan juices to a boil. Mix in the butter and cornstarch to thicken, reduce heat, and simmer 5 to 10 minutes. Serve with the sliced pork.

2 teaspoons garlic powder
2 teaspoons salt
2 teaspoons pepper
1-1/2 teaspoons ground mustard
1-1/2 teaspoons onion powder
1-1/2 teaspoons paprika
1 teaspoon rubbed sage
1/4 to 1/2 teaspoon cayenne pepper
1 boneless pork loin roast (3 to 3-1/2 pounds)

Steps:

  • Combine the first eight ingredients; rub over entire roast. Cover and refrigerate overnight. Place roast on a greased rack in a roasting pan. , Bake, uncovered, at 350° for 2-1/4 to 2-3/4 hours or until a thermometer reads 160°. Let stand 10 minutes before slicing.

My husband loves this, the Italian dressing gives it a great flavor, it's easy to make, and with the potatoes, carrots, and green beans, you have a great side dish as well.

1 (8 ounce) bottle Italian salad dressing
1 (4 lb) boneless chuck roast
1 (10 ounce) can beef broth, undiluted
1 cup water
4 -6 carrots, cut into 1 1/2 inch pieces
6 potatoes, quartered
1 (10 ounce) package frozen cut green beans
all-purpose flour

Steps:

  • Pour dressing over roast in a shallow dish.
  • Cover and refrigerate for 8 hours, turning occasionally.
  • Remove roast from the marinade, reserving marinade.
  • Place roast in Dutch oven, add beef broth and water.
  • Cover and simmer for 2 hours.
  • Add the carrots, potatoes and cook for 5 minutes.
  • Add the green beans and reserved marinade and cook for a further 20-25 minutes.
  • Remove roast and vegetables and put onto a serving platter, keep warm.
  • Measure the liquid in the Dutch oven, then return this to the Dutch oven.
  • Combine 1 tablespoon flour for every 1 cup of liquid, and 2 tablespoons water, stirring well.
  • Using a wire whisk, stir the flour mixture into liquid in the Dutch oven.
  • Cook over medium heat, stirring constantly, until thick and bubbly.
  • Serve gravy with roast and vegetables.

Yes, the title says it all! This recipe was created by mistake. While using another recipe as a guide, I made the mistake of using cocktail sauce instead of chili sauce. Well, this was the best darn mistake I have ever made. These pork chops had the most wonderful zip to them! Mistakes like this should happen more often!

1 cup soy sauce
¾ cup water
½ cup brown sugar
1 tablespoon honey
1 dash lemon juice
4 pork chops
1 cup ketchup
½ cup cocktail sauce
¼ cup brown sugar
2 tablespoons water
1 ½ teaspoons ground dry mustard

Steps:

  • In a saucepan over medium heat, mix the soy sauce, water, brown sugar, honey, and lemon juice. Bring to a boil, remove from heat, and cool.
  • Place the pork chops in a large, resealable plastic bag. Pour the soy sauce mixture into the bag, seal, and marinate in the refrigerator for 3 to 6 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Drain the pork chops, and discard remaining marinade. Arrange the pork chops in a baking dish, cover, and bake 30 minutes in the preheated oven.
  • In a bowl, blend the ketchup, cocktail sauce, brown sugar, water, and mustard. Pour over the pork chops, and continue baking 30 minutes, to an internal temperature of 145 degrees F (63 degrees C).

This is out of a "Slow Cooker" recipe book that you see when you are standing in line at the check out lane at the grocery store. I double the sauce.

1 (16 ounce) can whole berry cranberry sauce
1/2 cup quartered dried apricot
1/2 teaspoon granted orange zest
1/4 cup fresh orange juice
1 large shallot, chopped
2 teaspoons cider vinegar
1 teaspoon mustard powder
1 teaspoon salt
1 teaspoon fresh ginger, grated
2 lbs boneless pork loin roast, fat-trimmed

Steps:

  • In small bowl, mix cranberry sauce, apricots, orange zest and juice, shallot, vinegar, mustard, salt and ginger, then add to slow cooker. Add pork, and spoon some of the cranberry sauce on top.
  • Cover and cook on low 7-9 hours or until pork is tender.
  • Spoon off fat from top of cranberry mixture in slow cooker, then place pork on a cutting board. Slice into thick slices and serve topped with sauce.

1/4 cup packed brown sugar
1 tablespoon cornstarch

1/4 cup cider vinegar
1/4 cup dark corn syrup

Steps:

  • Preheat oven to 350°. Place roast on a rack in a shallow roasting pan, fat side up. Roast 1 hour., Meanwhile, in a large saucepan, combine brown sugar, cornstarch, salt and pepper. Gradually whisk in water until smooth. Stir in tomato sauce, vinegar and corn syrup. Bring to a boil over medium-high heat.
