One Pot Moroccan Chicken Stew image

Paleo Moroccan Chicken Stew - Moroccan spiced veggies with shredded chicken and chopped dates | Dairy Free + Paleo

Number Of Ingredients 16

4 chicken breasts, boneless, skinless
salt & pepper, for seasoning the chicken breasts
2 tablespoons olive oil
2 white onions, slice one onion and roughly chop the second onion
1 28 ounce can crushed tomatoes, preferably fire roasted
1 inch fresh ginger (about 1 tablespoon), chopped
3 cloves garlic
1 teaspoon turmeric powder
1 tablespoon cumin powder
1 tablespoon coriander powder
2 teaspoon cinnamon powder
3 medium carrots (about 6 inches long), peeled and diced
2 1/2 cups chicken stock (600 ml), aim for a lower sodium stock
2 tablespoons brown sugar or use coconut sugar for paleo
1 tablespoon red wine vinegar
1 cup medjool dates (100 grams), seeds removed and chopped into small pieces

Steps:

  • Heat 1 tablespoon of olive oil in a large cooking pot on a medium high heat. Season the chicken breasts with salt and pepper. When the oil is simmering add the chicken to the bottom of the pot and brown the breasts, aa couple minutes of cooking on each side. The chicken doesn't need to be fully cooked through at this point since you'll be cooking it more later.
  • Once browned, remove the chicken from the pot and place on a paper towel lined plate. Turn off the heat for a few minutes as you make the puree in the next step.
  • Place the roughly chopped onion, tomatoes, ginger and garlic in a blender and blend into a puree. Set aside.
  • Add the remaining 1 tablespoon olive oil in the same pot you were using before and bring to a medium high heat. When the oil starts to simmer add the sliced onions and fry until softened, about 5 minutes.
  • Add the spices ( turmeric, cumin, coriander cinnamon) and continue to fry the onions another minute before adding the puree mixture. Keep sautéing the onions another 3 minutes. Add the blended onion/tomato mixture to the pot.
  • Return the chicken to the dish and add the carrots, chicken stock, sugar and vinegar. Bring to a simmer, cover the pot with a fitted lid and let stew for at least 30 minutes.
  • Remove the chicken from the pot. Add the chopped dates and stir to mix in well. On a cutting board or plate use a couple of forks to shred the chicken into bite sized pieces. Stir the chicken back in. Taste and season with salt as needed.
  • Serve over rice or cauliflower rice (if you want a paleo meal) and enjoy!

8 bone-in chicken thighs (about 2 1/2 pounds total)
Coarse salt and freshly ground pepper
2 tablespoons olive oil (optional)
2 pounds carrots, cut into 1 1/2-inch lengths
1 garlic clove, thinly sliced
1 cinnamon stick
1/2 teaspoon ground cumin
1/4 cup golden raisins
1/2 cup fresh cilantro leaves
1/4 cup sliced almonds, toasted (optional)

Steps:

  • Season chicken with salt and pepper. In a 5-to 6-quart slow cooker with a browning option, brown chicken in oil; transfer to a plate. (If your slow cooker doesn't have a browning option, just remove skin from the chicken.) Add carrots, garlic, cinnamon stick, and cumin to pot. Place chicken on top. Cover and cook on high until chicken is cooked through, 4 hours (or 8 hours on low), adding raisins 15 minutes before done.
  • Using a slotted spoon, transfer chicken and carrots to a serving dish (remove cinnamon stick); top with cilantro and almonds. Season cooking liquid with salt and pepper. Spoon over chicken before serving.

1 ½ tablespoons olive oil
2 stalks celery, diced
½ cup chopped onion
½ cup chopped green bell pepper
1 clove garlic, chopped
2 (14 ounce) cans vegetable broth
1 (14.5 ounce) can stewed tomatoes
2 carrots, chopped
4 potatoes, diced
12 pearl onions
½ teaspoon dried thyme leaves
salt and ground black pepper to taste
2 cooked chicken breasts, diced
¾ teaspoon red pepper flakes, or more to taste
2 tablespoons red wine vinegar

Steps:

  • Heat olive oil in a stockpot over medium heat. Cook and stir celery, chopped onion, and bell pepper in hot oil until softened, about 5 minutes. Stir garlic into the celery mixture; cook and stir until fragrant, about 1 minute more.
  • Pour vegetable broth into the pot; add tomatoes, carrots, potatoes, pearl onions, thyme, salt, and pepper. Bring the broth to a boil, reduce heat to medium-low, and simmer until the vegetables are tender, about 20 minutes.
  • Stir chicken and red pepper flakes to the pot; cook until the chicken is hot, 5 to 10 minutes. Stir vinegar into the soup just before serving.

1 lb boneless skinless chicken breast (cubed)
2 teaspoons salt
1 onion, chopped
4 garlic cloves, chopped
2 carrots, sliced
2 stalks celery, sliced
1 tablespoon gingerroot, minced fresh
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon ground cayenne pepper
1/2 teaspoon ground turmeric
1 1/2 cups chicken broth
2 tomatoes, chopped
1 cup canned chick-peas, drained
1 zucchini, sliced
1 1/2 tablespoons lemon juice

Steps:

  • Season chicken with salt.
  • Brown in a large saucepan over medium heat until almost cooked through.
  • Remove chicken from pan and set aside.
  • Saute onion, garlic, carrots and celery in same pan.
  • When tender, stir in ginger, paprika, cumin, oregano, cayenne pepper and turmeric.
  • Stir fry for about 1 minute.
  • Mix in broth and tomatoes.
  • Return chicken to pan, reduce heat to low and simmer for about 10 minutes.
  • Add chickpeas and zucchini to pan and bring to simmering once again.
  • Cover pan and cook for about 15 minutes, or until zucchini is cooked through and tender. Stir in lemon juice and serve.

1/4 cup tomato paste
1 teaspoon ground cumin
1 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)

1/2 cup raisins
1 medium onion, sliced thin
1 tablespoon minced fresh garlic
2 lbs butternut squash, peeled, seeded, and cut into 1 1/2 inch chunks (5 cups)
2 cups frozen green peas
1 (16 ounce) can chickpeas, drained and rinsed
4 skinless chicken thighs, skin and visible fat removed (about 1 1/3 pounds)

Steps:

  • In a 4 to 5 quart pot, whisk together the chicken broth, tomato paste, cumin, salt, red pepper, and cinnamon until blended.
  • Stir in the raisins, onion, garlic, squash, peas, chick-peas, and chicken.
  • Bring to a gentle boil over medium-high heat.
  • Reduce the heat to low.
  • Cover and simmer for 25 to 30 minutes, or until the squash is tender and the chicken is opaque near the bone and the juices run clear when the meat is pierced with a sharp knife.

2 lbs skinless chicken pieces
1/2 cup raisins
1/2 cup dried apricot, coarsely chopped

2 tablespoons lemon juice

8 ounces peeled baby carrots (half 16-ounce bag)
2 tablespoons all-purpose flour
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground red pepper (cayenne)
1/4 teaspoon fresh coarse ground black pepper
1/8 teaspoon ground cinnamon
3/4 teaspoon salt
1 tablespoon vegetable oil
8 medium bone-in chicken thighs (about 2 pounds, skin and fat removed)
1 medium onion, sliced
2 medium zucchini, each cut lengthwise in half, then crosswise into 1/4-inch thick slices (8 ounces each)
1 (28 ounce) can tomatoes in puree
1 (15 -19 ounce) can garbanzo beans, rinsed and drained
1 (10 ounce) package couscous (Moroccan pasta)
1 cup packed fresh cilantro leaves, chopped

Steps:

  • In 10-inch skillet, heat 1 inch water to boiling over high heat. Add carrots; heat to boiling. Reduce heat to low; cover and simmer until carrots are just tender-crisp, about 5 minutes. Drain carrots; set aside.
  • Meanwhile, in large ziptight plastic bag, combine flour, cumin, coriander, ground red pepper, black pepper, cinnamon, and 1/2 teaspoon salt. Add chicken and toss until evenly coated.
  • In a nonstick 12-inch skillet, heat oil over medium-high heat until hot. Add chicke and cook until evenly browned, about 5 minutes per side. With tongs, transfer chicken to large bowl.
  • Reduce heat to medium. Add onion, zucchini, and remaining 1/4 teaspoon salt, and cook, stirring occasionally, until onion is lightly browned, 8 to 10 minutes. Add carrots and 1/4 cup water, and cook 5 minutes longer.
  • To vegetables in skillet, add tomatoes with puree, garbanzo beans, and chicken; heat to boiling over medium-high heat, stirring and breaking up tomatoes with side of spoon. Reduce heat to medium-low; cover and simmer until juices run clear when thickest part of thigh is pierced with knife, about 10 minutes.
  • Meanwhile, prepare couscous as label directs.
  • To serve, spoon couscous onto large platter; top with chicken mixture. Sprinkle with chopped cilantro.
