You can make the meatballs in advance and freeze them to save yourself some time. This is from Cooking Light.

1/2 cup plain breadcrumbs
1/4 cup dried currant
1/4 cup finely chopped onion
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon ground cinnamon
1 1/2 lbs lean ground beef
1 large egg white
cooking spray
1/4 cup tomato paste
1 teaspoon fennel seed
1 teaspoon grated orange rind (use rasp)
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground red pepper
1 (28 ounce) can chopped tomatoes

Steps:

  • Combine the first 9 ingredients in a large bowl. Shape into 30 meatballs.
  • Heat a large non-stick skillet over medium high heat. Coat the pan with cooking spray. Add half of the meatballs to the pan, cook 3 minutes or until browned, stirring frequently.
  • Place browned meatballs in a slow cooker, and brown the remaining meatballs.
  • Combine the tomato paste and next 7 ingredients. Add to the slow cooker with the remaining meatballs. Cover and cook on LOW for 6 hours.
  • Serve over couscous if desired.

1 1/2 cups fresh cilantro
1 bunch scallions, roughly chopped
1 pound lean ground beef
1 large egg, lightly beaten
2 tablespoons harissa
1 1/2 teaspoons ground cumin, plus more for topping
Kosher salt
1 tablespoon extra-virgin olive oil
4 carrots, cut into 1-inch pieces
4 cups low-sodium chicken broth
4 cups baby spinach
1/2 cup whole-wheat couscous

Steps:

  • Pulse 1 cup cilantro with the scallions in a mini food processor to make a coarse puree. Transfer half of the mixture to a large bowl and add the ground beef, egg, 1 tablespoon harissa, 1/2 teaspoon cumin and 1/2 teaspoon salt. Mix with your hands until just combined. Form into twenty 1-inch meatballs.
  • Heat the olive oil in a large pot over medium heat. Add the carrots and cook, stirring, until they start browning, 4 to 5 minutes. Stir in the remaining cilantro puree, 1 tablespoon harissa and 1 teaspoon cumin; cook until sizzling, about 1 minute. Stir in the chicken broth and 2 cups water; bring to a simmer and cook 2 minutes. Gently drop in the meatballs and simmer until almost cooked through, 7 to 8 minutes.
  • Add the spinach and couscous to the soup and cook until the couscous is tender, about 5 minutes. Stir in the remaining 1/2 cup cilantro and season with salt. Sprinkle with more cumin before serving.

1 gallon tomato sauce
1/2 cup chopped fresh cilantro
1/4 cup ground cumin
1/4 cup harissa
3 tablespoons smoked paprika
1 tablespoon ground cinnamon
1 gallon bread cubes, day-old, no crust
5 cups minced yellow onions
3/4 cup minced garlic
5 pounds ground chuck
5 pounds ground pork
3/4 cup finely chopped fresh cilantro
3/4 cup finely chopped fresh parsley
1/4 cup cumin seeds, ground
1/4 cup smoked paprika
1/4 cup black peppercorns, ground
1/4 cup salt
4 teaspoons ancho chile powder
1 tablespoon ground ginger
10 eggs, whipped before adding
Vegetable oil

Steps:

  • For the sauce: Mix together the tomato sauce, cilantro, cumin, harissa, paprika and cinnamon.
  • For the meatballs: Preheat the oven to 500 degrees F. Soak the bread in just enough water to cover for 1 minute. Pour into a colander and let sit for 10 minutes. Squeeze all the excess water out.
  • Meanwhile, gently cook the onions and garlic until translucent. Let cool, then transfer to a bowl. Add the chuck, pork, cilantro, parsley, cumin, paprika, pepper, salt, chile powder, ginger and eggs and mix thoroughly.
  • Portion and shape the mixture into 3 1/2-ounce balls. Heat oil over medium-high heat in a large saute pan and brown the meatballs on all sides.
  • Transfer to a large baking dish, cover with the meatball sauce and wrap with aluminum foil. Braise the meatballs in the oven until cooked through but not dry, 20 minutes.
  • Let cool slightly, then serve.

This looks like a long ingredient list, but most of these ingredients are staples in our house. If following the WW flex plan this is about 9 points/serving. 1 onion, chopped
1/3 cup panko breadcrumbs

2 cinnamon sticks
1 teaspoon turmeric
1/8 teaspoon saffron thread, crumbled (I skipped the saffron)
1 (14 1/2 ounce) can beef broth
1 (14 1/2 ounce) can tomatoes, diced
1/4 cup golden raisin
2 cups carrots, sliced into 1/2-inch pieces cut on the diagonal
1/4 cup cilantro, chopped
1 (5 ounce) package spinach leaves

Steps:

  • To make the meatballs: line a cookie sheet with plastic wrap. Mix the meatball ingredients in a large bowl. Using moistened hands and about 2 tablespoons of the mixture make 1 1/2 inch meatballs. Arrange meatballs on the cookie sheet. I prepared these ahead and put in the fridge.
  • To make the stew: heat oil in a large ovenproof pot over medium heat. Stir in onions and saute them for 15 minutes.
  • Stir in garlic, cinnamon, turmeric and saffron (if using) and cook stirring for 2 minutes.
  • Stir in broth, tomatoes and raisins.
  • Preheat oven to 350 degrees F.
  • Bring stew to a simmer and stir in carrots and meatballs. Sprinkle with 1/4 cup cilantro. Cover pot and place in oven.
  • Bake for 35-40 minutes.
  • Sprinkle with spinach and cover and bake another 5 minutes.
  • Stir to mix and remove cinnamon sticks.

  • Preheat the oven to 450°F. Line a baking sheet with foil and place a wire rack on it. Spray the rack with non-stick spray to prevent meatballs from sticking.
  • In a large bowl combine the eggs, garlic, lemon zest, spice mix, raisins and the mint. Using a fork or your hands, mix in the lamb and the bread crumbs until well combined. With a tablespoon form mixture into balls about 1 inches in diameter. There should be about 20 meatballs. Place the meatballs on the wire rack over the foil lined baking sheet and brush the top of the meatballs with oil. The wire rack will ensure even cooking of the meatballs. Transfer the meatballs to the middle of the oven. Bake for 15-20 minutes, remove and transfer to a serving bowl.
  • Add the olive oil and garlic to skillet over medium-low heat and mash the garlic with a fork while it is cooking, about 2 minutes. Add the tomato sauce, wine and chicken stock. Bring the sauce to a boil over medium high heat and stir in the ginger, spice mix, brown sugar, cinnamon and cumin. Reduce the heat to low and simmer for 15 minutes. Spoon the hot sauce over the hot meatballs and serve. The remaining sauce may be served in a side dish for dipping with naan bread
