MIDNIGHT MOON COOKIES

Midnight Moon Cookies image

Inspired by an Edgar Allan Poe story in which a demonic cat is "graven in bas-relief upon the white surface" of a wall, these cakey black-and-white cookies feature the chocolate silhouette of a fur-raised feline set against a full moon of glossy icing.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Yield Makes 10 cookies

Number Of Ingredients 14

Vegetable oil, cooking spray
1 1/4 cups plus 2 tablespoons all-purpose flour
1 cup plus 2 tablespoons cake flour (not self-rising)
3/4 teaspoon baking powder
3/4 teaspoon coarse salt
4 ounces (1 stick) unsalted butter, softened
3/4 cup plus 2 tablespoons granulated sugar
2 large eggs, room temperature
1/2 teaspoon pure vanilla extract
1/2 cup whole milk
8 ounces bittersweet chocolate, melted
1 pound confectioners' sugar (4 1/2 cups)
1/3 cup boiling water, plus more as needed
1 ounce (2 tablespoons) unsalted butter, softened

Steps:

  • Make the cookies: Preheat oven to 350 degrees. Coat 2 baking sheets with cooking spray, line with parchment, and coat parchment. Sift flours, baking powder, and salt into a medium bowl.
  • Beat butter and granulated sugar with a mixer on high speed until pale and fluffy, about 3 minutes. Reduce speed to medium, and add eggs, 1 at a time, beating well after each addition, then add vanilla. Reduce speed to low, and beat in flour mixture in 3 additions, alternating with milk, starting and ending with flour.
  • Transfer batter to a pastry bag fitted with a 1/2-inch round tip. Pipe batter into ten 1/2-inch-thick, 3 1/2-inch-wide rounds, spacing them 1 1/2 inches apart on baking sheets. Bake cookies until firm but not browned on bottoms, 9 to 10 minutes. Transfer parchment with cookies to wire racks, and let cool.
  • Make the cats and icing: Place melted chocolate in a pastry bag fitted with the smallest round tip. Tape 10 cat templates onto a baking sheet, then tape waxed paper over templates to baking sheet. Pipe chocolate on center and legs of 1 cat. Using a toothpick, spread chocolate to edges for fur. Repeat with remaining cats and chocolate. Freeze until hard, about 10 minutes.
  • Meanwhile, sift confectioners' sugar into a large bowl. Add boiling water in a slow, steady stream, whisking constantly until mixture is smooth. Add butter, and whisk until smooth, adding more water if needed to thin.
  • Remove cats from freezer, and cut waxed paper around each cat. Return to freezer. Spread a thin layer of icing on flat side of 1 cookie. Peel waxed paper from 1 cat. Using a small offset spatula, flip a cat, smooth side up, then center on icing. Repeat with remaining cookies, icing, and cats.

HALF-MOON COOKIES

Half-Moon Cookies image

This recipe makes 21 large or 34 small cookies, depending on the amount of dough used. Stir the leftover berry puree (used to tint the icing) into your morning yogurt or oatmeal.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Time 3h5m

Yield Makes 21 large or 34 small

Number Of Ingredients 14

3/4 cup all-purpose flour
1/2 cup whole-wheat flour
1/2 teaspoon baking soda
3/4 teaspoon coarse salt
6 tablespoons unsalted butter, room temperature
1/2 cup plus 1 tablespoon granulated sugar
1 large egg
1/2 teaspoon pure vanilla extract
1/3 cup buttermilk
3/4 cup fresh berries, such as raspberries, blueberries, or blackberries
2 cups confectioners' sugar
1 tablespoon plus 1 teaspoon honey
1 teaspoon fresh lemon juice
1 1/2 teaspoons unsweetened cocoa powder

Steps:

  • Preheat oven to 350 degrees. Whisk together flours, baking soda, and salt in a bowl. In another bowl, beat butter on medium speed until smooth, about 2 minutes. Add 1/2 cup granulated sugar and beat until light and fluffy, about 3 minutes. Beat in egg and vanilla. Add flour mixture in 3 batches, alternating with 2 additions of buttermilk, beating until just combined (do not overmix). Refrigerate dough until firm, about 1 hour.
  • Roll 1- or 1 1/2-tablespoon pieces of dough into balls; place 2 inches apart on parchment-lined baking sheets. Bake until bottoms turn golden, rotating sheets halfway through, about 10 minutes. Transfer cookies to wire racks; let cool completely. Cookies can be stored at room temperature up to 1 day.
  • Cook berries and remaining 1 tablespoon granulated sugar in a small saucepan over medium-high heat, stirring and crushing berries until soft and juices have been released. Pass mixture through a fine sieve into a bowl, pressing on solids to extract as much liquid as possible, and let cool completely.
  • Whisk together confectioners' sugar, honey, lemon juice, and 2 tablespoons water in a small bowl. Transfer half of icing to another bowl, and whisk in 1 teaspoon more water. Divide remaining portion in half again, and stir 1/2 teaspoon berry puree into one part, and cocoa powder and 3/4 teaspoon water into other. Spread white icing on half of each cookieâ??s flat side and fruit or chocolate icing on other half. Let set 30 minutes before serving.

One of these recipes was for crescent moon cookies, which had come to be known also as “shortbreads” in my family over the generations.

2011-09-14 These were quite good. I used a tablespoon of vanilla (because I love vanilla flavor and I always up the extract in recipes) and rolled the cookies in cinnamon sugar before baking, instead of rolling them in powdered sugar after they had baked. I would make them again. They were great with my morning coffee.
