8 ounces mozzarella cheese, sliced
¼ cup olive oil
¼ cup balsamic vinegar
¼ teaspoon salt
⅛ teaspoon ground black pepper
¼ cup minced fresh basil

Steps:

  • Place tomato slices, alternating with mozzarella slices, on a large serving platter.
  • Combine oil, balsamic vinegar, salt, and pepper in a jar with a tight-fitting lid; shake well. Drizzle over tomatoes and mozzarella; sprinkle with basil.

2 cups fresh raspberries
2 cups fresh or frozen (thawed) gooseberries
1/2 cup granulated sugar
1 teaspoon cornstarch
1 teaspoon pure vanilla extract
Pinch kosher salt
3/4 cup unbleached all-purpose flour
1/3 cup packed dark-brown sugar
1/2 teaspoon kosher salt
1/2 teaspoon freshly grated nutmeg
6 tablespoons unsalted butter, cut into pieces, room temperature
Vanilla ice cream, for serving (optional)

Steps:

  • Filling: Preheat oven to 375 degrees with rack in upper third.
  • In a medium bowl, toss both berries with granulated sugar, cornstarch, vanilla, and salt.
  • Topping: In a separate bowl, whisk together flour, brown sugar, salt, and nutmeg. Using a fork, stir in butter until incorporated. Topping can be refrigerated in an airtight container up to 1 week.
  • Divide berry mixture evenly among eight 3-ounce baking dishes (about 3 1/2 by 1 1/4 inches each). Sprinkle each with 3 tablespoons topping. Place dishes on a parchment-lined baking sheet.
  • Bake until fruit is bubbling all over and topping is golden brown, about 35 minutes. Transfer sheet to a wire rack; let cool completely. Serve with ice cream, if desired.

Mozzarella, Raspberry and Brown Sugar Panini image

8 (1/2-inch thick) slices bakery-style white bread
1/4 cup extra-virgin olive oil
1/2 cup raspberry jam
2 teaspoons chopped fresh rosemary leaves
8 ounces (2 balls) fresh mozzarella, drained and patted dry
Kosher salt, optional
2 tablespoons light brown sugar

Steps:

  • Preheat the panini press.
  • Using a pastry brush, brush the bread on both sides with the oil. Spread 1 side of each slice of bread with the raspberry jam. Sprinkle the rosemary over the jam. Cut the mozzarella into 8 slices. Place 2 slices of cheese on 4 of the bread slices. Season the cheese with a pinch of salt, if using. Place the remaining slices of bread on top, jam-side down. Sprinkle the tops with the brown sugar. Press in the panini press for 3 to 5 minutes until the cheese has melted and the bread is golden and crispy.
  • Cut the panini in half and serve.
