ANGEL CAKE
Treat guests to this colourful angel cake with decorative fondant icing. It will go down well with a cuppa for afternoon tea

- Heat the oven to 190C/170C fan/gas 5. Butter a 25 x 20cm baking tin, and line the base with baking parchment. Stack a sheet of baking parchment over a sheet of foil, then fold in half so the parchment is facing out. Use this to divide the tin into three sections crosswise, each about 8cm wide.
- Melt the butter, remove from the heat and set aside. Put the sugar and eggs in a large heatproof bowl over a pan of just simmering water, making sure the bottom of the bowl doesn't touch the water. Beat using an electric whisk until really thick and pale, about 4-5 mins.
- Add a fifth of the mixture to the melted butter and mix to combine. Pour the butter mixture into the egg mixture, and carefully fold in along with the flour. Divide the mixture between three bowls. Leave one bowl of batter plain, then fold a drop each of pink food colouring and raspberry extract into the second bowl, and a drop each of yellow food colouring and lemon extract into the third bowl.
- Carefully pour one of the batters into each of the three sections in the prepared tin. Bake for 12-15 mins until cooked through, or a skewer inserted into the middle of the cakes comes out clean. Leave to cool slightly in the tin, then carefully transfer the three cakes to a wire rack and leave to cool completely.
- To make the buttercream, beat the butter, sugar, vanilla and milk together for 5 mins with an electric whisk until pale and creamy. To assemble the cake, put the plain sponge on a board and spread with half the buttercream. Top with the raspberry sponge, then spread with the remaining buttercream and top with the lemon sponge. Trim the sides so they're straight, even and neat.
- To make the fondant icing, sift the sugar into a bowl and mix with 1½-3 tbsp water until you have a thick, droppable icing. Transfer a quarter of the icing to a second bowl, and mix in a drop of pink food colouring. Transfer the pink icing to a piping bag.
- Spread the plain fondant icing over the top of the lemon sponge, making sure it doesn't drip down the sides. Pipe thin lines of pink icing on top across the width of the cake, space apart. Drag a cocktail stick through the lines lengthways to create a marbled effect. Leave to set slightly, then slice the cake into six even rectangles.

- Prepare your tin - if you're using a rectangle baking tin, use your greaseproof paper to divide the tin in to 3 even sections and grease with some butter.
- To make the cake mixture, add the eggs and the golden caster sugar in to a glass bowl and place over a pan of simmering water. Gently whisk the mixture until the sugar has fully dissolved and you read 43ºC on your sugar thermometer.
- Take the mixture off the heat and whisk until it is thick and produces that ribbon trail when the whisk is lifted. You want to make sure there is plenty of air in the mixture.
- In 3 separate bowls, divide the plain flour between them and in 3 more bowls do the same with the butter. In the first bowl of butter, stir in the vanilla extract.
- Divide your whisked egg mixture in to 3 new bowls. Sift 1 bowl of flour over the egg mixture and gently fold it in. Add 1 bowl of the butter and fold (you will need to do ths quickly but softly to stop the mixture from collapsing and ending up with a flat cake).
- Pour each mixture in to a section of the divided cake tin and bake in the oven for 12-15 minutes. You'll know when it's ready as the top has a slight spring to it when you gently press it.
- To make the buttercream, in a saucepan melt the caster sugar in 2-3 tbsp's of water over a very gentle heat.
- While the sugar is melting, whisk the egg white in a clean bowl (it must be clean!) until soft peaks. Once the sugar has completely dissolved, increase the heat to bring the mixture to a rapid boil.
- Remove from the heat and slowly pour the hot sugar syrup onto the egg whites, all the time whisking at full speed. You shoudl continue whisking until the buttercream has cooled to room temperature and is thick and glossy.

- For the génoise, fold the foiled parchment to divide the cake tin into three even sections (each measuring 20 x 10cm) with the parchment side facing upwards, and grease with melted butter.
- Tip the eggs and sugar into a bowl set over a pan of gently simmering water. Gently whisk until the sugar has dissolved and the mixture reaches 43°C/109°F on the sugar thermometer.
- Weigh the mixture in the bowl of a stand mixer, then record the weight. Attach the bowl to the mixer and, using the whisk attachment, whisk the mixture until it is thick and mousse-like, and leaves a ribbon trail when you lift the whisk.
- Meanwhile, divide the flour evenly between three small bowls. Do the same for the butter. Stir the vanilla into one bowl of butter. Stir the raspberry flavouring and a small drop of pink food colouring into the second bowl of butter, and the lemon zest and a small drop of yellow food colouring into the third.
- Divide the whisked egg mixture into three bowls. Working with one bowl of egg mixture, flour and butter at a time, sift the flour over the egg mixture and gently fold in.
- Repeat Step 5 with the remaining bowls of egg mixture, flour and butter to give three mixtures – vanilla, raspberry and lemon. Pour each into a section of the cake tin and bake for 12–15 minutes, until the tops spring back when pressed.
- For the Italian meringue buttercream, melt the sugar in 3 tablespoons of water very gently in a pan over a low heat. Meanwhile, whisk the egg white in the clean bowl of a stand mixer fitted with a whisk, to soft peaks.
- Remove the pan from the heat. With the whisk at full speed, slowly pour the hot syrup onto the egg whites in a thin stream. Continue whisking until the meringue is very thick and glossy and has cooled to room temperature.
- Gradually add the butter, whisking after each addition until the buttercream is smooth and thick. Chill until firm.
- To assemble, trim the sponges so they are identical in size and height. Spread half the buttercream over the vanilla sponge and top with the raspberry sponge.
