MRS BICE'S ASPARAGUS CASSEROLE
Mrs. Bice was a member of my grandparent's church when I was growing up. I remember this casserole from the funeral lunches the UMW would prepare for the family before or after the service. Mrs. Bice's original recipe calls for 3 cans of asparagus spears, but I prefer fresh or high quality frozen cooked. You need enough to cover the bottom of your pan completely. Asparagus lovers like me say "the more the better!" This was always served as a side dish, but I often make it as a meatless main dish.

Steps:
- Steam or cook asparagus as desired. I always leave the spears whole, but it may be easier for serving to cut them in half.
- Sprinkle 1 cup Ritz cracker crumbs in bottom of prepared 13"x9" casserole.
- Sprinkle 1 1/2 cups cheese over crumbs.
- Layer all asparagus over cheese.
- Sprinkle chopped eggs over asparagus.
- Prepare cream sauce:.
- Blend flour and butter over medium heat until it makes a paste.
- Add liquid, seasoning with salt and pepper to taste.
- Cook, stirring constantly, until bubbly and thick, adding more liquid as needed.
- Spread cream sauce over eggs.
- On top of sauce, sprinkle pimento, remainder of cheese, topping with remaining Ritz cracker crumbs.
- Bake at 350 about 40 minutes until bubbly and cheese is turning light brown.

MRS. TAWES' CRAB CASSEROLE
Mrs. Tawes was the wife of a Maryland governor, many years ago, and my parents lived in Annapolis, MD, where the Chesapeake Bay watermen brought FRESH crabs to be steamed, picked, and sold. This was a meal meant for when the boss was coming to dinner, or non-Marylanders, to be impressed. The egg yolk mixture gave the appearance of lovely yellow crab fat, which every steamed crab lover craved to find inside the shell. This recipe doubles easily, or more, for the dinner party group or hearty eaters. Do not re-heat in microwave.

Steps:
- Chop whites of eggs and add to crab meat. Handle gently so that crab lumps are not broken.
- Add salt and pepper.
- Mash egg yolks and set aside.
- Make roux with butter and flour.
- Add cream, egg yolks, dry mustard, vinegar, and oil, cooking gently and stirring constantly until thickened.
- Pour while hot over crab and mix gently.
- Place in buttered 1 quart casserole.
- Cover top with bread crumbs.
- Dot with butter.
- Brown in 350 degree oven until just warm.

MRS. GERALDINE'S GROUND BEEF CASSEROLE
This recipe came from a local church fund raising cook book. Mrs. Geraldine is a good friend of the family. She reminds me so much of Mrs. Clause, that I can't help but smile every time I think of her. This recipe freezes well. Do not bake before freezing. Just put it together, freeze it, thaw it and cook.

Steps:
- Brown meat in large skillet or Dutch oven.
- Add onions, pepper and celery and simmer for 15 minutes.
- Add tomatoes and tomato sauce, mushrooms, brown sugar and Worcestershire sauce.
- Add salt and pepper to taste.
- Cook in skillet for 1 hour.
- Place cooked pasta in bottom of large casserole dish.
- Spoon mushroom soup over pasta.
- Pour sauce over the soup and top with cheese.
- Bake in 350°F oven for 30-45 minutes.
- Can sizes do not have to be exact, just as long as they are within a close range, everything will work out.
