Minny's Chocolate Pie image

The Help's ending hinges on a secret involving Minny's famous chocolate pie. Newspaper columnist Lee Ann Flemming, one of the best bakers in Greenwood, made 53 chocolate pies during filming, including 12 vegan and gluten-free versions.

1 packaged pie dough crust
1 1/2 c. sugar
3 tbsp. Unsweetened cocoa powder
4 tbsp. unsalted butter
2 large eggs
3/4 c. evaporated milk
1 tsp. pure vanilla extract
1/4 tsp. salt
whipped cream

Steps:

  • Preheat the oven to 350 degrees F. Ease the pie crust into a 9-inch pie plate and crimp the edges decoratively. Prick the crust lightly with a fork. Line the crust with foil or parchment paper and fill with pie weights or dried beans. Bake for 15 minutes or until set. Remove the foil and weights and bake for about 5 minutes longer, just until the crust is dry but not browned.
  • Meanwhile, in a bowl, whisk the sugar with the cocoa powder, butter, eggs, evaporated milk, vanilla, and salt until smooth.
  • Pour the filling into the pie shell and bake for about 45 minutes, until the filling is set around the edges but a little jiggly in the center. Cover the crust with strips of foil halfway through baking. Transfer the pie to a rack and let cool completely before cutting into wedges. Serve with whipped cream. Looking for more dessert ideas? ¾ cup white sugar
5 tablespoons unsweetened cocoa powder
3 tablespoons cornstarch
¼ teaspoon salt
2 cups milk
3 egg yolks, beaten
1 teaspoon vanilla extract
1 (9 inch) pie crust, baked
3 egg whites
¼ teaspoon cream of tartar
6 tablespoons white sugar

Steps:

  • Mix together sugar, cocoa, corn starch and salt in a medium saucepan. Gradually mix in milk. Cook and stir over medium high heat until thickened and bubbly. Reduce heat to medium low; cook and stir 2 minutes more. Remove pan from heat. Stir about one cup of the hot filling into the egg yolks; mix back into the custard. Return saucepan to heat, and bring to a gentle boil. Cook and stir for 2 minutes. Remove from the heat, and stir in vanilla. Pour hot filing into crust.
  • In a clean bowl, beat egg whites with cream of tartar until soft peaks form. Gradually beat in sugar, and continue to beat until stiff and glossy. Spread evenly over hot filling, sealing meringue to crust.
  • Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes, or until golden.

I saw the movie, The Help, this weekend and it was excellent. Then the sermon on Sunday included a reference to it. I wanted to have the recipe for Minnie's pie - NOT the one she made ONLY for Hilly!!!!!. Maybe someone else wants it, so here it is.

1 1/4 cups sugar
3 1/2 tablespoons cocoa
1/4 cup butter, melted
1 teaspoon vanilla
5 ounces Pet milk (evaporated)
2 eggs
1 pie crust, uncooked

Steps:

  • Preheat oven to 325°F.
  • Mix everything together in one big bowl.
  • You don't have to bake the crust first, prick the bottom of it.
  • Pour filling into crust.
  • Bake for about 50 minutes. Let the pie set for a long while once it comes out of the oven. I think this definitely tastes better room temperature.
  • If you'd like, serve with a big scoop of ice-cream, some fruit, a little whipped cream, or straight out of the pie plate!

24 chocolate sandwich cookies
5 tablespoons salted butter, melted
1 1/2 cups sugar
1/4 cup cornstarch
1/4 teaspoon kosher salt
3 cups whole milk
4 large egg yolks
6 1/2 ounces bittersweet chocolate, chopped finely
2 tablespoons salted butter
2 teaspoons vanilla extract
Whipped cream, for serving

Steps:

  • For the crust: Preheat the oven to 350 degrees F.
  • Pulse the cookies in a food processor until finely chopped. With the processor running, add the butter. Press the crumbs into the bottoms of four 4 1/4-inch disposable aluminum pie pans. Bake until set, about 5 minutes. Let cool.
  • For the filling: Whisk together the sugar, cornstarch and salt in a medium saucepan. Whisk in the milk and egg yolks. Stir over medium heat until the mixture just barely comes to a boil and becomes thick, 6 to 8 minutes. The second it starts to bubble and thicken (it should be thick like pudding), remove it from the heat. Add the chocolate, butter and vanilla, then stir until everything is beautifully combined. Pour the pudding into the pie crusts and place in the fridge, uncovered, to chill for 4 hours. Serve topped with whipped cream.

This recipe is from a neighbor that I used to love to visit when I was a child. She lived to be over 100 years old and was still baking just as active at the end of her life as she had been for years. She would let me help her in the kitchen and I think she fostered part of my love of baking.

1 cup sugar
6 tablespoons all-purpose flour
1 1/2 cups milk
1/3 cup water
4 tablespoons butter, softened
1/2 teaspoon vanilla extract
4 tablespoons cocoa
1/4 teaspoon salt
3 eggs, separated
1 (9 inch) baked pie shells
6 -7 tablespoons sugar

Steps:

  • Mix dry ingredients well.
  • Add 3 egg YOLKS and 1 egg WHITE to dry mixture, RESERVING the other 2 egg WHITES for the meringue.
  • Add butter and mix well.
  • Slowly stir in milk and water.
  • Over medium heat, cook this mixture until thickened, STIRRING CONSTANTLY.
  • Once mixture has thickened, add vanilla extract and bring to room temperature.
  • Once mixture has cooled, pour into baked pie shell.
  • In a separate bowl, beat the two egg WHITES until soft peaks form.
  • Slowly add 6-7 tablespoons of sugar and continue beating until meringue is stiff, not dry.
  • Top pie with meringue and baked at 350 degrees for approximately 10 minutes until meringue is lightly browned.
  • Refrigerate before serving and refrigerate any leftovers.
