MUDSLIDE CASSEROLE SHOTS

Steps:

• Line the bottom of a 9-by-13-inch baking dish with plastic wrap.
• In a medium bowl, combine the gelatin and 1 cup of cool water and whisk until blended. Set aside to bloom, 3 to 5 minutes.
• Put the heavy cream in a small pot over medium-high heat and bring to a simmer. Remove from the heat and whisk in the bloomed gelatin. Stir in the Irish cream liqueur, coffee liqueur and vodka. Pour the mixture into the prepared baking dish. Refrigerate until firm, about 2 hours.
• Remove the firm mudslide mixture from the baking dish and cut into forty-eight 1-inch cubes. Place each mudslide cube on top of a cookie half. Top with a small dollop of whipped cream and a drizzle of chocolate syrup.

MUDSLIDE JELLO SHOTS IN COOKIE SHOT GLASSES

Steps:

• Spray six mini popover cups with nonstick BAKING spray (the sort with flour.) This will make it very easy to remove your cooled cookie cups without breaking them.
• Preheat oven to 350°F. Separate Pillsbury™ dough into 6 even balls. Form the balls around the bottom and sides of each popover cup.
• Cover 6 wine corks with aluminum foil. Spray with nonstick baking spray. Place a cork in the center of each cookie cup. Bake for 11-15 minutes, or until the edges of the cookie cups are golden brown.
• While cookies are baking, add warm water, gelatin, and mudslide liquor to a medium bow. Whisk until smooth, then place in fridge until slightly set up.
• Remove cookie cups from oven and allow to cool completely before gently removing from popover cups. Dip the top of each cookie cup in melted chocolate chips. Spoon slightly-set mudslide shot mixture into the center of each cup. Return to fridge and allow to set up completely, about 1 hour.
• Top each cookie cup with whipped cream, sprinkles and mini chocolate chips just before serving. Serve immediately!

Steps:

• Lightly spray mold with non-stick spray and wipe excess off with a paper towel. Pour the Kahlua, Bailey's, and half and half in a medium saucepan and sprinkle gelatin on top. Allow the gelatin to soak for 2 to 3 minutes, then begin to heat on low, stirring constantly until gelatin is fully dissolved (about 5 minutes). Remove saucepan from heat and add vodka. • Combine cold milk to pudding & mix with an electric mixer,.
• Blend in the liquors.
• Fold in the Cool Whip until thoroughly blended.
• Fill cups & chill.

SKIP 'N GO JELLY SHOTS

Steps:

• Pour the lemonade into a small saucepan. Add the sugar if using (depending on how sweet the lemonade is, you can choose to add sugar to make the shots sweeter). Sprinkle with the gelatin and allow it to soak for a minute or two. Heat over medium heat, stirring constantly, until the sugar and gelatin have completely dissolved.
• Combine the lemonade mixture with the beer and vodka in a large liquid measuring cup with a pouring spout.
• Put 16 clear plastic 1-ounce shot glasses on a baking sheet. Pour the lemonade mixture into the glasses, filling them about three-quarters full. (You should have 1/2 to 3/4 cup liquid remaining in the measuring cup.) Refrigerate the shots until just lightly set, 30 to 60 minutes. Leave the remaining lemonade mixture out at room temperature.
• To create the foam: Add 1 tablespoon of the coconut cream to the remaining lemonade mixture. With the whisk attachment on an immersion blender or hand mixer, whisk the mixture until foamy. Spoon into the tops of the lightly set shots and refrigerate another 2 to 3 hours. If the foam starts to get thin, add another tablespoon of the coconut cream to the remaining lemonade mixture and repeat the process.
