Steps:

  • Combine all ingredients in a saucepan and simmer, covered, for 10 minutes. Remove cloves and cinnamon stick and serve warm.

One 750-milliliter bottle dark spiced rum
4 cups unfiltered cranberry juice
4 cups apple cider
1 cup maple syrup
1 cup honey
1 teaspoon grated clove or nutmeg
12 star anise pods
Cinnamon sticks, for garnish

Steps:

  • Put the rum, cranberry juice, cider, maple syrup, honey, clove and star anise into a large saucepot over medium heat. Cook until a slow simmer is just reached and the honey/maple syrup is dissolved.
  • Ladle the punch into heatproof glasses or mugs and garnish with cinnamon sticks.

One of the things I love about the holidays is mulled wine. :) Here's a nice version featuring roasted oranges, which gives the punch a really nice flavor.

2 small tangerines or 2 small satsuma oranges, scrubbed well (divided)
12 whole cloves
1 (750 ml) bottle zinfandel or 1 (750 ml) bottle other favorite full bodied red wine
1 cup orange juice
1/3 cup honey, to taste
1 teaspoon brown sugar
10 cinnamon sticks, divided (3-inch long)
1/4 teaspoon ground nutmeg
6 whole allspice
1 ounce brandy or 1 ounce cognac, to taste

Steps:

  • Preheat your oven to 350 degrees F.
  • Push the whole cloves into one of the small oranges until it's completely"studded," then place the orange in a baking dish and roast it in the oven until it's soft, which will take between 35 to 40 minutes.
  • In a non-reactive saucepan over medium heat, combine the roasted orange, zinfandel, orange juice, honey, brown sugar, 4 of the cinnamon sticks, nutmeg, allspice, and the brandy or Cognac.
  • Raise the heat to medium-high, stirring constantly until the honey is melted and the sugar is dissolved, which will take about 4 minutes, but DO NOT LET BOIL (the flavor of the wine and spices combination will deteriorate if the mixture reaches the boiling point).
  • Strain the mulled wine and pour into six coffee glasses or cups, slice the remaining small orange into 6 slices, and garnish each cup with a cinnamon stick and orange slice.

2 cups water
1 cup sugar
1 teaspoon whole cloves
1 teaspoon whole allspice
2 cinnamon sticks
1 lemon, sliced
1 orange, sliced
NONALCOHOLIC PUNCH
1 1/2 quarts (6 cups) raspberry-cranberry drink
ALCOHOLIC PUNCH
2 (750 ml) bottles (6 cups) dry red wine

Steps:

  • In small saucepan, combine all syrup ingredients; mix well. Cook over medium heat until mixture comes to a boil, stirring constantly. Reduce heat; simmer 10 minutes.
  • Strain syrup. Cool slightly. Refrigerate syrup at least 3 hours or until serving time.
  • At serving time, place half of prepared syrup (about 1 1/4 cups) in each of 2 large saucepans. To one add raspberry-cranberry drink. To the other add wine. Simmer each over low heat until thoroughly heated. Serve hot with cinnamon sticks and citrus twists, if desired.

Assorted fresh fruit (cranberries and lemon and orange slices)
Fresh mint leaves
Cinnamon sticks (3 inches), crushed
1 cup plum jam
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
4 cups cranberry juice, chilled
1 cup orange juice, chilled
1/4 cup lemon juice
4 cups club soda, chilled

Steps:

  • Lightly coat a decorative tube cake pan or gelatin mold with cooking spray; add 1/2 cup of water. Arrange the fruit, mint and cinnamon pieces in pan as desired. Freeze until solid. Add remaining water; arrange more fruit, mint and cinnamon pieces as desired. Freeze until ready to use., In a microwave, melt jam; stir until smooth. Add ground cinnamon and nutmeg. Cool. Just before serving, in a punch bowl, combine the juices and jam mixture. Stir in soda., Unmold ice ring by wrapping the bottom of the mold in a hot, damp dishcloth. Invert onto a baking sheet; place fruit side up in punch bowl.
