1 unsliced round loaf sourdough bread (1 pound)
1 pound Monterey Jack cheese
1/2 cup butter, melted
1/2 cup chopped green onions
2 to 3 teaspoons poppy seeds

Steps:

  • Preheat oven to 350°. Cut bread widthwise into 1-in. slices to within 1/2 in. of bottom of loaf. Repeat cuts in opposite direction. Cut cheese into 1/4-in. slices; cut slices into small pieces. Place cheese in cuts in bread., In a small bowl, mix butter, green onions and poppy seeds; drizzle over bread. Wrap in foil; place on a baking sheet. Bake 15 minutes. Unwrap; bake until cheese is melted, about 10 minutes longer.

We're getting close to the Super Bowl, and it's not about who wins the trophy, but rather who wins the snack table. If you show up with these super fun sliders, that will be you. The real secret to these beauties is placing the meatball in through the top of the roll, versus splitting and stuffing in the traditional manner. Maybe it's the symmetry, or center of gravity, that makes these just feel right in your hand. If you're short on time, using pre-made meatballs will do.

2 tablespoons olive oil, divided
1 yellow onion, diced
5 cloves garlic, minced, divided
1 pound ground beef
2 tablespoons chopped Italian parsley, plus more for garnish
1 large egg
¼ cup plain bread crumbs
1 cup shredded fontina cheese, divided
2 teaspoons kosher salt
freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
3 tablespoons unsalted butter
18 dinner rolls
2 cups spicy tomato sauce
2 tablespoons freshly grated Parmigiano-Reggiano cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat 1 tablespoon olive oil in a saucepan over medium heat. Add onion and 2 cloves garlic; cook and stir until onion is soft, about 5 minutes.
  • Place beef in a large bowl. Add onion-garlic mixture, parsley, egg, bread crumbs, and 1 large handful of fontina cheese, reserving the rest for topping. Season with salt, pepper, and cayenne. Mix by hand until just combined. Scoop meat mixture into 24 mini muffin cups; meatballs need not be perfectly round.
  • Bake in the preheated oven until no longer pink in the centers, about 12 minutes. Leave oven on. Let meatballs cool briefly while you make the garlic butter.
  • Melt butter in a saucepan over medium heat. Add remaining minced garlic once butter starts to bubble; stir, then immediately remove from heat. Stir well and set aside.
  • Line a rimmed baking sheet with foil; coat foil with remaining olive oil. Transfer rolls, still attached, to the baking sheet. Cut a hole in the top of each roll, about 2/3 of the way down. Brush garlic butter over the insides and outsides of the rolls.
  • Bake until golden brown, about 8 minutes. Pour about 1 tablespoon tomato sauce into each hole. Stuff meatballs into the holes. Top each roll with a spoonful of tomato sauce and remaining fontina cheese. Sprinkle Parmesan cheese on top.
  • Continue baking until cheese is melted, 12 to 15 minutes. Garnish with more parsley. Let rolls sit for 5 to 10 minutes to firm up; transfer to a serving platter.

14 oz premade pizza dough, 1 can
8 slices ham
10 slices mozzarella cheese
½ cup spinach artichoke dip
2 tablespoons tomato sauce
1 cup shredded mozzarella cheese, divided
28 pepperoni slices, divided
¼ cup salted butter, melted
1 tablespoon parsley, finely chopped
1 tablespoon garlic powder

Steps:

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Roll out the pizza dough to a 14x14-inch (35x35-cm) square, about ¼-inch (6 mm) thick.
  • Arrange 4 of the ham slices on the left third of pizza dough, leaving a 2-inch (5 cm) space at the top.
  • Place the mozzarella slices on top of the ham.
  • Place the remaining ham slices on top of the mozzarella.
  • Spread spinach artichoke dip on the middle third of the pizza dough, leaving 2 inches (5 cm) at the top.
  • Spread tomato sauce on the last third of pizza dough, still leaving 2 inches (5 cm) at the top.
  • Sprinkle half of the shredded mozzarella over the tomato sauce.
  • Place half the pepperoni slices on top of the shredded mozzarella.
  • Sprinkle the remaining shredded mozzarella on top of pepperoni. Followed by the remaining pepperoni on top of the shredded mozzarella.
  • Starting with the edge closest to you, roll up the pizza dough.
  • Place the roll seam-side down on the baking sheet.
  • Cut 9 even 2-inch (5-cm) slits across the top of the roll.
  • In a medium bowl, combine the melted butter, parsley, and garlic powder.
  • Brush the garlic butter mixture over the roll.
  • Bake for 20 minutes, or until golden brown.
  • Slice and serve.
  • Enjoy!
