MUM'S BEEF OR CHICKEN CASSEROLE
This was mum's basic casserole recipe. I made it with chicken tonight and it was a lovely old fashioned style casserole. I also cooked it on the cooktop as I was in a hurry and it only takes half the time. Update: 12 Oct 06 I have just posted a photo of the beef casserole that was cooked in the oven.

Steps:
- Roll meat in flour and add to casserole dish along with onions, sauces, seasonings and water with stock cube.
- Add potatoes, carrots and beans and cook covered in oven at 180degC (350degF) for 40 minutes, then add peas and cook further 20 minutes, stirring occasionally.
- NB; Mum added 1 teaspoons of vegemite for more flavour and to darken the gravy - substitute with similar product if you wish.

A super simple recipe for a pie that you can serve everyday. You can also trade the chicken for turkey, which may help you finish all the leftover Thanksgiving turkey!

- Preheat oven to 400 degrees F (200 degrees C.) Place spinach in a steamer over 1 inch of boiling water, and cover. Cook until tender, about 2 to 6 minutes. Drain and cool..
- Place spinach in the bottom of a 2 quart casserole dish. Cover with chopped chicken. Sprinkle on the sliced mushrooms and season with salt and pepper. Spread sour cream evenly over top. Cover with puff pastry.
- Prick the puff pastry in several places to allow steam to escape. Brush top with beaten egg. Bake in the preheated oven for 20 minutes, or until golden brown.

MOM'S CHICKEN CASSEROLE
This casserole is not fancy or "gourmet" by any means, but I love the stuff. My mom got the recipe from a church cookbook, I think, and she makes it best. As with most recipes that call for cooked chicken, I buy a roasted chicken at the supermarket and use that. Easy! Prep time and servings are approximate.

- Mix soups and meat, mayonnaise and mushrooms in a saucepan.
- Heat thoroughly, but do not boil.
- Butter a 9 x 13 casserole dish.
