MOM'S DIVINE COFFEE CAKE
I got this recipe from mom, who got it out of an old cookbook, and decided to rename it "Mom's coffee cake" . In fact, she renamed everything "moms" if it was good! Anyways, it is a great basic coffee cake, and can be made with or without the nuts. Impress your work friends, church group, or house guests. It is yummy, and tastes better the next day.

Steps:
- COMBINE nuts with the 1/4 cup sugar and cinnamon; set aside.
- BLEND together flour, baking powder & soda; set aside. Cream butter with the 1 cup sugar until light and fluffy. Add eggs and vanilla; beat well. Add dry ingredients and sour cream; beat until well blended (do not overbeat).
- POUR half batter into greased and lightly floured 9 inch square pan;
- Top with half of cinnamon-nut mixture. Cover with remaining batter; top with last of cinnamon-nut mixture.
- Bake at 375° for 30 minutes or until golden brown.

- Heat 1 tablespoon butter in a microwave-safe mug until softened, about 10 seconds. Stir white sugar into butter until dissolved. Mix 1/4 cup flour, applesauce, baking powder, vanilla extract, and salt into butter-sugar mixture until batter is smooth.
- Mix 2 teaspoons flour, 1 teaspoon butter, brown sugar, and cinnamon together in a bowl using your hands until the texture of lumpy sand is reached; sprinkle over batter.
- Cook in the microwave until coffeecake appears to be barely set, 50 to 80 seconds. Cool before eating.

COFFEE CAKE
Whip up a classic coffee cake with ease. You can freeze the sponges if you want to save time later on. Ideal for a bake sale, birthday party or coffee morning

Steps:
- Heat the oven to 180C/160C fan. Line and butter two 18cm sandwich tins. Add the sugar and butter to a bowl and whisk until very fluffy and pale.
- Whisk the eggs in a mug with a fork, then add them gradually to the mixture with 1 tbsp of flour each time. (Make sure you don't use all the flour.) When the eggs have been fully combined into the mix, add the rest of the flour and fold it in gently.
- Add the dissolved coffee to the mixture, still folding. Divide into the sandwich tins and cook for 25-30 min until risen and firm and a skewer inserted into the middle comes out clean. Leave to cool in the tin for 5 mins then turn out onto a wire rack to cool completely. Can be frozen at this stage.
- Meanwhile, make the icing by beating the icing sugar with the butter until light and fluffy, then add the dissolved coffee. Whisk, then cover and set aside until ready to ice the cake.
- Spread half the icing on the bottom of one sponge and spread the strawberry jam on the bottom of the other, if using. Sandwich together, then spread the remaining icing on top. Decorate with walnuts or cherries, if you like.

MOM'S COFFEE CAKE

- Preheat oven to 150c (fan) and Line/butter cake tins
- Sponge
- Process all ingredients together
- Beat in 1 tbsp of the coffee mixture and then add up to another tbsp little by little until the mixture drops easily off the spoon. Keep the rest of the coffee mixture for the icing.
- Spoon the mixture evenly between the 2 tins , level the top and bake for 40 minutes (check after 30) or until a skewer comes out cleanly. Then cool.
- Cream
- Make sure coffee mixture is cooled before adding to butter
- Beat the butter until soft and then beat in 200g icing sugar followed by the remaining coffee mixture, little by little. Stop when you have a depth of colour and flavour that you like. If the icing looks a little soft, beat in extra icing sugar.

- Turn on oven to 425 degrees.
- Mix dry and wet ingredients.
- Pour into round cake pan (butter pan first).
- Mix extra cinnamon and sugar together in bowl and pour on top of batter.
- Put in the oven for 5 (five) minutes.
- Turn the oven down to 325 degrees and cook for another 15 minutes.
