CHEESE MUNCH CHICKEN

2 ounces butter
1 pound chicken tenders
1 cup grated Parmesan
3 cups cheese crackers
1/4 teaspoon chili powder
1/4 cup fresh parsley, finely chopped
1/4 cup fresh basil, finely chopped
2 eggs
1/4 cup milk or water

Steps:

  • Melt butter in 9 by 9 baking dish and set aside.
  • Wash and dry chicken. Combine Parmesan, cheese crackers, and chili powder into large freezer bag. Crush these ingredients until they resemble course bread crumbs. Add parsley and basil. Preheat oven to 375 degrees F.
  • In a shallow bowl, mix eggs and 1/4 cup of water or milk. Dip the chicken into the egg wash, transfer to the bag of breadcrumbs and shake until coated. Place coated tenders in baking dish.
  • Cook 5 to 6 minutes on each side or until cooked through with no pink meat showing and the juices run clear when pierced with a fork. Serve with dipping sauce, if desired.

4 cups crispy rice cereal squares (such as Rice Chex ®)
4 cups popped popcorn
1 cup roasted, salted pumpkin seeds
1 cup honey roasted peanuts
¼ cup unsalted butter
6 tablespoons packed brown sugar
2 tablespoons light corn syrup
¼ teaspoon vanilla extract
¼ teaspoon pumpkin pie spice
1 cup candy corn

Steps:

  • Mix cereal, popcorn, pumpkin seeds, and peanuts together in a 4-quart microwaveable bowl.
  • Microwave butter, brown sugar, corn syrup, and vanilla extract together in another microwave-safe bowl, uncovered, on high power until boiling, about 2 minutes, stirring after 1 minute. Stir in pumpkin pie spice. Pour over cereal mixture and stir until evenly coated.
  • Microwave cereal mixture, 5 to 6 minutes, stirring and scraping down the bowl every minute.
  • Spread on waxed paper to cool, about 15 minutes, stirring occasionally to break up. Stir in candy corn.

4 cups Corn Chex
4 cups Wheat Chex
2 cups cheddar-flavored snack crackers
2 cups potato sticks
6 tablespoons butter, melted
2 tablespoons hot pepper sauce
1 tablespoon Worcestershire sauce
1 envelope ranch salad dressing mix
1/8 teaspoon cayenne pepper

Steps:

  • In a large bowl, combine the cereals, crackers and potato sticks. Combine the butter, pepper sauce and Worcestershire sauce. Drizzle over cereal mixture and toss to coat. Sprinkle with salad dressing mix and cayenne; toss to coat., Microwave half of mixture on high for 2 minutes, stirring once. Spread onto waxed paper to cool. Repeat. Store in an airtight container.
