EASY PATTY MELT RECIPE WITH GROUND TURKEY
An easy, low-fat patty melt recipe, featuring a ground turkey patty, with smoked cheese, onions and wheat toast.

- For the Spicy Ketchup sauce, combine ketchup, chili powder, cumin, pepper, Worcestershire and liquid smoke in a small mixing bowl, and whisk to combine. Set aside until ready to use.
- For the turkey patties, have ready a pan lined with wax paper, and begin preparing the turkey patties. In a mixing bowl, combine turkey and TAK seasoning, and mix until well combined. With damp hands, take about 3 tablespoons of ground turkey, and roll into a ball in between the palms of your hands. Press the turkey ball flat like a pancake. Transfer to the wax paper, and continue making patties.
- Once all of the turkey patties are formed, add 1 1/2 tablespoon of oil to a large sauté pan over medium-high heat, and allow to come to temperature. Transfer patties to the pan and cook for 3 minutes. Do not overcrowd the pan. Flip the patty, add a generous pinch of cheese to the top of the patty and continue to cook for 2 1/2 - 3 minutes more. Set aside.
- Add another tablespoon of canola oil to the sauté pan (if necessary) before adding the onions. Reduce the heat to medium, add the onions and sauté the onion for about 6 minutes, or until softened and cooked through.
- Assemble the patty melts by placing turkey patty on a slice of toasted wheat bread, top with a generous helping of onions and a spoonful of spicy ketchup sauce. Serve and enjoy.

- In a small skillet, cook mushrooms in oil until tender. Add garlic; cook 1 minute longer. Stir in 1/8 teaspoon salt and a dash of pepper. Remove from the heat; set aside. , In a small bowl, combine the spinach, chopped onion and remaining salt and pepper. Crumble turkey over mixture and mix well. Shape into two patties., In a large nonstick skillet coated with cooking spray, cook patties over medium heat for 4 minutes. Turn and cook 3 minutes longer. Top burgers with cheese; cover and cook 3-6 minutes longer or until a thermometer reads 165° and cheese is melted. Serve on buns with lettuce, onion, tomato and reserved mushroom mixture.

Steps:
- Mix well the first 7 ingredients (meat through to pepper) and form into twelve 1/4-inch thick patties.
- Melt the butter and saute the mushrooms lightly in it.
- Place on 6 of the patties.
- Top with remaining patties and seal edges.
- Broil or grill to desired doneness.
- Top with cheese.
- Place each patty on a slice of toasted bread and top with another slice of toast.
MUSHROOM SWISS TURKEY BURGERS
I created this recipe the other night when I wanted a "gourmet" burger. We really liked them! It looks complicated, but it's not, I promise! I start cooking the mushrooms about 10-15 minutes before I start the burgers. I toasted the buns before serving, as well. This recipe is for two, but can easily be adjusted. Enjoy!

- Mix meat, garlic, Worcestershire sauce, and onion in a large bowl, just until ingredients are distributed evenly.
- Form two patties. Sprinkle steak seasoning on both sides of patties.
- Refrigerate for at least 1 hour (helps prevent patties from falling apart). This is when I wash and slice the mushrooms.
- Melt butter and extra virgin olive oil together in large skillet over medium-high heat.
- Add garlic, sauté for 1 minute, being careful not to burn it.
- Add the mushrooms and sauté until tender, stirring often.
- Reduce heat to low, add Worcestershire sauce, stir and then season with salt and pepper. Keep warm until ready to serve.
- When burgers are ready to be cooked, heat a large skillet over moderately high heat.
- Add burgers. Don't move them, they fall apart easily. Cook for 6-8 minutes.
- Flip the burgers, very carefully. Cook for another 6-8 minutes, or until done.
- Turn off heat; top with cheese.
- When the cheese is melted, spread steak sauce on the buns, both sides. Put the burgers on the bottom bun and heap the mushrooms (lots and lots of mushrooms!) on top of the burger. Put the top bun on and enjoy!

SWISS MUSHROOM BURGERS

- Preheat the broiler and line the bottom of a broiler pan with foil. Lightly mix the beef with 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Gently form into 4 patties, about 3/4 inch thick. Arrange on the prepared pan and brush both sides with olive oil. Broil until browned, about 4 minutes per side for medium rare.
- Meanwhile, heat 2 teaspoons olive oil in a large skillet over medium-high heat. Add the onion and cook, stirring, 2 minutes. Add the mushrooms and cook 2 more minutes. Add the Worcestershire sauce and cook until the vegetables are tender, about 2 more minutes. Season with salt and pepper and remove from the heat. Combine the ketchup and mustard in a small bowl and set aside.
- Top each patty with one-quarter of the mushroom mixture and 1 slice cheese. Return to the broiler to melt the cheese, about 1 minute.
- Spread the buns with the ketchup mixture; sandwich with the patties and some lettuce. Serve with chips and/or pickles.
MUSH AND SWISS PATTY MELT WITH CHEESE (GROUND TURKEY)

- Serves 1 Lightly season patty with salt and pepper. Heat olive oil in a large skillet over medium-high heat; add patty and cook until golden brown on the first side, about 3 to 4 minutes. Flip patty, move to one side of skillet. Add onions, mushrooms, salt and pepper to cleared side of skillet and cook until softened and golden brown, about 5 minutes. Add peas and cook for 1 minute more, checking to ensure patty is cooked through. Sprinkle patty with cheese and transfer to a plate. Spoon hot mushroom mixture on top and serve.
