4 large sweet potatoes (peeled and sliced into 1/2 inch slices)
1/3 cup coconut sugar
1 tbsp cinnamon
1/3 cup chopped pecans
2 tbsp ghee or coconut oil* (melted)
pinch of salt
2 large apples (peeled and sliced into rings)
1/2 cup fresh apple juice or cider

Steps:

  • Preheat the oven to 375 degrees. Lightly grease a large baking sheet, and arrange the sweet potato slices into a single layer on the pan. Transfer to the oven, and bake for 15-20 minutes or until sweet potatoes are softened. Remove from oven. Turn the oven to 350 degrees.
  • In a small bowl, mix together coconut sugar, cinnamon, pecans, ghee, and salt.
  • Now prepare the casserole. Lightly grease a 9x13 inch casserole dish. Arrange a layer of sweet potatoes on the bottom, then top with a layer of apples. Spoon or spread some of the sugar/pecan mixture over the apples. Repeat for another layer. End with a layer of sweet potatoes on top. Spoon the last of the mixture on top. Finally, top with apple juice or cider.
  • Cover and transfer the casserole dish to the oven. Bake for 30 minutes, remove the lid, and bake for another 10-15 minutes.

4 small apples ((or 3 large), peeled, cored and diced into 1-inch pieces)
½ cup unsalted butter (melted)
½ cup dark brown sugar
¼ cup maple syrup
2 teaspoons pumpkin pie spice
¼ cup pecans (chopped)
salt (to taste)

Steps:

  • Add the potatoes to a large pot and cover with water.
  • Bring to a boil over high heat and cook until the potatoes are just starting to soften. You don't want them to cook until soft because they will continue to cook during the baking process.
  • Preheat oven to 350°F and spray a 9x13" casserole dish with non-stick spray.
  • Drain the potatoes and place them into the prepared baking dish.
  • Add the apples to the casserole dish.
  • In a small bowl mix together the melted butter, brown sugar, maple syrup, and pumpkin pie spice.
  • Pour mixture over the apples and potatoes and stir to combine.
  • Add to the oven and bake for 25 minutes.
  • Remove from the oven and top with pecans.
  • Add back to the oven and cook for 5 minutes more to toast the pecans.

2 tablespoons olive oil
2 medium leeks, white and light green parts sliced lengthwise and thinly sliced crosswise
Salt and freshly ground pepper
1 tablespoon fresh thyme leaves
1/2 cup heavy cream
1 large sweet potato (about 1 pound), peeled and sliced into 1/2-inch-thick rounds
1 large or 2 medium red skinned apples, such as Gala or Honeycrisp (about 12 ounces), halved, cored and cut into 1/4-inch slices
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large skillet, heat 1 tablespoon of the oil over medium heat. Add the leeks and 2 tablespoons water; season with salt and pepper. Cook, stirring occasionally, until tender but not browned, about 8 minutes. Add the thyme and then the cream and cook until the liquid thickens, about 2 minutes; set aside.
  • In a 2-quart shallow baking dish, arrange the sweet potato in overlapping layers. Spread the leek mixture evenly over the potatoes. Arrange the apples in an overlapping layer on the leeks. Brush the apples with the remaining tablespoon of oil and sprinkle with the Parmesan. Cover tightly with aluminum foil and bake 40 minutes. Uncover and continue to bake until the Parmesan is golden brown and melted, about 20 minutes more. The tip of a paring knife should easily pierce the apples and potatoes. Let cool 10 minutes before serving.

3 large sweet potatoes
3 large yams
4 Red Delicious apples
1/2 cup golden raisins
1/4 cup honey
1/4 cup orange juice
2 teaspoons ground cinnamon
2 tablespoons vanilla extract
1/2 cup powdered sugar

Steps:

  • Preheat the oven to 350 degrees F. Grease a 13- by 9- by 2-inch baking dish with margarine.
  • Peel the potatoes and yams. Place the potatoes and yams in a large pot of water. Bring to a boil; reduce the heat. Boil gently until the potatoes and yams are tender, about 20 minutes. Remove the potatoes and yams from the water. When cool enough to handle, slice into rounds and set aside. Peel, core and slice apples.
  • Place one layer of yams, apple slices and then sweet potatoes in the greased baking dish; repeat and make at least two layers of each. Top with the golden raisins.
  • To make a glaze, in a small pan stir together the honey, orange juice, cinnamon and vanilla extract. Stir over low heat until the consistency is even. Pour the glaze over the yam, sweet potato and apple slices.

1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon

10 medium sweet potatoes, about 5 lbs
5 medium granny smith apples, about 2 lbs
2 tablespoons lemon juice
1/2 cup unsalted butter
2/3 cup honey
1/3 cup apple juice concentrate, undiluted and thawed
1/2 teaspoon ground allspice
1/2 teaspoon kosher salt

Steps:

  • Roast potatoes in 400 oven for 40-50 minutes, until firm/tender.
  • Cool.
  • Peel potatoes and cut them into 1/4 inch thick slices.
  • Peel, halve and core apples.
  • Cut apples into 1/4 inch thick wedges and toss into a bowl with the lemon juice.
  • Grease a 3-3 1/2 quart casserole with 1 Tbsp of the butter.
  • In a microwave safe bowl, combine honey, remaining butter, apple juice concentrate, allspice and salt.
